Ingredients 2 bunches of spinach cleaned & roughly chopped 1/2 cup quinoa 2 eggs Juice of one lemon Kosher salt Freshly cracked pepper Extra virgin olive oil. Directions Step 1 Place spinach, water, bouillon, onion, and garlic powder in a large pot over medium-high heat. Bring to a boil, Step 2 Meanwhil. Add stock, chickpeas, quinoa, tomatoes, tomato sauce, and Italian seasoning to the pot and stir to combine.

Season with salt and pepper. Bring to a boil, reduce heat and simmer, partially covered, for 20-25 minutes. When ready to serve, stir in spinach and cream. Directions In a small saucepan, combine the broth, spinach, onion powder and pepper. Bring to a boil.
