I omitted the asparagus because we don’t like it, and the celery because I was too lazy to go to the store to buy it, and subbed fresh for the canned mushrooms. This recipe is an absolute home run!   • Just made this for the first time and it was amazing! The 2 tweaks I made was putting about 1/2 tsp crushed garlic in with butter and xanthum gum and added 1/4 tsp old bay blackened seasoning along with your spices and it was so delish! Thanks for thos wonderful recipe Papa G!

  • This has probably already been said, but DO NOT discard your asparagus ends. Those things contain loads of flavour for broths etc. Just freeze them if you can, like any other parts of vegetables you’re not using in your actual recipe, like broccoli or cauliflower stems or leaves.

  • Another option is to use a fruit dip in the place of the sour cream. Paula, I’ve been watching you for years and taught me how to adjust and substitute my ingredients as needed when I’m cooking. My mom and grandmother taught me how to cook, but you Paula, taught me how to have fun and relax while cooking. When I first started watching you, I stressed too much and was too rigid. (I was a new grad&ED nurse back then.) I was afraid to alter my recipes or the way I had been taught and it became a chore to cook. There was and still is now enough stress in life. Learning how easy it was in many cases to adjust recipes/substitute ingredients on the fly was such a refreshing change that you encouraged me years ago to make. I also applied the lighten up, you don’t have to be serious all the time approach, in many areas of my life. Since I found you on YouTube, you are there again encouraging me again when things get hectic. You remind me to take a breath and relax. I miss my Grandma. So, you have been appointed my surrogate Grandma, if that’s ok. You’re so appreciated and loved in this house, ma’am. ������‍����‍♀️������������

  • All of these soup recipes look so delicious Paula. I’ve always liked eating soup all of the time. Especially during the cold winter months. I’ve always been a huge fan of chicken noodle soup my entire life.

  • I would substitute ground chicken made into meatballs for the Italian soup just throw them in raw at the end and let them cook right in the soup…they absorb the flavors of the other ingredients and they are so delicious.
