EASY Cheesy Broccoli Chicken Rice Casserole | Broccoli Cheese Rice Casserole

Ingredients 2 cups water 2 cups uncooked instant rice 2 (10 ounce) cans chunk chicken, drained 1 (10.75 ounce) can condensed cream of mushroom soup 1 (10.75 ounce) can condensed cream of chicken soup ¼ cup butter 1 cup milk 1 (16 ounce) package frozen chopped broccoli. Instructions Preheat oven to 400°F. Spread chicken and rice in greased 2-quart baking dish. Mix stock, milk and seasonings in medium bowl with wire whisk until well blended. Slow pour over chicken and rice.

Cover Bake 45 minutes. Remove foil. Stir in broccoli. Sprinkle with cheese.

In 12-inch nonstick skillet, heat olive oil over medium heat. Add onion; cook 3 to 4 minutes, stirring frequently, until translucent. Add mushrooms and salt; continue to cook 4 to 6 minutes or until any liquid evaporates and mushrooms are brown. Spray a 9X13 inch baking dish with nonstick cooking spray.

In a large mixing bowl, mix the first 8 ingredients until evenly combined. Add the chicken, broccoli, and rice and fold until evenly coated and ingredients are mixed. Pour into prepared pan. Sprinkle the top of the casserole evenly with grated cheese.

How to make Chicken Broccoli Rice Casserole – from scratch! Sauté garlic and onion in butter and/or oil, then mostly cook the chicken – it finishes cooking with the rice; Add flour, milk, broth and basic seasonings (salt, pepper, thyme), then add the rice. Add the rice, broccoli, one cup of the cheese and the chicken.

Mix well and turn out into the prepared casserole dish. Bake uncovered, at 350 degrees F, in the upper section of the oven for 30 minutes. Remove and add the crumb topping and the remaining 1/2 cup of cheese. Add the chicken broth and rice to the pot and bring to a boil, then reduce heat to a simmer.

Cover and cook for 7 minutes. Give the rice a quick stir, add the broccoli and cover. Cook for 8 more minutes.

Cook chicken and rice mixture covered for about 12 minutes. Sprinkle the broccoli evenly over the chicken and rice mixture and stir to combine. Continue to cook covered another 8 minutes on low, or until broccoli and rice are both tender.

Remove from heat and stir in. Stir the soup, water, rice and broccoli in an 11x8x2-inch baking dish. Season the chicken.

Place the chicken on the rice mixture. Sprinkle the chicken with the paprika. Cover the baking dish.

Step 3. Bake for 45 minutes or until the chicken is cooked through and the rice is tender. Season to taste.

  • I think I will make this without chicken, double the amount of broccoli and use cream of celery or cream of mushroom soup. This will make it a side dish instead of a main course. I will have to double recipe for 9×13 pan. Is there a way I can use regular rice instead of instant? I just don’t care for the texture. I’m thinking I could precook the rice and eliminate the chicken broth. What do you think? By the way, I shared your creamy mushroom and chicken recipe with my nephew and he made for his family. They made exactly like the recipe except used half and half instead of cream. He said it was to die for. He and his wife have 3 children and there were no leftovers.   • I usualy make “chicken and rice” in a pan, using canned cream of chicken and sometimes add brocolli. However, adding cheese would take it to a whole other level! I may try this but I’ll add chicken.

  • OMG! I can’t believe this! I just made this yesterday. You and I had the same broccoli chicken rice casserole in mind. The only thing that I added different this time was barbecue sauce to the chicken mixture along with the cream of mushroom soup and a little mayonnaise. I layered my casserole with rice first then broccoli then the chicken and cheese mixture. It’s all the same though no matter how it’s put together.

  • I really like her videos, also. I just found her channel, when I saw a video for her iced coffees. I might recommend using a spatula to push chopped foods off of the plates into pans/ pots, rather than her fingers or hands, though. I have no doubt her hands are clean; that’s not the problem. I expect people to use their hands when kneading dough and working with certain types of foods/ meatloaf, etc, but not when scraping food into frying pans or pots on the stove.

  • Sauces won’t thicken correctly unless you mix a starch (like flour or corn starch) with some type of fat and cook that for a few minutes first, before adding the liquid (like that chicken broth or bouillon and cream), etc.

    ��❤️���������� Otherwise, sounds delicious (if you like broccoli!)
    It is a NATURAL chemical reaction between the starch and the fat which thickens the gravy as it heats.

  • I can’t get over the fact how long this dish has to cook in the oven. First put it in with foil on for 30 minuttes, then take it out and springle with cheese and put it back in the oven for 20 minuttes. That means you have to cook it in the oven for 50 minuttes. I think it is a dish I won’t be doing when I get home from a 15 hour working day at 21.30 in the evening and you have to get up the next day at 03.00 in the morning in order to go to work again. It just simply takes to long to be doing. I am just saying.
