Perfect CHICKEN MANGO and AVOCADO SALAD + Easy Dressing

Ingredients 1/4 cup nonfat buttermilk 3 tablespoons canola mayonnaise 2 tablespoons minced fresh flat-leaf parsley 1 tablespoon minced shallots 1 teaspoon minced fresh thyme 1 teaspoon cider vinegar 1/4 teaspoon freshly ground black pepper 1/8 teaspoon kosher salt 1 garlic.   • Made this tonight. Very easy, quick and flavorful. The chicken was perfect and not dry. Next time I make this it will be halved for single serving. I’m watching my calories so I will use only one chicken flat and 1 T olive oil. The salad is so full of flavor that I might just make it vegetarian with no chicken and maybe some chopped dates instead of honey.

  • I recommend cutting the chicken in smaller pieces or slicing it in half because the outside cooks but inside does not. I am not just saying this, I tried this recipe and many other recipes on this channel that require sauteing a whole chicken breast and the inside never cooks. If you cook it too long, outside gets dry. This is a great channel and it has changed my earing habits in a very positive way.
