Curry-Rubbed Salmon Skewers With Spinach Raita Curry-Rubbed Salmon Skewers With Spinach Raita. Ingredients. Directions. In a medium bowl, combine the chopped spinach, ginger, paprika and yogurt and stir to mix.

Chill until ready Serves: 2 | Serving Size: 1 skewer with 6 tablespoons (96g) raita. Combine orange peel, curry powder, and black pepper and set aside. Pat salmon fillets dry.

Brush fillets all over with oil; sprinkle with salt. Coat flesh sides with curry-rub. Soak the bamboo skewers in cold water for about 30 minutes. Preheat a grill over medium heat. In a large non-reactive bowl, whisk together ½ cup (4 oz/125 g) of the yogurt with the ginger, garlic, 1 teaspoon of the turmeric, the cumin, chile powder, and ¼ teaspoon salt.

Toss the salmon strips gently with the yogurt. Preheat the barbecue. Thread the salmon onto the skewers, alternating two salmon pieces with one lemon slice, folded in half. Cook on the barbecue for 10–15 minutes, or until the salmon is just cooked through. Serve with the raita.

In a large deep frying pan, combine the water, wine, vinegar, onion, carrot, parsley, thyme, peppercorns, bay leaves, and 2 1/4 teaspoons of the salt. Cover and bring to a boil over high heat. Reduce the heat and simmer, partially covered, for 10 minutes.

Step 2. Heat broiler with rack set 4 inches from heat. About 10 minutes before rice is done cooking, place salmon on a foil-lined rimmed baking sheet. Rub salmon with curry, and season with salt and pepper.

  • I’ve noticed you don’t cook out the spices too much, is that something you found to be better, i’m intrigued to know your thought on the subject? Because normally with Indian spices, most people tend to cook-out the spices, to accentuate the flavour profile, this technique is a common method used in authentic Indian cooking process.
