Mix in 1 tsp of turmeric and a dash of cayenne. Add the grated cauliflower to the pan, cover and cook the mixture for 4 to 6 minutes. Add a dash of lemon or lime and then fluff the mixture as you would fluff rice. Recover the pan until the next portion of the recipe is completed.

Cook for an additional 5 minutes, until cauliflower is tender. Stir in parsley and mint. In a medium bowl, whisk yogurt, lemon zest and pepper, and season with a pinch of salt. Top cauliflower rice with chickpeas, tomatoes and a dollop of yogurt sauce.

Instructions. Preheat oven to 450°F and spray a baking dish with the pan spray of your choice. Break the cauliflower into bite-size florets and place them in the dish along with drained chickpeas. Drizzle with olive oil and season to taste with sea salt and pepper—bake in the oven for 20 minutes. CHICKPEA CAULIFLOWER RICE BOWL Flavor and zest!

That’s what this recipe is besides gluten-free. Not to mention quick and easier than fixing rice. Add some color to your bowl with some pomegranate seeds!

Assemble: Add a layer of baby spinach or other baby greens or lettuce to each bowl Add a good helping of the spiced chickpeas, turmeric cauliflower rice and hummus. Drizzle thinned hummus.

To assemble Burrito Bowls: Place shredded lettuce in a serving bowl or large tortilla shell, top with roasted cauliflower rice, roasted chickpeas, avocado, tomatoes, corn salsa and crumbled fresco. Ingredients 1 15-oz BPA-free can unsalted chickpeas, drained and rinsed 2 tbsp coconut oil, divided 1/2 tsp each sea salt and ground black pepper, divided 1/4 tsp ground cumin 1 head cauliflower. Ingredients. 1 1/2 pounds. root vegetables, such as sweet potatoes, butternut squash, carrots, or a combination, peeled and cut into 1-inch cubes.

4 tablespoons. olive oil, divided, plus more for serving. 1 1/2 teaspoons. kosher salt, divided. Freshly ground black pepper. 4 ounces. feta cheese.

Top the chickpeas with cauliflower florets and a bit of diced celery. Spread your uncooked brown rice over the top of the other ingredients, but don’t stir them up. When the stock and hot sauce come to a boil, add some minced fresh garlic, then pour the liquid over the casserole dish.

Don’t stir it. Next to the frozen cauliflower rice was a new frozen item, a microwavable cauliflower rice bowl. It looked pretty tasty in the picture, containing cauliflower rice, roasted onions, sweet potatoes, marinated chickpeas, all in a tahini sauce.

Looks good, right? I was excited to try this riced cauliflower bowl.

hi! I’m a highschol student and for my social class I need to interview a vegan person, I’m looking for someone who will be interested, please

  • Hey Elsa!!!! Love this recipe and so keen to try it.:)))

I was wondering what you might use instead of Sriracha sauce as I’ve heard recently it may not be vegan.

  • Great looking recipes, can’t wait to try them. I like your approach to a bowl with separate foods, rather than mushing everything together in a soup or casserole. The tips for organizing meal planning are great too. Glad I discovered this.

  • PERFECT idea wow! Thank you for the journal meal prep its just what I needed. Also all of your kitchen silverware is so nice and it’s so beautiful to look at:)

  • Really like that weekly plan idea saves going out shopping as often as we tend to when confronted with on-the-spot dinner decisions. Even to have that as a rough idea of a weekly meal plan things can change is a good idea because you can ensure to have the ingredients needed for such recipes. Cheers for the idea:)

  • Loved the comfort food bow. Can’t wait to try it! And I loved the idea of your meal planning list! I’m going to try it:) Thank you!

  • Yes,DIYs are nice. It’s always good to see how others plan and stay organized. I’ve never meal planned before. I usually just wing it at the store and put together what I have in the pantry. I don’t have children so I’ve never had to plan too much in advance. But this would be super helpful and simple.

  • that was super helpful. my meal planning usually only makes it to plan 3 days out, however writing it down would be so convenient.

  • You are amazing! I just subscribed. I’ve been vegan since birth and I always love learning new recipes and I love how organized you are. The vibe of your channel is fantastic xoxo

  • Hello, I just started watching. I purchased your book off amazon. It says it will notify me when it’s in stock, any ideas when. Also what kind of flour do you suggest using?

  • I made these with tofu and am adding the recipe to my lil cookbook/notecard collection. I had to add a little water to the batter for it to be thing enough. Other than thatso yummy!

  • Hey everyone! Hopefully some of you are willing to help me out a bit, I want to help other people to make cheap and easy vegan meals, and more, so I started making videos on that. Could some people give me some feedback? Thanks!

  • I loved the DIY! And the recipe idea’s! I’m attempting to transition into veganism and have been binge watching meal ideas. So thank you for keeping it nice and easy for a beginner.

  • Most people nowadays know what a Buddha bowl is, but for those of you that haven’t heard of it before, it’s a bowl of whatever you like! Well, let me break that down for you.

Typically you start off with a grain, add some vegetables, some form of protein, and a dressing of your choice. I typically add some seeds, fermented or pickled vegetables, and some sprouts if I have them in the fridge.
Essentially, it’s a colorful bowl of goodness using whatever you have in the kitchen. It’s a great way to use up produce and to have a healthy meal.
