¾ Cup Mozzarella Cheese ¾ Cup Cheddar Cheese 4 Slices Bacon 3 Eggs ⅛ Cup Diced Tomato 1 Tbsp Green Onion. Melt remaining butter in the skillet and add a tortilla, buttered-side down. Layer with 1/4 of the cheese, 1/2 of the eggs and 1/2 of the bacon. Top with 1/4 of the cheese and a tortilla, buttered-side. Crack an egg into the centre, sprinkle with bacon, cheese and season with salt and pepper.

Fold the tortilla over and cook for 4 minutes or until golden and crisp. I usually cook 2 in the skillet. Flip, turning over the folded edge (i.e. Pour eggs into a small skillet and scramble over low heat. Remove eggs to small bowl and cover with tin foil.

In the same skillet put one of the burrito shells down. Top with scramble eggs, cheese and bacon bits. To assemble the quesadillas, place a tortilla on a buttered griddle or skillet over medium-low heat. Add a layer of cheese, a layer of cooked veggies, a layer of bacon slices, a layer of eggs, a layer of avocado, and another layer of cheese. Top with a second tortilla.

In a small bowl, whisk the eggs. Coat a large skillet with cooking spray. Add eggs; cook and stir over medium heat until completely set. Place.

Lay out 4 tortillas on a flat surface or greased baking sheet and top with pinchful of shreddedcheese, scrambled eggs, crumbled bacon, distributed evenly among the tortillas. Add a pinchful more cheese and then top with the remaining 4 tortillas. Bake in the preheated oven for 15 minutes, flipping once after about 8-9 minutes. Place a tortilla on the griddle.

Spoon one-fourth of the eggs over half of the tortilla. Top with one-fourth of the bacon and one-fourth of the cheese. Fold the bare part of the tortilla over the top of the ingredients. Soft scrambled eggs, crispy bacon, chipotle peppers, cheese, and spinach, all stuffed into flour tortillas and cooked until golden. Top these.

Breakfast quesadillas are the easiest one-pan breakfast and take just minutes to make. Change up the egg quesadillas with your favorite protein. Watch the video tutorial to see how we made them with breakfast sausage, bacon, and sliced deli ham.

    When you put the tortilla on the eggs at 1:42 was the tortilla partially cooked on one side or did you put it on with it just being room temperature?

  • Where do you get your eggs? Those yolks are beautiful! Do you get them from a farm? I usually never see yolks with that deep of an orange color

  • Quesadillas are good any time and there are so many variations. Breakfast quesadillas are especially good. I spice them up with some fresh green chiles or even use chorizo in place of bacon.

  • Thanx for sharing this breakfast recipe, I tried a new quesadilla recipe in my cafe in Japan that you’d probably laugh at, but what is food without innovation. Boneless chicken thighs ( because it’s more tender than breast ) and the same price where I live. The filling is quite simple, cheese and chicken, the chicken is cooked with taco seasoning, I make my own seasoning as it’s cheaper and it only takes from 9 to 10 easily obtained herbs and spices. The different part is that I add Greek tzakziki sauce to it. I know it sounds strange, but it works.

  • Am I the only one that made this? I was outside at 430 this morning getting it going. I have off this week but the gf had to be up for work. I saw this last night and had to make it.

    It tastes as good as it looks! I recommend going heavy on the cheese. Thumbs up on this one, it could be a signature dish at a restaurant.

    And I just love the flipping technique you used.
    You wouldn’t believe some of the messes I’ve made trying to flip my quesadillas.
    Stuff flying everywhere….I’m surprised I never thought of that considering I use that flipping technique often in other dishes.  Don’t I feel stupid now.:)

  • Damn, that Le Creuset pot on the shelf in the background, sure can use some bar keepers friend. Shit, even Ajax works on this shit. Use it all the time on mine and they are pristine.

  • I’m confused. I thought the same spatula you used for the raw meat could not be used once the meat is cooked. You are supposed to handle the cooked meat with a different spatula.

  • -Get two tortillas
    -Break up a square of swiss cheese into pieces
    -Break up a square of cheddar cheese into pieces
    -Put the cheese on one tortilla, spread it out evenly
    -Add two packs of mild taco bell hotsauce to the same tortilla
    -Put the other tortilla on top of the one with cheese and hotsauce on it
    -Stove on Medium heat
    -A generous amount of olive oil in a pan
    -Pan on the stove
    -Quesadilla in the pan
    -Wait for the first side to turn golden-colored and crispy
    -Flip the Quesadilla
    -Add a little more olive oil
    -Wait for the second side to turn golden-colored and crispy
    -Take the Quesadilla off of the pan and put it on a cutting board
    -Cut the Quesadilla into eighths
    -Put the cut Quesadilla on a large plate with Sour Cream and, optionally, guacamole

    This is my depressing quesadilla recipe that I make around 3-4 times a week at 11 pm when I’m hungry
    If you’re very hungry with nothing else to make though, it lowkey slaps
    Sometimes I also add Velvedda, its optional though

  • Me fascinan tus recetas pero te voy a contar que a nuestras quesadillas (en México) les ponemos principalmente “quesillo” o “queso Oaxaca” y las solemos acompañar con cualquier otra carne o relleno de otros vegetales, también usamos otros quesos que gratinen pero es tradicional usar el que te mencioné pero cuando le ponemos huevo a la quesadilla la volvemos una variedad de burrito, a la mayoría de las quesadillas en México no solemos ponerle huevo, a las tuyas en esta ocasión les faltó mucho más queso y no les pongas huevos. En nuestro país del centro al sur se usa la tortilla de maíz y en los estados del norte es más común la tortilla de harina. Te repito soy tu seguidora desde hace tiempo
