Strawberry Spinach Feta Salad Summer Goodies

Ingredients 1 cup leftover chicken 2 cups spinach salad mix 1/2 cup blueberries 1/2 cup strawberries 4 slices red onion 1/3 cup chopped walnuts. Ingredients 3/4 pound boneless skinless chicken breasts, cut into strips 1/4 cup reduced-sodium chicken broth 1/4 cup poppy seed salad dressing, divided 2 cups fresh baby spinach 1 cup torn romaine 1 cup sliced fresh strawberries. Cut chicken into slices. Among 4 plates, divide spinach.

Top with chicken, strawberries and cheese. Slice strawberries and set aside. slice hard boiled eggs and set aside. in large bowls divide the spinach leaves and top with the chicken, bacon, strawberries, egg, and almond slices. Drizzle the spinach salad dressing or other type of dressing over and enjoy!To prepare salad, combine lettuce & next 4 ingredients in a bowl; toss gently.

Place about 2 cups chicken mixture on each of 4 plates. Top each servine with 1 1/2 teaspoons cashews and 2 Tablespoons of cheese. Drizzle about 4 teaspoons dressing over each serving.

Remove the chicken to a bowl and let cool. Step 2 Place the spinach into a salad bowl; scatter the strawberries, goat cheese, and candied pecans over the spinach. Drizzle 2 tablespoons of olive oil and 2 tablespoons of balsamic vinaigrette over the salad and top with the chicken.

Grilled Chicken Salad with Strawberries and Spinach is made with creamy goat cheese and a white balsamic dressing, but this would also be great with Feta cheese and if you want to add more protein, or skip the cheese add walnuts or slivered almonds. In a large bowl, whisk the lemon juice with the mustard. While whisking, slowly pour in the oil until the dressing is combined.

Season with salt and pepper. Add spinach, chicken, strawberries. You basically start with a bed of lettuce, add the chicken, and then everything else.

Spoon some of the dressing over the salad and serve immediately. LEFTOVERS: Leftover salad does well in the fridge for a few days as long as the salad and dressing is kept separate. Add the dressing to the salad right before serving.

  • Hi, love this video as I love appliances that work with you, not against you. I’m a fan of vintage appliances, and use my collection of Sunbeam cookers, frypans, deep fryers, egg cookers, coffeemakers etc. all from the late 1940’s and 1950’s. We bought a new range, and stove recently, but I missed out on the new Kitchenaide! I would love to use the model you have. I would have considered it had I known about it. The one thing I wish range, and oven makers would sell is oven racks that can go in the dishwasher to degrease them. The same goes for refrigerator racks, and bins.Thanks for sharing.

    I need to change-up my usual salads that have chicken as an ingredient in them.
