Blathnaid whips up quick oven-baked banana and chocolate chip doughnuts with Hilary Quinn of the Dublin Doughnut Company! Baked Banana & Chocolate Chip Doughnuts. Makes 15 18 Doughnuts. Ingredients. • 2 small ripe bananas. • 150g yoghurt (natural or greek). • 75g butter. • 2 eggs. • 1 teaspoon vanilla extract. • 125g caster sugar. • 275g plain flour. • 1 teaspoon baking powder. • 1/2 teaspoon bread soda. • 100g milk chocolate chips. • Cinnamon sugar, to coat. Method. • Preheat oven to 175C and grease doughnut trays (or line muffin tins with paper cases if using). • Gently melt the butter over a low heat. • Sieve the sugar, flour, baking powder and bread soda together in a large bowl, then add the chocolate chips. • Remove the butter from the heat and allow to cool slightly. • Mash the bananas with a fork until smooth. • In a separate bowl, whisk together the yoghurt, eggs and vanilla then add the mashed bananas. • When the butter has cooled, add to the yoghurt mixture. • Gently stir the wet ingredients into the dry ingredients until the mixture just comes together. Amazing soft baked banana and cinnamon doughnuts that you just can´t stop eating!. THE RECIPE: Banana-cinnamon doughnuts. (makes 12 regular size doughnuts). Ingredients. 250g of flour. 150g sugar. 2tsp baking powder. pinch of salt. 1tsp cinnamon (optional). 1 ripe banana. 2 medium eggs. 120ml kefir. 2tbsp melted butter. For decoration. 5tsp sugar. ½tsp cinnamon. 1tbsp melted butter. Start with pealing the banana and mashing it in a small bowl so that there are no pieces left.. Sift the flour and baking powder together and add with the rest of the dry ingredients to a large bowl. Then beat eggs lightly with a whisk in a separate bowl. Add banana, kefir and melted butter and mix. Pour the egg mixture into dry ingredients and mix well until incorporated.. Pipe the batter into oven doughnut tray/pan filling up to 2/3 full. Bake the doughnuts in 220 C bottom top heat at the middle shelf for about 10-12 minutes or until the doughnuts start to golden slightly. Let the doughnuts cool slightly before removing them from the pan.. Once doughnuts have completely cooled you can start making the mix for decoration. Mix sugar with cinnamon. Brush doughnuts lightly with melted butter and then sprinkle with sugar and cinnamon mix..
