CHICKEN LETTUCE WRAPS | gluten-free + paleo

Coat a cast-iron skillet with cooking spray and cook chicken in the pan over medium heat until browned. Cool before cubing. Add tomatoes, cucumber, green onion, parsley and oil to the bulgur. Mix until well combined then sprinkle with salt and pepper, to taste. Scoop filling and chicken into your lettuce wraps and enjoy.

For the chicken. 1 pound uncooked chicken tenders; 1/8 teaspoon salt; 1/8 teaspoon pepper; 1/2 teaspoon garlic powder; 1/4 teaspoon Italian seasoning; For the lettuce wraps: 20 medium to large lettuce leave. To assemble, lay lettuce leaves on a flat surface. Spoon bulgur mixture evenly onto lettuce leaves. Top with shredded chicken.

Fold lettuce around filling to eat. Remove the chicken meat from the bones and discard the skin. Cut the chicken into medium dice and add to the tabbouleh.

Add the scallions, min. Cut the breasts in half to make thinner breasts, and drizzle with olive oil and lemon juice. Season. Grill the breasts for about 3 minutes a side.

  • Sure, you can use a Vegetarian oyster sauce which contains a lot of mushrooms also NO oysters. Hoisin sauce is a good substitute which also has no seafood..Hope this helps 😉

  • I am no professional cook. But here is a tip my mom taught me, don’t add the onion after the chicken. you can sauté it for a minute or two and then add in the chicken. This helps release the flavor of the onion better.

  • I like to add a slight variation. Saute longer cut green onions and chopped water chestnuts with the chicken. Use peanut sauce instead of the hoisin, etc. Serve with separate garnishes of rice vinegar, toasted sesame oil, and sriracha.
