How to Make Vegan Mac and Cheese First, make the vegan cheese sauce. Simmer sweet potatoes and potatoes until tender. Then, drain them, and add them to a blender with raw cashews, nutritional yeast, garlic, onion powder, apple cider vinegar, sea salt, water, and olive oil.

Boil or steam the potatoes and carrots in a large pot for about 20 minutes or until soft. In the meanwhile, cook the pasta according to package directions. Drain and set aside. Place all the vegan cheese ingredients in a blender (including the cooked potatoes and carrots) and blend until smooth. I follow a vegan diet and I’m not one of those “crazy vegans.” I do think we ALL have to think about the sustainability of our planet and it’s hard to argue science. The truth is, the production of many animal products is killing us and our planet. To deny that is to contribute to the problem. I’ve watched too many people with health problems, of whom I love and care for die of poor diet diseases. I was sick and once changing my food habits, ended all my issues.   • Some of the vegan food is a weird non-vegan meal mockery. I eat almost vegan, except I don’t eat gluten and I do eat seafood. No; dairy, cow/pig/chicken/lamb/eggs etc etc. There are so many wonderful things to make out of plants and vegan ingredients, alone, that the dishes mimicking non vegan meals just don’t make sense to me. Even if I didn’t eat seafood, I’d still feel this way. But whatever, we all have to eat and enjoy life. Different people thrive with different diets. Bon appetit y’all

  • Ok I made this, consistency was great but it was seriously lacking in taste. I added the juice of half a lemon, a tsp of mustard, and more salt, now it’s perfect

  • I know it’s been like two years… but here are some tips and tricks to make the BEST mac ‘n’ cheese!
    1. When boiling the vegetables, boil the cashews with them. Why? It’ll soften the cashews, making the sauce creamier and smoother when you blend it.

    2. Instead of ‘reserved water’ use a creamy non-dairy milksuch as soy or cashew. Why? It will also make the sauce creamier and it won’t taste like soup.

    3. If you don’t like onion, add half an onion instead of a whole one and reduce or omit the amount of onion powder. Why? My mac ‘n’ cheese tasted very onion-y, but I don’t mind that taste. However, if you do mind it, then do the above.

    4. Boil your vegetables for five minutes longer. Why? Creamier! Smoother! Cheesier!

    5. Add the spices you like. If you don’t like garlic powder, DON’T ADD IT! I added turmeric, paprika, onion powder and garlic powder. Think of the spices you like! Cumin? Sure! Oregano? Sure! Thyme? Sure!

    6: Add vegan cheese on top for a cheesier mouth feel and taste.

  • Don’t add a lot of carrot, don’t forget to add the onion, use raw cashews (in case it wasn’t clear), definitely add nutritional yeast, and add some paprika. It was delicious still ����

  • I make a recipe very similar to this one but I add nutritional yeast (you have to have it if want that cheese flavour imo) I also add mustard powder and then add Daiya (or any dairy free shredded cheese) to make it nice and stretchy and really cheesy:))

  • Listen up, guys, this is hands down the BEST thing I’ve ever eaten. I added a few little extras though: 1.) I added homemade tofu-cashew-based cream cheese to the sauce 2.) I baked some smoked tofu that I cut into really tiny cubes in the oven until it resembled bacon 3.) I made some carammelized onions for the topping 4.) I added sauteed mushrooms 5.) I topped it with the onions, lots of black pepper, fresh salad greens and lots of homemade cashew-parmesan cheese. This tastes like a restaurant-worthy dish and I’m not even vegan, wow! 10/10 for this one������

  • I added a couple of changes to this original recipe, and even my total omnivore husband loved it! First, I replaced the reserved liquid with equal amount of non-dairy milk, then added extra garlic salt to taste, and then just a touch of sriracha just for taste… and it was a hit!

  • People commenting you’re not vegan it’s okay. Let me tell you. It’s not. It’s actually not okay. Cows are raped. (Things they don’t want you to see or know about) And 73%of the carbon emmision can be reduced if we went vegan(Oxford study) and so many lands can be turned into forests. It’s not okay to be non vegan, certainly not. But it does get a little difficult to suddenly give up your lifestyle and you know what’s okay? to start with little changes And slow change is still okay. Research a little on this.

  • Hey Tasty, I’ve seen so many good vegan recipes from you, and I’ve been considering making the change myself, but I’m really struggling with the fact that I have a severe nut allergy, and most of the “creamy” dishes I’ve seen tend to always use Cashews, my deadly foe. Do you (or does anyone) have any suggestions of “creamy”-like substitutes that aren’t nuts to try in my recipes?

  • since the comments are meant to be helpful…i tried this once and i just fell in love with it! it has become my absolute favorite comfort food. anyone should try this, vegan or not! i’ve made this multiple times and i have some tips for making it even more tasty:
    1. add 1 tsp paprika (or even more if you love paprika!)
    2. double the nutritional yeast
    3. boil the veggies in veggie stock
    4. replace the reserved water with plant milk (almond or soy milk works the best, coconut milk ruins the taste) or add half reserved water, half milk
    5. add pepper to taste
    6. don’t be afraid to add more cashews!

  • My vegan mac and cheese sauce is waaaay more simple. It has homemade cashew cream, nutritional yeast, salt, brags aminos, and a can of organic green chile salsa all blended. Hers is super interesting though.

  • This is way more fatty than it needs to be. Cashews are gonna give more than enough fat. If you want to thicken, boil up and blend some root veg.

  • Its genius..Made it LOVE it, I used almond milk, a few splashes, and the veggie broth makes a huge difference with Nutritional yeast for consistency,. I added some paprika, garlic onion powder, its also a great way to use up my carrots, onions and a couple potatoes without just making Soup or eating raw Thank you so much!   • I’m actually little bit sad that vegans are trying to replicate something with animal products. Like vegan meat, or vegan egg, or yes, even vegan mac and cheese. Because vegan meals are unique and delicious in its own way. And I’m sad because companies are trying to recreate something for meat eaters so they’d stop eating meat but to be honest that’s not gonna happen. This stuff is never going to taste like the real thing, but that’s good! Be proud that you are making your own sauces with unique taste. I love them and I’m not vegan, nor vegetarian.

  • Wow. I just got done makin’ it (for the first time) and its nothing short of awesome! Last night I was driving around (like a chicken with it’s head cut off) in -60 degree temperatures (with the wind chill and speed) trying to gather all of the ingredients. I’m in the midwestern states, but it sure was worth it. Plus, my boss allowed us stay home (today) because of the record breaking temperatures. Great comfort food—that isn’t calorie laden. I compared with some other recipes and decided on this one because you included more ingredients that I am accustomed to seeing with the traditional homestyle mac and cheese (like the mustard and paprika).   • I added about 1/3 cup cashew butter to make it more hearty and creamy and some broccoli…it was unbelievably delicious. In most vegan Mac and cheese recipes they have like 1/4 cup of nooch lol. I was rlly surprised that the recipe called for so much, but after trying it I’m never going back.

  • To make this nut free and also tastier imo (or just cheaper bc cashews are mega expensive) replace them with 2 tbsp of tahini! Make sure you use a good brand, I like the sunita one which I got off amazon, a lot of the time they’re really bitter. Also I would add lemon juice or apple cider vinegar to taste.
    Both of these combined really add to the cheesy flavour, it’s yummyyy.

  • I watch vegan recipe videos because cheese is expensive in my country, and I thought this would be a good recipe on its own till I saw the comments, because no one can shut up about nutritional yeast because NUTRITIONAL YEAST IS ALSO EXPENSIVE IN MY COUNTRY. I just can’t find any recipes for vegan mac and cheese without nutritional yeast.
    I’ll just wait for my relatives from America to buy me one block of Kraft Cheddar once a year to savour it.

  • My SUPER easy vegan mac and cheese. Ok it’s a misnomer because it doesn’t taste anything like cheese but it has the same moreish comfort feel. I usually make it with left over boiled pasta in the microwave. If you don’t have vegan butter try using oil + nutritional yeast for more flavour

    Tale a mug of boiled pasta, add 1 tbsp of vegan butter, 1/2 tsp (ish) of garlic powder and salt and pepper. Microwave for 30 seconds then add a tiny squeeze of lemon juice. It’s so yummm.

  • I tried this recipe and it tasted absolutely disgusting! I couldn’t even finish my plate, so I had to throw it away. I think that’s because a whole onion wedge is waay too much. Please don’t try this at home, you’ll definitely regret it.

  • I tried this recipe years ago and it has a backtaste of chicken soup. I found that really weird with the startch of the potato. The recipe could be improve more with nooch and lemon.

  • I added truffle salt and a quarter cup of nutritional yeast to this, then put it in a baking dish and topped it with cheddar and mozzarella Gaia vegan cheese and baked it. Absolutely delicious!

    All the other recipes I looked at required a boatload of processed vegan cheese, so I was shocked that the sauce could turn out so cheesy with only all whole, natural foods. THANK YOU for this!

  • This was so bland, and I thought maybe because I used wholewheat pasta, but no I discovered nutritional yeast and its nutty cheesiness! I’d used at least 4 heaped tablespoons for the portion in the vid

    Fill a mug with leftover cooked pasta and add a knob of vegan margarine/butter, 1/2 tsp of garlic powder, plenty of salt and pepper, and a squeeze of lemon, then microwave for a minute. Mmmmm
