In a large bowl, combine the roasted cauliflower with the potatoes, radishes and red onion. Drizzle the lemon-tahini dressing over the top and toss gently to coat. Fold in the arugula and half of the mixed herbs.

Transfer the potato salad to a serving bowl and garnish with the remaining mixed herbs. Combine tahini, lemon juice, and water in a small bowl; whisk to combine. Add tarragon, sugar, vinegar, garlic, remaining 1/4 tsp. salt and black pepper; stir to combine.

Pour tahini sauce over potato mixture; toss to combine. Add arugula; gently toss to combine. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels and crumble.

Step 4 Add bacon, eggs, Cheddar cheese, mayonnaise, onion, dill, mustard, salt, and pepper to the bowl of cauliflower and stir well to combine. Grate 1 medium (1 1/2-lb.) head cauliflower into a large microwavable bowl. Stir in olive oil and 1/4 tsp. kosher salt.

Cover with plastic wrap, and microwave 3 minutes. Spread on a baking sheet; let cool 10 minutes. Place baking sheet with cauliflower and sweet potatoes in oven and bake for 40 minutes, stirring after 20 minutes. Place baking sheet with chickpeas and onion in for remaining 20 minutes of cauliflower/sweet potato baking time. To make the dressing, place all lemon tahini dressing ingredients in a small food processor and blend.

Spread the vegetables on the baking sheet in a single layer and roast for 20-25 minutes, until the carrots are tender. Make the dressing: In a medium bowl, whisk together the tahini, garlic, lemon juice, and water. While whisking, slowly drizzle in the olive oil until the dressing is emulsified. Season with salt and pepper.

Here’s a salad of bright yellow turmeric-spiced roasted cauliflower with spinach, onions, almonds and chopped dates. Everything is bathed in sweet and tangy honey-lemon-tahini dressing. Cauliflower salad doesn’t get more exciting than this!Spoon the tahini sauce onto a large serving plate or platter and spread it into a thin (but not too thin) layer. Gently place the roasted cauliflower florets on top, and garnish with lots of mint and a crunchy flaky finishing salt, such as Maldon (affiliate link).

Don’t let the tahini sauce. Roast the cauliflower and onions in the preheated oven for 20 minutes, then stir, return them to the oven, and roast for an additional 10-15 minutes, or until the cauliflower is tender and browned on the edges. Let the cauliflower cool slightly.

While the cauliflower and onions are roasting, make the lemon tahini dressing.

  • Glad I found you. The food looks really tasty! I don’t really identify with the raw vegans or strict HCLF vegans but definitely don’t eat vegan junk food. I like that you use whole foods but aren’t afraid to use a little oil. ��
