Combine dry ingredients together except the cranberries.Combine all the wet ingredients together. Fold the wet ingredients into the dry until well incorporated. Lastly fold in the frozen or fresh cranberries. You could use other fresh or frozen fruit such as mixed berries or strawberries with no need to thaw. Procedure: Preheat the oven at 375F/190C for 15 minutes.

Grease or line a muffin tin with paper liners. In a large bowl mix together the dry ingredients and keep it aside. In a blender/food processor blend together the flax seed powder and water until its nice and frothy. Measure orange juice.

Cut all the oranges into eighths and remove seeds; puree in a blender or food processor If necessary, add enough water to puree to equal 2 cups. Stir oranges, eggs, oil, cereal and pecans into the dry ingredients. Blend only until mixed.

Fill greased muffin tins 3/4 full. Preheat the oven to 200C / 400F. Weigh-off your whole orange cutting off pieces until you get to 200gms. Cut the orange into 4 and put it into the bowl of your food processor with 1 cup of sugar. Blend until smoothish.

Add the egg, milk, raisins, pecan nuts and melted butter and blitz until combined. Stir in pecans and orange rind. Place muffin papers in muffin tin and spray the liners lightly with Pam. Spoon batter into cups, filling almost full. Bake at 375º for 18-20 minutes or until muffins are lightly browned.

Brush orange juice over hot muffins and sprinkle evenly with 1 tablespoon sugar. With a very low calorie count per piece, these fruit-and-nut mini muffins are the perfect accompaniment to a morning cup of coffee or tea. The buttermilk and egg white keep the muffins moist, while you get even more flavor from fresh orange zest and chopped up pecans. Combine powdered sugar, spices and orange juice and a little bit of water until your desired consistency and taste is achieved. Pour glaze over the muffins and if desired, top with even more orange zest! YUM-O.

Each bite is studded with a spicy orange flavor that will leave you wanting more. 2 cups all-purpose flour; 1/2 cup sugar; 2 teaspoons baking powder; 1/4 teaspoon salt; 1/4 cup chopped pecans, toasted; 1 large egg; 2 tablespoons thawed orange juice concentrate. Instructions. Preheat oven to 350 degrees Fahrenheit. To a bowl, add oat flour, sugar, baking powder, and salt.

Mix well. Add orange juice, oil, and vanilla. Mix well. Add dried cranberries, and pecans, and stir in. Scoop batter into a greased muffin pan.

Bake about 25 minutes.
