Ingredients 8 ounces uncooked whole-grain farfalle 2 cups fresh basil leaves 2 tablespoons olive oil 2 teaspoons lemon zest 1/2 teaspoon salt 1/4 teaspoon black pepper 1 clove garlic 1 cup grape tomatoes, halved 1 cup cherry tomatoes, halved 3 ounces mozzarella cheese, cut into 1/2-inch cubes (about. 1 lb. fusilli or other spiral-shaped pasta 1 pint cherry tomatoes, halved 8 oz. fresh mozzarella, either small balls or torn chunks ½ cup pine nuts, toasted 3-4 TBSP chiffonade of fresh basil, for garnish For the pesto: 1½ cups fresh basil, lightly packed ½ cup pine nuts, toasted (can sub walnuts. Use high quality ingredients. As much as possible, try using peak seasonal tomatoes, good quality mozzarella (the kind that is packed in water, not the kind that you can shred), fresh basil and cold-pressed. The homemade pesto is nut free, nutrient dense, and so addicting!But the desire for a quick and healthy lunch this past weekend made me get my pesto-loving butt back up and running. And so I made this wonderfully delicious, homemade, put-together-in-5-minutes, nut free pesto! Quite literally, it’s put together in 5 minutes.

Which is perfect for lazy food-loving girls who kinda like eating healthy sometimes. This gluten-free Caprese Pesto Pasta Salad is the perfect side-dish for summer entertaining! It requires very little cooking and is so simple to throw together! PLUS it is so flavorful! Add your favorite Summer greens into the pesto, toss with gluten-free pasta, tomatoes, and delicious Italian spices and BOOM: Summer side perfection.

4/15 awesome i loved this. made and cooled pasta added the pesto mixed with the oil and garlic like recipe said. i followed the recipe except added grilled chicken breast cubed and some black olives. alot of tomato and alot of mozz cubes. this was really good. make for a bbq as a side yum! used trader joes pesto.   • I made essentially the same thing a few weeks ago. We can’t get good imported mozzarella here in Evansville, IN, so I used the Bellegioso brand of mozzarella pearls. The only thing I did differently was to add dome balsamic vinegar. The first time I had and fell in love with Capresse salad, it was drizzled with balsamic reduction. A great summer dish.
