  • I came over from Google + BBQ community and gave you a sub. I was very interested to see what you thought about this trick as I have done it before. I was always under the impression that it made the burger cook faster due to the dimple. I didn’t know it was supposed to keep it from shrinking. I think more than anything, the big difference in shrinking is the type of ground and the amount of fat you have in the meat. The less fat the less shrinkage. I may be wrong but who knows.

  • So the test is inaccurate cause you reformed the patty after you thumbprinted it… you said it grew by a quarter inch, so in theory if you lost a quarter of inch in shrink the thumbprint would have negated the shrink
