  • I have never seen anyone boil the potatoes first. That’s probably why my potatoes don’t ever work. My mom always heated her pan in the oven first, took it out, then placed the potatoes onto it and that’s how they became crispy. But this way is easier especially using parchment paper.

  • for carrots I suggest frying them in a pan with a lid on they’ll get softer. also cinnamon and fresh thyme are great companions.

  • I love roasted vegetables (don’t get me started on those potatoes! too bad it’s Pasta tonight) and keep track of what’s in the potato bin and the fridge…i.e. Potatoes and Carrots. With thinly sliced onions and whole garlic cloves(in the skins)…there’s the start of something good. Adding bell peppers, sliced or chunked, near the end of cooking…a Veggie Sheet Pan dinner…with protein of choice (and anything else that’s on hand)…..Thank your for taking Sides to a new level!

  • Valuable lesson I have learned is to make vegetables the main course and meat the side dish. Less expensive, healthier in long run.

  • I tried the carrots. The flavor is good but they could have been cooked longer. Maybe 35-40 at the same temp or longer at a lower temp

  • The skewers look incredible!!! To save time I grill the cut vegetables in a grilling basket if I’m not serving the skewers to guests.

  • Yum! Any recipe that calls for par cooked potatoes, I just microwave them for 5 mins instead. When I make home fries I cut them & nuke them for 5 mins before putting them in the frying pan. I bet it would work with this recipe as well. I would cut them into bite size pieces first though otherwise they are too hot too handle.
