  • Prior to my gastric bypass, I thought my capacity was the stuff of legend. Then Joey comes along and puts me to shame. I used to eat two double quarter pounders with cheese, two large fries, a 10 piece McNuggets, two large cokes, and would have a half gallon of ice cream for dessert. Now I couldn’t even finish one Big Mac. I also don’t weigh 425 lbs anymore, so it’s been a good trade off.

  • After you mixed it all together, That is the time to chill it as it makes shaping a lot easier. Normal Croquettes have just the potato (Peeled) in them, Chefs use 2 spoons to make Quinnell’s or a Piping bag with a big round nozzle. They Pipe a long sausage then cut to length. I have to admit I cannot remember the last time I made or ate one.

  • Never put potatoes in boiling water. This is a root vegetable. You want it to cook from the inside out. Always cold water covering your potatoes by an inch, add salt and bring to a boil. 15 to 20 mins later you should be good to go. Boiling water will not speed up the cooking time. Boiling water is for blanching, frozen veggies or making hard cooked eggs so the shells come off easily. Other than that this is a killer recipe lol:o)

  • I made this for a friend [I cook and bake a lot, so she wanted me to make this for her]. But I had made mine before I saw this video. Y’all can try my recipe if you like:
    [Make sure to preheat your oven to 350° Fahrenheit]
    1. Take a pie pan and grease the pan to prevent the pie from sticking. Use butter or Pam. Your choice.
    2. Take a large ball of cookie dough [I used a macadamia cookie recipe because that is her favorite cookie] and spread the cookie dough throughout the edges. Leaving some excess over the edge.
    3. Take small pieces of chocolate [I used Hershey] and place them around the crust of the pan.
    4. Then take the excess cookie dough over the edges, and fold it over the pieces of chocolate. Making sure it is under the chocolate so that it stays in place.
    5. Place your cookie in the oven and bake for 15-20 minutes or until golden brown. However texture you prefer your cookie [aka soft, crunchy, etc.]
    6. Once your cookie is done baking, let it cool down for a few minutes. Time may vary.
    7. Take softened strawberry ice cream and spread it as you would pizza marinara sauce.
    8. Use white chocolate chips and sprinkle over as you would the cheese of a pizza.
    9. Cut up strawberries into thin slices and place around the pie.
    10. And there you go! A dessert pizza!
