I get asked a lot about some of my best weight loss tips and tricks. A great salad for the Spring and Summer. Candied pecans, avocado, and feta cheese make it even more delicious. Adapted from The Slow Roasted Italian.. Candied Pecans: 1 Tablespoon butter. 1 Tablespoon packed light brown sugar. ½ cup pecan halves. Pinch of salt. Dressing: 2 Tablespoons granulated sugar. ¼ cup extra virgin olive oil. ¼ cup white wine vinegar. 1 Tablespoon Dijon mustard. 2 garlic cloves, pressed. ½ teaspoon salt. ¼ teaspoon pepper. ¼ teaspoon paprika. Salad: 10 ounces fresh baby spinach. ¼ small red onion, sliced. 1 quart fresh strawberries, hulled and quartered. ½ cup fresh blueberries. ½ avocado, cut into bite sized pieces. ½ (5 ounce) pkg. feta crumbles. In a small skillet over medium heat, melt the butter. Add the pecans, sugar and salt. Stir until the pecans are well coated. Stir until the sugar caramelizes, about 3-5 minutes. Spread over a piece of wax paper or parchment paper to cool, separating pecans.. In a measuring cup, combine the dressing ingredients and whisk to combine.. In a large bowl, combine the spinach onions, strawberries and blueberries. Pour about ½ of the dressing over the salad and toss, whisking again if the dressing has separated before pouring over the salad. Top with the avocado, feta cheese and candied pecans. INGREDIENTS. 5 ounces baby spinach leaves. 1 cup strawberries, sliced. 1/2 cup blueberries. 1/2 red onion, thinly sliced. 1 sweet apple, cored, halved, and thinly sliced. 1 cup candied walnuts, chopped. Dressing. 1 cup strawberries. 1/4 cup balsamic vinegar. 1/4 cup extra-virgin olive oil. 1 tablespoon dijon mustard. 1 tablespoon honey. 1 clove garlic, minced. 1/4 teaspoon salt. 1/4 teaspoon pepper. Garnish. Feta Cheese. PREPARATION. For the dressing, push a straw through the strawberries from the tip to the green top to remove the hull. (Or you can cut it off with a knife!). Add the rest of the dressing ingredients, and blend until smooth. Refrigerate.. Cut strawberries, apple, and onion into slices.. Combine all the salad ingredients in a large bowl, drizzle with desired amount of dressing and toss to coat. (Spinach wilts easily, don’t add dressing until ready to eat!). For the Blueberry-Spinach Salad: 4 cups (120 grams) baby spinach 1/2 cup (50 grams) cucumbers, sliced 1/2 cup (80 grams) canned low-sodium chickpeas, rinsed (certified gluten-free if necessary). This Brain Power Salad (Spinach Salad with Salmon, Avocado and Blueberries) is full of delicious ingredients that you and your brain will love! Scale 1x 2x 3x Ingredients. I make one similar to this. but with herb chicken, strawberries, red onions, feta, raspberry vinaigrette, and crunchy topping. soooo yummy. p.s. that cutting board is gorgeous.

The strawberries add a fresh taste while cancelling out some of the acidity and sour taste of the balsamic. Its actually delicious I just made a batch. 10/10 would recommend.
