Here you have it: Huevos Rancheros-Inspired Chopped Salad. All the great flavors the classic Huevos Rancheros dish is known for have been combined to create this chopped salad that’s packed full of protein and fiber. Substitute queso fresco for pepitas or extra avocado, if desired.

Combine beans, tomatoes, avocado, dressing, two tablespoons cheese and 1/8 tsp salt in a bowl, stirring to combine. Divide lettuce among 4 plates, and top evenly with bean mixture. Heat a large nonstick skillet over medium heat.

Add oil to skillet, turning to coat. In a bowl, coarsely mash beans with cilantro, 1 1/2 Tbsp. lime juice, chipotle, cumin, garlic and 1/4 tsp. salt. Step 2 Halve, pit and peel avocado.

Slice and gently toss with 1 Tbsp. lime juice and a pinch of salt. In a medium bowl, gently stir black beans, tomatoes, onion, 1/2 cup oil, lime juice, cilantro, hot sauce, and salt to combine to create a fresh salsa. 1 small onion chopped. 1 clove garlic grated. 1 teaspoon kosher salt.

2 tablespoons olive oil. 1/4 cup water. 1 tablespoon lime juice (optional) 4-6 small flour tortilla shells. Olive oil for brushing.

4-6 eggs. Toppings. 1/2 cup crumbled feta or cotija cheese. 2 sliced avocados. Chopped cilantro. Sour cream.

1 chopped green onion. 1/2 cup roughly chopped white onion 2 fresno peppers, roughly chopped 1 loose handful cilantro salt to taste Huevos Rancheros. 1 tablespoon vegetable oil 4 corn tortillas 1 teaspoon butter 4 large eggs Garnish. avocado cilantro queso fresco.

To make the tortillas, measure 9.5 ounces of masa harina and whisk together with 2 tsp of Kosher salt, then add 1 cup and 2 Tbsp of warm tap water and mix until a playdough-like ball forms. Cover with plastic wrap and let sit at room temperature for 30 minutes. Top with a spoonful of beans, fried egg, salsa, chopped cilantro and avocado slices. Tips & Notes • Slash the sodium (salt) up to 45% in all canned beans by draining and rinsing thoroughly before using.

Directions For the ranchero sauce: Preheat the oven to 500 degrees F and put the tomatoes, garlic cloves and onion on a rimmed baking sheet. Roast the vegetable.

  • I love breakfast. All my favorite foods are breakfast foods. My go to healthy breakfast fast is oatmeal. I really love getting creative with it. Like you, oatmeal and eggs are it for me. Favorite breakfasts to have are dark chocolate oatmeal with blueberry topped with fage plain Greek yogurt and a little honey or egg whites loaded with vegetables (ratio of vegetables to eggs is 3:1) with Ezekiel toast.

  • This looks good, but it’s not juevos rancheros.  Juevos rancheros is essentially a salsa cooked in bacon fat poured over fried eggs.  You can sprinkle a dash of fresh cheese on it but that’s it.  Side dishes to that would be refried beans, bacon, avocado, corn tortillas and more salsa.  Best served with coffee.

  • Love breakfast. I do 3 whole eggs with spinach/power greens, tomato, mushrooms, maybe some green onions, and half an avocado. To add some complex carbs I usually either do a) oatmeal with peanut butter/nutella and blueberries, or b) 2 slices whole grain toast (I like Dave’s Killer Bread) with cottage cheese.

Cup of coffee, half an almond milk cup, serving of baking cocoa, dash of cinnamon and I like a nice slow digesting casein protein powder scoop to get me through the morning.   • Looks Awesome! Loved your Happy Dance too…I’ve done a variation on this for a family brunch type meal: place 10-12 oiled tortillas layered across the bottom of a glass baking dish and pre baked a few minutes to take the rawness out, pull out to cool down, setting aside half of tortillas for a second layer. Mix eggs, a lil milk and those dried minced onions and pour over tortillas once bottom of glass dish is cool enough be touched by hand. Bake at 350 F. After 10 minutes or once the eggs start to stiffen, toss in some shredded cheese and cover with another layer of tortillas and cheese, return to bake until cheese on top browns a bit and dress with salsa, return to oven to heat up salsa and finish cooking, total bake time about 30-40 minutes based on how you like you eggs… loose or well done.
