¾ Cup Mozzarella Cheese ¾ Cup Cheddar Cheese 4 Slices Bacon 3 Eggs ⅛ Cup Diced Tomato 1 Tbsp Green Onion. Melt remaining butter in the skillet and add a tortilla, buttered-side down. Layer with 1/4 of the cheese, 1/2 of the eggs and 1/2 of the bacon. Top with 1/4 of the cheese and a tortilla, buttered-side. Crack an egg into the centre, sprinkle with bacon, cheese and season with salt and pepper.
Fold the tortilla over and cook for 4 minutes or until golden and crisp. I usually cook 2 in the skillet. Flip, turning over the folded edge (i.e. Pour eggs into a small skillet and scramble over low heat. Remove eggs to small bowl and cover with tin foil.
In the same skillet put one of the burrito shells down. Top with scramble eggs, cheese and bacon bits. To assemble the quesadillas, place a tortilla on a buttered griddle or skillet over medium-low heat. Add a layer of cheese, a layer of cooked veggies, a layer of bacon slices, a layer of eggs, a layer of avocado, and another layer of cheese. Top with a second tortilla.
In a small bowl, whisk the eggs. Coat a large skillet with cooking spray. Add eggs; cook and stir over medium heat until completely set. Place.
Lay out 4 tortillas on a flat surface or greased baking sheet and top with pinchful of shreddedcheese, scrambled eggs, crumbled bacon, distributed evenly among the tortillas. Add a pinchful more cheese and then top with the remaining 4 tortillas. Bake in the preheated oven for 15 minutes, flipping once after about 8-9 minutes. Place a tortilla on the griddle.
Spoon one-fourth of the eggs over half of the tortilla. Top with one-fourth of the bacon and one-fourth of the cheese. Fold the bare part of the tortilla over the top of the ingredients. Soft scrambled eggs, crispy bacon, chipotle peppers, cheese, and spinach, all stuffed into flour tortillas and cooked until golden. Top these.
