I used my standard latke recipe to start, but found it benefitted from an extra egg and a spoonful of extra flour to make the mixture more batter-y for the waffle maker. Add 1/3 cup for each waffle. Cook until golden brown on the inside, about 5 minutes per waffle. Serve with a dollop of sour cream, additional scallions, and hot sauce, if desired. Place salmon in a foil-lined pan and spoon a little of the vinaigrette over the fish. Bake in a preheated 450 degree F oven 12 minutes per inch of thickness, or until cooked through.

Spoon the remaining vinaigrette over each serving of fish. Stir in matzo meal or flour, baking powder, salt and pepper. Add the eggs and mix well. Spray waffle iron and heat on medium-low heat. Place scant 2/3 cup in the center of the waffle iron and close, cook 5 minutes, until browned and.
