  • When my anorexic brain is like: “Skip the hum-what? Replace it with a chilli paste. Add diced chicken breast and carrots or cucumber. Wrap it up x’D and only eat 1 (8 cals lettuce (outer), 10 cals for 15g of chilli paste, 69 calories for like 1/4 cup cooked chicken breast, 13 calories for 1/4 carrot. TOTAL: 100 calories for the day. The rice would be a great idea too. Though rice always messes up my calorie calculations for the day. So I tend to avoid eating rice. I like this recipe though! It’s simple and easy and I’ll modify it a smidge. Was getting tired of my usual eating routine.

  • It’s raining cats and goats outside, so I can sit in my home and enjoy Protein Chef videos for a few luxurious moments.   If I ran into Protein Chef at the supermarket, I think I would pick him up and put him in the cart I was pushing…you know put  him in the seat for toddlers.  I think that would be fun.  Then I could hang out with him as I shopped.  I don’t think he’d mind.:-D  I just wouldn’t let him near the mayonnaise…if I was buying any.

  • Just tried out this recipe(Loved it btw mine didn’t look as good but they were delicoussss) & If anyone wants something a little creamier use a natural peanut butter that has a thinner consistency, and almond milk instead of coconut.

  • This was fantastic I have to admit tho I used tortillas instead of lettuce but I ran out of lettuce so i had no choice. Either way tho that stuff was BEAUTIFUL it had a chicken salad taste to it but it wasn’t chicken salad and to my surprise I quite enjoyed it. I know guys peanut butter to chicken sounds really risky but it was the star of the dish and made all the difference. Try it

  • I have a recipe for lettuce wraps different from her’s that’s still loaded with veggies and good for you. If you’re interested, here it is.

    Ingredients:

    Ground turkey or beefless crumbles
    Peanut butter
    Soy sauce
    Sugar
    Siracha
    Garlic powder
    Vinegar (rice, white, or apple cider)
    A touch of smooth peanut butter
    Grated carrot
    Thinly sliced green cabbage
    Cooked and cooled rice
    Iceberg lettuce

    1) Brown your meat or warm your beefless crumbles. The seasonings have no set amount so add a little of each one and taste it as you go. The point is to make it extremely flavourful though.
    2) To assemble, take one leaf of lettuce, a spoonful or two of rice, and a spoonful of your meat mixture. Then pile on the raw veggies. You can also try it with radishes, onions, peppers, and any other number of things. I suggest vegetables that do not release too much moisture (ex. Don’t use cucumber or watercress. Add to the flavour, don’t water it down)

    I use plain white rice in mine since that’s what I’ve always eaten (brown rice causes stomach problems for me and too much wheat makes me sleepy). I also prefer the beefless crumbles to meat simply because they tend to soak up the flavours of the sauce better than meat does.

  • You can also put lettuce or any kind of green sallad or spinach or anything like it in water and a pich of salt and let it sit and it will be crunchy as hell…

  • I made this but instead of just having them as cups I used the lettuce sort of as a tortilla wrap and wrapped the chicken in the lettuce I just found it a bit easier to eat and I find it easier to take on the go thankyou for this recipe xxx

  • Cassey, I noticed you use coconut oil so I’m assuming you use that because olive oil can’t be heated at very high temperatures and coconut oil is the other healthier option. Am I right?

  • I didn’t have barely anything in the house, or as I thought to make something so amazing. I couldn’t make this but I thought.. Why am I just looking at these while I’m hungry? I have veggies and fruits, get your butt up and make something healthy instead of later snacking on some cookies!” So I got up and turns out, I couldn’t make lettuce wraps and I didn’t have chicken. But this is what I did..

    I got some lettuce, we were almost out so I have to use bits and pieces (Ripped pieces)… I put that in a bowl with some fresh spinach leaves on top, I had some tuna so I cooked that instead Cooled it down and I only had some light mayo so I used that when I crushed the tuna in bits and pieces. I also put some sliced almonds in it and put it over the greens. I then chopped some tomatoes up and put them in there, afterwards dashing some Cajun seasoning over on top. <3 I finished it off with a strawberry protein smoothie. Turns out I had more than I thought and if people think of everything they have maybe they can make something too.:3

    My point is When watching videos like these from others I usually feel helpless like I have nothing then I end up having unhealthy stuff like a spoiled brat! YOU and only you inspire me to get up and use my imagination.

  • I just made this and it was delicious. I got so full and I’m guilt-free. This was perfectfor me because I can’t stand mayonnaise. The weird thing is that I don’t eat greek yogurt so I was skeptical about how it would taste against the chicken and other ingredients, but all of it was really good, and very healthy. I’ve been looking for ways to incorporate more protein into my diet without having to drink whey everyday, and all of these were great sources of protein. Thank you. Keep the ideas coming.

  • There is no doubt that a low carb diet actually works! But with me I eat a low carb meal and find I want more! I’ll take this idea and rice up cauliflower and do it like fried rice,that should add the filling sensation without adding the weighed down feeling of white or brown rice. Thanks!

  • I have made a freaking quest out of making this type of thing. Iceberg is awesome for turkey-bacon rollups, but you have to be so careful. If I use Romaine like this, I flatten it then use a sharp knife to shave the thickest part of the stem and they become more pliable. Also, as much as I love mayo, I like using “compound cream cheese” instead, saving myself some calories. I mix cream cheese with a little mustard, garlic, salt, and lemon pepper.

    Also, you are my favorite low carb guy on the Tube.

  • It’s so frustrating because I still live at home with my parents in the summertime and they don’t really understand my need for wanting to eat healthy, and it upsets me when they go shopping and don’t get what I ask for. If I go out shopping myself they will get mad at me say, well why didn’t you ask us to get it at the store? What do I do in this situation?

  • Oh my gosh! That looks so good! I’m definitely going to have to try this one. By the way, my family loves the Swedish pancakes recipe you posted awhile back. We’ve made it a few times now and it’s always a hit. And your newer salsa recipe with the fire roasted tomatoes is the bomb!   • Oh my goodness this is so weird Chelsea! I am a New Zealander who has been vegan for over 10 years following Dr Mcdougalls Starch solution which I came across through research due to having MS myself! I’ve just discovered you through Plantiful Kiki and Highcarb Hannah as I started putting on weight and you have helped me revisit calorie density. Please tell Nick I was diagnosed with MS in 2001 with relapsing remitting but within a few short years it progressed to secondary progressive. Recently I had an MRI to see what’s happening and all my plaques are inactive and I can only put that down to plantbased eating so keep at it!

  • Hey Chelsea, I just have to ask… I’m a mum of 2 kids and a hubby, so with 4 people in the house, having enough space in the fridge to fit all the vegetables for all of us is challenging. How do you manage your fridge so that you have space for 4 heads of broccoli per person per day? Do you shop 4 times a week or something? Your fridge looks like it’s a relatively normal size…
