Mix in 1 tsp of turmeric and a dash of cayenne. Add the grated cauliflower to the pan, cover and cook the mixture for 4 to 6 minutes. Add a dash of lemon or lime and then fluff the mixture as you would fluff rice. Recover the pan until the next portion of the recipe is completed.
Cook for an additional 5 minutes, until cauliflower is tender. Stir in parsley and mint. In a medium bowl, whisk yogurt, lemon zest and pepper, and season with a pinch of salt. Top cauliflower rice with chickpeas, tomatoes and a dollop of yogurt sauce.
Instructions. Preheat oven to 450°F and spray a baking dish with the pan spray of your choice. Break the cauliflower into bite-size florets and place them in the dish along with drained chickpeas. Looks good, right? I was excited to try this riced cauliflower bowl.
