  • this looks really good. Thanks for sharing your recipe. I would love to make this, but I have to add some black olives (it’s a must in my family) lol.:)

  • 1:11 Should I bake all of the mini tins (incase of meal prep for a week) and freeze them after baking? Or prepare them and freeze them as they are?

  • Oh no! I live in a country where it doesn’t sell corn tortillas (nor do I know where they sell it), what can I use as a replacement? Your casserole looks good, btw!

  • made this last night, minus the rotisserie chicken (plus, chicken breast cooked in taco seasoning)! It was really good! Thank you!

  • Now I know I’m late af but let me tell u how DELICIOUS this recipe is I’m not a cook ‍♀️ I can barely make toast but I followed his instructions and when it came it I was like damnnn who knew I could cook?! I’m serious, I just tossed all of those cook books away. In fact, I was eating that zucchini lasagna I made wile watching this video. Haha. I can’t wait to try this one. Keep up the outstanding work my friend. Boom!

  • This looks good I may have to omit the corn though cause I do not care for it. My boyfriend has celiacs so would I be able to use corn starch instead of wheat flour and have this recipe turn out okay or can I omit it all together?

  • I did this recipe this week I gained muscle but not fat loss but last week I did the turkey chili recipe and lost 3 pounds so it evens out lol

  • I want to thank Kevin for this freezer friendly recipe. it has became a stable in my house. We freeze 5-6 portions of this every few months

  • Made this about a month ago.. Came out really good! Had a little bit of trouble getting the enchilada sauce to mix, but turned out great. Thanks!

  • Hey I just subscribed because I just fell in LOVE with your recipes! My husband is starting a diet so that includes me lol. I just go a quick question.. Where do you buy the metal tins? and can this recipe be stored in the freezer and then thawed out in the fridge the day before consumption?

  • Thanks for the recipe! I made it but adde my own twist! I added all of the seasoning to the actual sauce, and i topped it with green onions, black olives and tomatoes, i added paprika and also cilantro with the corn and green onions to the chicken mixture. Thanks a lot! Ive always wanted to make white people enchiladas, it was way easier than making the authentic kind!

  • Sorry if this is a dumb question, but…. how do you reheat it when it is in the aluminum tin? I want to make these to take with me to work.

  • You really shouldn’t try to make Mexican food. You don’t know how to make the Chile! You didn’t dip the corn tortillas in hot oil to make them pliable!

  • Hi Fitmencook! Man you are AWESOME I want to eat all your food! You should open a restaurant! We need more restaurants that truly care about people health. Do you have a cookbook with precise measurements?
