This brown rice bowl with yummy veggies and a tahini sauce is the perfect comforting winter dinner.. Prep Time: 15 min (+8 hours for soaking) | Cook Time: 40 min | Total Time: 55 min | Servings: 3. INGREDIENTS: • 1 cup of chickpeas, soaked overnight. • 1 sweet potato. • 1 cup of long-grain brown rice. • 5 cups of tightly packed fresh spinach. • 1 tsp garlic powder. • ½ tsp cayenne pepper. • ½ tsp cinnamon. • 2 cloves of garlic. • 2 tsp olive oil. • 2 tbsp tahini. • lime juice. • salt, pepper. INSTRUCTIONS: 1. Start by cooking brown rice. Add rice and 2 cups of water to a pot, cook for 30 minutes or until soft. Season with salt.. 2. Preheat oven to 180°C/350°F.. 3. Mix drained chickpeas with 1 teaspoon of oil, garlic powder, cayenne, salt, and pepper. Arrange chickpeas on one side of the baking tray in a single layer.. 4. Cut sweet potatoes into bite-sized pieces and place them on the baking tray too. Sprinkle with cinnamon and chili. Bake chickpeas and sweet potato for 25-30 minutes.. 5. Heat up 1 teaspoon of olive oil in a large pan, add crushed garlic and sauté for 2 minutes. Add spinach and cook for 3-5 minutes.. 6. For the tahini dressing mix together tahini, lime juice with a little water.. 7. Add rice, sweet potatoes, chickpeas, and spinach to a big bowl and top with the tahini dressing. Enjoy! Mix in 1 tsp of turmeric and a dash of cayenne. Add the grated cauliflower to the pan, cover and cook the mixture for 4 to 6 minutes. Add a dash of lemon or lime and then fluff the mixture as you would fluff rice. Recover the pan until the next portion of the recipe is completed.
Cook for an additional 5 minutes, until cauliflower is tender. Stir in parsley and mint. In a medium bowl, whisk yogurt, lemon zest and pepper, and season with a pinch of salt. Top cauliflower rice with chickpeas, tomatoes and a dollop of yogurt sauce.
Instructions. Preheat oven to 450°F and spray a baking dish with the pan spray of your choice. Break the cauliflower into bite-size florets and place them in the dish along with drained chickpeas. Drizzle with olive oil and season to taste with sea salt and pepper—bake in the oven for 20 minutes. CHICKPEA CAULIFLOWER RICE BOWL Flavor and zest!
That’s what this recipe is besides gluten-free. Not to mention quick and easier than fixing rice. Add some color to your bowl with some pomegranate seeds!

Ingredients 1 15-oz BPA-free can unsalted chickpeas, drained and rinsed 2 tbsp coconut oil, divided 1/2 tsp each sea salt and ground black pepper, divided 1/4 tsp ground cumin 1 head cauliflower. Ingredients. 1 1/2 pounds. root vegetables, such as sweet potatoes, butternut squash, carrots, or a combination, peeled and cut into 1-inch cubes.
4 tablespoons. olive oil, divided, plus more for serving. 1 1/2 teaspoons. kosher salt, divided. Freshly ground black pepper. 4 ounces. feta cheese.
Top the chickpeas with cauliflower florets and a bit of diced celery. Spread your uncooked brown rice over the top of the other ingredients, but don’t stir them up. When the stock and hot sauce come to a boil, add some minced fresh garlic, then pour the liquid over the casserole dish.
Don’t stir it. Next to the frozen cauliflower rice was a new frozen item, a microwavable cauliflower rice bowl. It looked pretty tasty in the picture, containing cauliflower rice, roasted onions, sweet potatoes, marinated chickpeas, all in a tahini sauce.
Looks good, right? I was excited to try this riced cauliflower bowl.

Typically you start off with a grain, add some vegetables, some form of protein, and a dressing of your choice. I typically add some seeds, fermented or pickled vegetables, and some sprouts if I have them in the fridge. Essentially, it’s a colorful bowl of goodness using whatever you have in the kitchen. It’s a great way to use up produce and to have a healthy meal.
