Low sugar & no butter or flour!Oatmeal Chia Breakfast Cookies make a wonderful breakfast that is vegan, all natural and full of fiber. Most vegan breakfast cookies can get pretty dry once they have cooled down, but these remain moist, soft and chewy. The dough is very versatile, so if you prefer bigger cookies you can always use 2-3 tbsps. of dough.
Chia seeds have a ton of fiber; when eaten with peanut butter and oats, it’s a great way to help feel fuller longer. Ingredients (makes about 3 dozen cookies): 4 tablespoons chia seeds, divided (I used BetterBody Foods Organic Chia Seeds) 1/4 cup plus 2 tablespoons water. 1/2 cup coconut oil. 1/2 cup sugar.
These 5-ingredient chia breakfast cookies are loaded with all kinds of goodies to fuel your morning. In this recipe, the almond flour and creamy nut butter bring a boost of healthy fat and protein. I used almond butter for mine, but any of your.
How To Make Peanut Butter Oatmeal Breakfast Cookies In a large mixing bowl, cream butter and 1/2 cup of the maple syrup. Whisk in the eggs, then the peanut butter and vanilla, whisking well after each. Sprinkle oats evenly across surface of wet ingredients, then do the same with the salt, baking powder, chia seeds, and peanuts. How to make healthy breakfast cookies Mix all the dry ingredients together in a mixing bowl.
Mix the wet ingredients together in a mixing bowl, then add to the dry ingredients and combine. Use a cookie scoop to scoop out cookies, pressing them down on the baking sheet. (they won’t spread much.) and bake at 350 degrees F for 12-14 minutes. Combine oats, bananas, applesauce, chia seeds, milk, egg, cinnamon, agave, and vanilla extract in a bowl.
Let cookie dough sit for 15. Ingredients for breakfast cookies The base ingredients for this breakfast cookie recipe are rolled oats, creamy peanut butter, vanilla, chia seeds and honey. From there, feel free to add in any additional mix-in’s, like chocolate chips or chopped almonds. Preheat oven to 325°F.
Grease a cookie sheet with Spiced Chai Avocado Oil Spray. Cream butter and sugar until light. Add vanilla and eggs.
List of related literature:
To make overnight oats, simply place about ½ cup rolled oats and other desired ingredients—about ½ to ¾ cup skim or almond milk; chopped fruit; spices like nutmeg, cinnamon, and vanilla extract; and other mix-ins, including 1 to 2 teaspoons of chia seeds—in a mason jar or other container you can seal and refrigerate.
How to eat: When chia seeds are soaked in water or coconut milk overnight, they take on a tapioca-like texture; add some cinnamon and/or raw cacao powder and a bit of stevia for a pudding-like treat that can be eaten any time.
Cook a serving for twenty minutes over medium heat, then remove from the heat and stir in two to three tablespoons almond butter, a pinch of sea salt, one tablespoon chia seeds or unsweetened coconut flakes, half a teaspoon vanilla, and one teaspoon cinnamon.
Wow I can’t believe these only have 1 gram fiber, that was really surprised me. Also I had to put the cookie dough in the fridge for 30 min. It made it so much easier to form the cookies. Bottom line my husband wants these all the time LOL! Thank you for all your hard work coming up with these yummy foods.
Wonderful! I can’t stop eating them! Great snack for my 1.5-yr old and me. I used Brazil nuts, butter, and honey because that’s what I had and added vanilla and a dash of cinnamon. SO glad I doubled the recipe. I actually prefer the ones without chocolate chips, which is what I did for my son.
This is your very first recipe I’m not so sure about Sacha. I don’t even know what Chia seeds are. The cookies look really tasty but I don’t keep most of the ingredients in my cupboard (see told you you should do a staples for your cupboard video lol) loving you videos always xxxx
Sacha, what have you been doing to minion that he has to vent, poor thing?! Another grandio recipe that’s good for you: I’m not sure about them lasting a week though!
I doubled everything, to freeze later, except the oats. Theyre in the oven now so i cant add more oats now. Im aways forgetting something. O well, im still gonna munch on them. Id like to say, being a diabetic has affected my brain, but i cant even use that excuse!
I only bit the bullet with chia seeds last week. They are really filling and great for breakfast…if you can get over the frog spawn texture. Great recipe…might try it on the husband as there’s no other way I’ll get him to eat chia. Thanks Sacha great recipe:)
Not sure where I went wrong, the dough became very runny and I could not shape the cookies, had to add a couple spoons wheat flour to be able to get it on the parchment paper!
The recipe in the narrative description above stops at the end and doesn’t say how long you’re supposed to leave the cookies in the oven before taking them out, nor does it mention anything about cooling them completely before storing in an airtight container or how long they will last chilled/frozen.
I have question about liquid stevia is save for kids because I have three years boy, so it’s good this liquid when we give it to kids? Your recipes are amazing and really delicious thank you please answer me when you have a time..
Just doing this now, they are not holding together, going to put the mixture in the refrigerator to see if it toughens up, will update. LATEST UPDATE: These did not toughen up in the refrigerator so had to bake them in a tray. After baking, they still fell apart, you must have missed something in your recipe. I would suggest using chia seeds rather than egg, as they bind together better.
dislike not for the recipe, but the fact that you people from USA don’t care that the rest of PLANET EARTH using grams, kilograms. IF YOU POST SOMETHING REMEMBER THAT THE REST OF HUMANITY IN PLANET EARTH DON’T UNDERSTAND WHAT DOES MEEN CUP, 1/4 CUP OR OUNCE OR WHAT EVER
Hi sacha seems like only a year ago since we were all in Mexico! lol, loving following your recipes and have tried quite a few, where would i get the seeds and almond butter will be trying these on the family this weekend.:)
I’ve made these quite a few times. Decided to make some 10pm at night, forgot that I needed a banana which we don’t have cause of this virus going around. Substituted it for yoghurt, so here goes lol
I’m concerned that the Stevia will kill my stomach as I’ve had issues with artificial sweeteners before..I try to eat clean so could I just use more banana?
Great video, I loved your oatmeal muffin cups by the way. But I do have a question for this recipe. If I don’t have access to coconut oil, what would be a good substitute?
Lord you remind be of the daughter I never had! I tried the 3 ingredient cookies the other day and they were gone it two days. I’ll definitely make these this weekend! Thumbs up!
Hey dani do u have low fat recipes I am trying a lot of your recipes out but I just found out I have high glocuse and well I want to eat good yummy food with out the high blood sugar after thank u so much
Like recipe except would like to know substitutes for coconut oil (avoiding saturated fat), eggs (will egg whites with a thickner like cornstarch or arrow root work?), and I would skip added sweetners of any kind-bananas are sufficient…your thoughts?
Danny! Am such a fan of yours and your channel’s!! Your cooking process and instructions are so so useful and overall the videos are a treat to watch, which doesn’t always happen with other cooking channels. Love your energy and enthusiasm each time you’re making something ☺️☺️ Going to try these cookies. Could you please talk about a vegan egg substitute here, though?
Stevia like all sweet stimulation still causes unhealthy spike in blood sugar for diabetics, as does bananas..research as of 2020 shows that saturated in coconut coconut oil is just as bad for arteries as any other saturated for. Levels of cholesterol in eggs are equivalent to smoking cigarettes and significantly increase risks of hearth attacks. Oats are great! Overall unfortunately these are not a healthy breakfast. I’m happy to give references to research if required. All resent paper citations using double blind peer reviewed research can be found at nutritionalfacts.org
Can you use raw cocoa unsweetened powder instead of chocolate drops? Also can you powered peanut butter made with water instead of the store bought jar? (I don’t have almond butter on hand)
I’ve been searching for some good healthy deserts to satisfy my sweet tooth. I’ve tried making a handful of recipes from youtube, and these cookies are on my top list. Just on a side note, if you don’t have liquid stevia like me, you can sub with 1/3 teaspoon of powder stevia. They came out delicious! Thanks Clean & Delicious for always sharing your goodies with the publice!
Since I have been coming to your channel I have used several of your recipes and I have learned to use the coconut oil. It is great to have alternatives and my husband and I really appreciate it. Thank you so much. Off to the kitchen to try this one. Looks good.
Man, these are waaaaay better without the silpat. The browning and caramelization that happens directly on the pan shoots the flavor over the moon! So good! Can’t wait to try some tomorrow for a snack with a smear of peanut butter! No pan spray needed. Plenty of fat to not stick
Not only does the recipe above not say anything about how long to leave the cookies in the oven and storage methods, but now I just noticed it says makes 24 cookies, and watching the video it says it makes 15-16 cookies. That’s a pretty big difference.
I’m excited to try these cookies! Would these turn out ok if I used date paste instead? I’m thinking the dates would sweeten better this way. Thank you for this yummy recipe!
Coconut oil is not that healthy! In fact, it can highten your cholesterol!! If you have high cholesterol, don’t use it. In the country I live, the health authorities came with a warning about using it too much, because at that time in suddenly became ‘’in’’ to use it in smoothies, frying meat and vegetables. Don’t use it heated in a pan for meat or vegetables.

Instead of chocolate chips, try white chocolate chips, also elimanate the chips and drizzle chocolate on baked cookies, more like a mounds bar.
