Gordon Ramsay’s Mulled Wine With Dry Roasted Spiced Nuts

Preheat the oven to 350°F (177°C). In a bowl, stir together the maple syrup, spices, vanilla and mesquite. Add the walnuts and toss to coat. Spread the nuts on a parchment-lined baking sheet and toast until the maple caramelizes and the nuts are golden, roughly 7 minutes. Nuts are naturally gluten-free making them a soft snacking choice.

Preheat the oven to 400°F. Heat 1 tablespoon butter and the appropriate spices in a small saucepan. Stir in the nuts, then spread them on a baking sheet. Roast for 10 to 12 minutes, until very fragrant and warm, but not overly toasted.

This savory mix of nuts and seeds is crunchy perfection. 2 teaspoons pumpkin pie spice (a mix of cinnamon, cloves, ginger and nutmeg) ¼ teaspoon cayenne pepper ¼ cup coconut palm sugar 3 cups unsalted nuts (pecans, cashews, walnuts and almonds). For pumpkin spice or cinnamon mixed nuts, add between 1/2 teaspoon to 1 teaspoon pumpkin spice blend or cinnamon, to taste. For bourbon-spiked mixed. Choose any combination of spices you or your guests like.

For plain nuts, bake for 10-12 minutes, stirring at least once, until the nuts are toasted. In a large bowl, whisk egg white; add nuts and cranberries.

  • this is similar to my recipe. I whip the egg white first so it’s fluffy and more volume. I also add some cooking oil so the nuts have a bigger roasted flavor. Then I drizzle some honey before mixing.

  • I made this the other day and although I went crazy over the spice and sugar mixture, I just could not get it to stick to the nuts! All the spices and the sugar were left at the bottom of the bowl. Where did I go wrong?:/

  • @TheRealQuerida i’m not sure where you live but this is the case for most (mature?) parties. and that is because we believe and trust our guests to be as hygienic as possible. also, the usage of hand is much more convenient. this is especially so when the nuts are just snacks.

    but of course, your idea of serving nuts ensures tip top sanitary condition!

  • I tried this recipe and don’t recommend it. It taste no different that store bought spiced nuts. I like a lot of Laura recipes but this one is not a keeper.Sorry

  • i think i’ll save on cleanup and pour the dry mix into the wet bowl. easy recipe. i love making sweet pecans for salads. game changer!

  • Elle, very nice, the one thing i would do is if it is for a party/gathering, is leave out any kind of peanuts because someone may be allergic, as far as i know, all others would be a go.

  • i wanted to see if i could roast chickpeas this way instead of nuts because they’re so much less expensive. it worked out really well! the only difference was the cook time. they took almost two hours since they’re more moist but i ended up with lovely, crunchy, delicious spiced chickpeas. love this method, will make it again in an even larger quantity!

  • This has to be the worst spiced nut recipe…the cumin is so powerful and does not in anyway complement the fresh rosemary…..I had to dump them in a towel and get as much of the coating off them. I did rescue them by adding some honey and roast them again….:/

  • Spritz those nuts with jalapeno, Ghost, Carolina Reaper, or Scorpion pepper oil and you will truly have some snacking nuts with your favorite brew.

  • You state that you put curry powder in your recipe. Is that correct, or did you mean cayenne powder? What l saw did not look like curry powder, unless the is such a thing as red curry powder. If so where do you get it and what brand are you using?
