In this video, I make some delicious paleo breakfast bars that feature a fantastic combination of nuts, coconut, honey, and some dried fruit. These bars are perfect for keeping in a container for when you need a breakfast or snack on the go.. Full Recipe: https://cookingperfected.com/paleo-breakfast-bars/. If you’re currently on the paleo diet, then you will know how hard breakfast can be as all the typical grains and cereals are off-limits.. If you want the full list of ingredients for these breakfast bars, then you can find it right below.. 1 cup Almonds. 1 cup cashews. 1 cup hazelnuts. ¼ cup pumpkin seeds. 1 cup dates. 1 cup honey. ½ cup coconut oil. 1 cup shredded coconut. 1 tsp salt. 1 tsp cinnamon, ground. You can add more dried fruit to these, such as cranberries and much more. However, it’s important to remember more fruit will mean more sugar, and these are already packed full of it.. You can store these in either the fridge or cupboard. The bars will keep fine in either for about a month. If you live in a super warm area, then it might be best to keep them in the fridge as you don’t want them going soft or icky fast.. Since these have a fair bit of honey and fruit in them, you will find it is very easy to burn accidentally. Make sure your oven temperature is low and correct. If you do notice it starting to go a really dark brown, then it’s best to pull it out of the oven as soon as possible.. Cutting the bars with a hot knife will make your life a lot easier. This is because it’s able to cut through the honey without it sticking to the knife. Make sure the knife is dry when you cut it as you don’t want to introduce water to the bars.. These bars are slightly high in sugar, so you may want to restrict these to only breakfast or a snack.. Now I hope these delicious paleo-friendly breakfast bars come out as good as they did for me. Crust/Crumble. * 2 cups (240g) almond flour. * 1/4 cup (30g) coconut flour. * 2/3 cup (110g) coconut sugar. * 1/2 cup (40g) rolled oats (sliced almonds for paleo). * 1/2 tsp baking soda. * 1/2 tsp cinnamon. * 1/4 tsp ginger. * 1/4 tsp salt. * 1/2 cup (125g) nut/seed butter. * 1/2 cup (100g) coconut oil. * 1 tsp vanilla extract. * 1 tbsp lemon juice. Filling. * 4 cups fresh or frozen berries (I used a mix of strawberries and raspberries, but any works). * 3 tbsp coconut sugar. * 1 1/2 tbsp arrowroot (or cornstarch). * 1 tbsp lemon juice. Instructions. 1. Combine filling ingredients in a saucepan over medium heat and bring to a boil. Reduce to a simmer and stir/cook for 5-7 minutes until thickened. Transfer to a glass dish, and set aside to cool.. 2. Preheat the oven to 350ºF.. 3. Toss together the almond flour, coconut flour, coconut sugar, oats/almonds, baking soda, spices, and salt.. 4. In a separate bowl, combine the nut/seed butter, coconut oil, vanilla, and lemon juice. Melt and whisk together until smooth.. 5. Add to the dry ingredients and mix until even coated and crumbly.. 6. Press half into the bottom of a greased 8x8″ baking dish.. 7. Top with cooled berry mixture.. 8. Disperse the remaining on top, pressing in gently.. 9. Bake for 25-30 minutes at 350ºF until golden brown on top.. 10. They will be quite fragile and crumbly if you slice them warm, so chill first for really clean squares. If you want to eat them warm, it will be more of a messy (but delicious!) bowl/spoon situation.. Hi Natalie I made these this weekend and brought them to yoga studio I go to Raleigh Yoga Studio. I added a twist to it. I sprinkled toasted coconut flakes on top of the chocolate. They came out pretty good. I was afraid the wetness of the berries wouldn’t bind so I add a little coconut flour! Everyone loves them. Laura owner and yoga teacher always takes a picture of the goodies. I love the no bake recipes. Thanks so much. Keep them coming!

I’m currently watching my calorie intake (it’s working, I’m getting there), but it’s hard getting more muscle (I used to be the most obese kid yet was also the strongest since I ate a LOT of beef). What do you eat after your workout? Shakes? Nuts? Or just the regular protein shakes?

Anything with coconut is an automatic winner in my book I imagine other berries like blueberries or strawberries would be delicious too.
