How To Make Shrimp and Cauliflower Grits Easy Keto and Low Carb Recipe

I swapped out starchy corn with freshly riced cauliflower, and cooked that in veggie stock and coconut milk, and finished it with cheese and herbs. The result was creamy, full of flavor, and the cauliflower had a texture similar to grits! The shrimp and covered in a smoked paprika based spice rub and cooked in ghee, so easy and full of flavor. This quick, mildly spicy Cajun-inspired shrimp dish substitutes traditional corn grits with grated cauliflower.

When cooked with a little milk and bay leaves, the cauliflower becomes tender and creamy. If you keep the cauliflower head whole, it makes grating the cauliflower a breeze, just stop when you get to the hardest part of the core. Spoon the cauliflower “grits” into serving bowls and top with half the shrimp. Top with the scallion corn mixture.

Pour remaining 2 tbsp of melted butter and Cajun seasoning. In a separate skillet, heat butter over medium heat. Add riced cauliflower, and cook for 5 min.

Add milk and salt, and cook for an additional 5 minutes. Remove from heat, and stir in sour cream and cheese until melted. Serve shrimp on top of cauliflower grits, and top with scallions.

2 Servings with. 1. Make the Spicy Shrimp: Place the shrimp in a large zip-top plastic bag. In a small bowl, stir the paprika with the garlic powder and cayenne to combine.

Pour the mixture into the bag with the shrimp and toss well until they are coated with the spices. Refrigerate while you make the grits. Cauliflower Grits 1 head cauliflower, about 1 pound, yield 4 cups grated 1 cup unsweeted cashew milk, or coconut milk or whole dairy milk 1 tablespoon unsalted butter, or ghee ¼ cup unsalted chicken stock, or vegetable stock ¼ teaspoon kosher salt ¼ cup grated sharp cheddar cheese.
