This dairy free and vegan ice cream makes the perfect sweet treat and is made with only 4 ingredients. Almond milk, cashews, maple syrup, and iced coffee! Coffee Cashew Ice Cream You guys, ice cream this time of year is pretty much life. Soak cashews in iced coffee and almond milk overnight. Pour soaked cashews, along with coffee and almond milk, into a high-powered blender.
Add vanilla extract and maple syrup and blend until mixture is smooth and creamy. Pour mixture into ice cream maker and churn until soft frozen. Pour the coconut cream, maple syrup and espresso into a medium size metal bowl, set on ice over a larger bowl. Set a fine mesh strainer on top of the bowls. Pour the cashew-coffee mixture through the strainer and stir it into the coconut cream.
Press on the coffee beans in the strainer to get the maximum coffee flavor. This Coffee Cashew Ice Cream is ultra thick and creamy thanks to the raw cashews and vanilla cashewmilk! You’ll never suspect it’s dairy-free and vegan!

Process cashews with 1 cup almond milk on low to medium speed for a few minutes; gradually increasing to high speed until a frothy smooth mixture forms. Add remaining milk and syrup and process until combined. Pour mixer into ice cream maker and churn until soft serve ice cream forms.
