Ingredients 1 cup raisins ½ cup hot water 2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 2 cups quick cooking oats 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1 cup packed brown sugar ½ cup chopped walnuts 2 large eggs eggs ¾ cup vegetable oil 1 teaspoon vanilla extract. Oatmeal Cookies are the BEST soft and chewy cookie recipe, made with quick cooking oats, brown sugar, cinnamon, and vanilla extract, ready in under 20 minutes!Stir just until combined, then mix in the oats.

Scoop dough onto baking sheet using medium cookie scoop. Bake until edges are just light golden brown, about 7 to 10 minutes. Allow oatmeal cookies to rest for about 2 minutes on baking sheet, then transfer to cooling rack. Mix in one egg, then blend in second egg and vanilla. Add flour mixture and mix just until combined then mix in oats, raisins and walnuts.

Scoop dough out and shape into 1 1/2-inch balls (or 40 grams each), transfer to prepared baking. Mix in the oats until just combined. Use your preferred size cookie scoop (or a regular spoon) to drop portions of dough onto baking sheets, spacing them a couple inches apart.

    1 1/4 cup (100g) Quick oats
    3/4 cup (90g) Flour
    1 1/2 teaspoon Baking powder
    1 teaspoon Cinnamon
    1/4 teaspoin Salt
    1 egg
    1/3 cup (106g) Maple syrup
    1/2 teaspoon Vanilla extract
    2 tablespoons Coconut oil
    1/2 cup (90g) Chocolate chips

    Applesauce oatmeal cookies:
    2 cups (160g) Quick oats
    2 tablespoons Dessicated coconut
    1 teaspoon Cinnamon
    1/4 cup (30g) dried Cranberries
    350 g (12.34 oz) unsweetened Applesauce

  • Vegetable oil? That’s unhealthy. Use coconut oil. Too much sugar….cut it a bit….raisins have a zillion toxic pesticides on them. Leave them out. Oats are the highest in weedkiller, so use organic only.

    I think the principles will make this recipe an excellent base for other cookies by adding other tidbit ingredients like toasted pecans. Dried bing cherries and dark chocolate chopped pieces. The list can be endless…

  • Made these and substituted the raisins for dried blueberries instead and used a mixture of rolled and steel-cut oats. The blueberries were sweet and juicy and the steel-cut oats made it toothier. Really enjoyed this one, but will make it with less amount of sugar next time for personal preference but otherwise, these are probably the best oatmeal cookies I’ve had! They’re still chewy days after! Got great feedback for this one.

  • This was my first time using rolled oats instead of quick oats. If you like a chewy oatmeal cookie, this recipe checks all the boxes. But as a matter of personal taste, I prefer a cookie more cake like, so I won’t be using this recipe again. I do like browning the butter though.

Really enjoyed this one, but will make it with less amount of sugar next time for personal preference but otherwise, these are probably the best oatmeal cookies I’ve had! They’re still chewy days after! Got great feedback for this one.

  • Ingredients:

    3 Cups Rolled Oats (NOT INSTANT)

    1 Cup AP Flour

    3/4 Teaspoon Salt

    1/2 Teaspoon Baking Soda

    4 Tablespoons Butter

    1/2 Cup Vegetable Oil

    1/4 Teaspoon Cinnamon

    3/4 Cup Brown Sugar

    1/2 Cup White Sugar

    1 Egg Plus One Yolk

    1 Teaspoon Vanilla

    1/2 Cup Raisins

    Instructions:

    1. Preheat oven to 375 degrees.

    2. Stir flour, baking soda and salt in medium bowl; set aside.

    3. Warm butter over medium heat until it just begins to brown then transfer to another mixing bowl. Add Oil, Brown and White Sugar and incorporate by hand.

    4. Add one egg, one additional yolk, and vanilla then incorporate.

    5. Add flour and mix by hand, should be a stiff dough.

    6. Then add oats and raisins. Portion into 3 tablespoon portions and flatten with wet hands until 2.5 inches in diameter.

    7. Bake at 375⁰ (F) for 10 minutes until edges have just begun to set. Let them cool on pan for 5 minutes before transferring to a wire rack to fully cool.

  • Very happy with this recipe! I now also add a smidgen of allspice (personal preference). Preparation wise, I also melt the butter in a large nonstick pot and add all the ingredients to the pot, using it as the mixing bowl. Saves a little on the washup and the nonsitck makes the mixing easier.

  • Instead of using flour, I put 2 cups of oatmeal in my food processor and made oat flour. Then measured that out as equal parts to the recipe. This worked really well.

    Can I check how to keep the cookies crunchy for days. Here is Singapore the weather is hot and humid. So within 2 days the crunchy of the cookies is gone.

  • Okay so I’ve made his chewy chocolate chip cookies, and OMFG sis let me tell you!
    You do NOT need to go to the gym to workout, try mixing by hand the cookie dough, tarts a real work out!
    Also, they came out delicious!

    You can even replace the 2 bananas with honey.

    Can I check how to keep the cookies crunchy for days. Here is Singapore the weather is hot and humid. So within 2 days the crunchy of the cookies is gone.

    1 cup all-purpose flour 120g

    1/2 tsp baking soda 3g

    1/2 tsp salt 5g

    1/2 cup unsalted butter room temperature, 113g

    1/3 cup granulated sugar 65g

    2/3 cup light-brown sugar 140g, packed

    2 tsp pure vanilla extract 10mL

    1 large egg

    1 1/2 cups rolled oats 135g

    1 cup semisweet chocolate chips 150g

  • I followed this recipe twice and idk if I creamed the butter too much in the KitchenAid mixer. It tastes great though! I just didn’t get to set them in balls because it was so sticky… But again, it still tasted sooo good! My husband loves it!

  • These would be bland because there’s no vanilla, no cinnamon, no allspice, no nutmeg even….
    You can even replace the 2 bananas with honey.

  • Did I do something wrong? These were awful! I even measured 80g of quick cook oats. I love banana and was so hoping to find a healthy, delicious cookie as I started my weight loss journey a month ago. Unfortunately, it did not taste good at all. I don’t want to waste more bananas trying (and failing).
