Chicken Mozzarella…an easy one skillet meal loaded with Italian flavor! The trick to this quick 1 skillet weeknight meal is using my favorite jarred marinara sauce and I show you how to keep the chicken juicy! 5 Net Carbs. Printable recipe: https://jenniferbanz.com/chicken-mozzarella. Ingredients. 2 Chicken Breast (12 ounces total). 1 teaspoon Italian Seasoning, Divided. Salt and pepper. 1 24oz Rao’s Marinara (or your favorite sugar-free marinara). 1 Cup Shredded Mozzarella Cheese. 2 Tablespoons Avocado oil. Equipment. Meat Thermometer. Sharp Chef Knife. Oven Safe Skillet. Instructions. Place the chicken breast on a cutting board and using a sharp knife, cut each breast in half lengthwise (see notes) resulting in 4 chicken cutlets.. Season each side of the chicken breast cutlets with salt, pepper, and 1/2 teaspoon of Italian seasoning.. Add the avocado oil to a large oven proof skillet (such as cast iron or stainless steel) and heat over medium-high heat. Brown each side of the chicken cutlets and cook until a meat thermometer reads an internal temperature of 150F.. Remove the chicken from the pan to a plate and set aside. Pour the marinara in the skillet and scrape any browned bit from the bottom of the pan with a spatula. Return the chicken to the pan and top each cutlet with 1/4 cup of shredded mozzarella cheese, followed by the rest of the Italian seasoning.. Trun your oven on HI Broil and set the rack to the middle of the oven. Place the mozzarella chicken in the oven and broil until the cheese becomes browned and bubbly…about 5-8 minutes. Remove from the oven and check for proper chicken temperature of 165F using your meat thermometer. Serve.. Notes. To cut the chicken in half lengthwise place one hand flat on top of a chicken breast and, holding your knife parallel to the cutting board, slice it horizontally from the thick end to the thin end.. Avocado Oil Better for searing as it has a higher smoke point than olive oil or butter.. Avoid Overcooked Chicken Sear the chicken breast until the internal temperature is around 150F. This will allow us to continue to cook the chicken in the oven without it over cooking.. Oven Safe Skillet If you do not own an oven safe skillet, you can brown each chicken cutlet in any skillet you have and pour the marinara sauce into a casserole dish, followed by the browned chicken and the cheese. Continue with step 5.. Checking for Doneness To properly check the meats internal temperature, you need to check the temperature of the center of the meat.. This recipe was shared by friends on Facebook, so I don’t know where it originated from. It’s suitable for the Dr Poon diet (Phase 2) or for other low-carb or Primal type diets, but you may need to modify to suit your particular requirements. The only real change I made was to use a light Tasty cheese as Mozzarella is hard to find in block or sliced form here.. CAPRESE CHICKEN (makes 4 servings). 4 skinless chicken breasts. salt and freshly ground black pepper. 2 Tbsp olive oil, divided. 3 large garlic cloves, minced (or 3-4 tsp if from a jar). 2 pints cherry tomatoes, halved. 10 large basil leaves, finely chopped. 8 oz (225g) fresh Mozzarella, sliced in 1/2″ wide slices. balsamic vinegar to taste. Salt and pepper both sides of the chicken breasts and set aside. In a large sauté pan over medium-high heat, warm 1 Tbsp olive oil. Add chicken, cover pan and cook for about 10 minutes. Flip chicken breasts and continue cooking until the chicken is cooked thoroughly or until the internal temperature reaches 165 F / 74 C.. (I don’t have a meat thermometer so I slicked into the middle of the thickest part and ensured it was cooked through and juices ran clear. It took about 10 minutes on the 2nd side as well.). While the chicken is cooking, in a medium sauté pan over medium-high heat warm the remaining 1 Tbsp olive oil. Add garlic and cook for about 1 minute or until fragrant. Add tomatoes and continue sautéing until tomatoes skin starts to soften and wrinkle, about 5 minutes. Remove from heat and stir in the basil, then set aside.. Once the chicken is done, top each breast with 2 slices of mozzarella. Pour tomato mixture on top. Cover pan with lid once more and let the mozzarella melt, about 1-2 minutes.. Lastly, drizzle with a splash of balsamic vinegar and serve immediately. This was delicious and very fresh tasting. I’m always a bit confused by your videos. You say it’s delish and we’ll want to eat it every day, but then when you taste test it, it’s like the first time you ever made it and are surprised that it worked out. It’s weird. Have you made these recipes before?
I have been reading or watching a lot of Keto food stuff and I can only say I find more conflicting in how you all select what is more or less healthy or is good or not good especially for food that are not of carbo type or sweets or sugar but actual food stuff, meat…etc What I take from all this is either you guys do not know and guess or you are playing too safe or really is how it WORK FOR YOU and you are telling people what work for you Should work for other’s type of body…etc
We have been mislead by the best and doctors for decades aND NOW i FEEL when what you have to offer to us, I have to really question ifyou got it wrong partially or entirely. I think we all watching need to take everyone’s claim in the real world or youtube with a pinch of salt. No pun intended. There is too much noise out there and it is not like we have a lot of scientific proof but PERSONAL FEELINGS about it and unscientific observations that is not measure properly and documented.

Now i am freaking out i read mixed reviews. Do you know anything abeoit this brand and their product. It seems too good to be true also, it says on the package it wasn’t NOT EVALUATED by the fda. Is this a scam?does anyone know about this??

I was going to make meatloaf ( Hamburger back in fridge and out comes chicken).. but just changed my mind.. I’m going to use fresh mozzarella.. in pan.. and some capers and wine.. I know it’s mixing the caprese with picatta.. but what the heck..
Can you have carrots on a keto diet??? I would think you could. I’m just having a hard time eating too many carbs when it comes to vegetables. Everything has carbs just about.

Huge tip for the cheese, I bought a mozzarella balls, sliced a piece per pieces of chicken about a half inch thick, then put them in the pan with the tomatoes and everything for 20-30 seconds. It was the perfect mix of fresh and melty cheese.
I love how she explained her reason for butterflying the chicken she has never butterflied as being the actual reason known by people and chefs all over the world as if this was a trick she figured out on her own. Lol

i’ve made this and it was fantastic! i used real fresh mozzarella and it was soo gooey. i paired it with fried asparagus and sautéed mushrooms so yum!
