This past weekend I decided I wanted to bring some protein bars to the Tough Mudder so I used her bars. Ingredients: 6 Scoops Vanilla Crème Proto Whey. 2 cups Instant Oats.

1 cup of grated carrots (I use the pulp left over from the juicer) 2 Tsp Cinnamon (for a little added spice add 1/3 tsp cloves. 2 tbsp raw almond butter. 1 tbsp flax seed. These healthy No Bake Carrot Cake Breakfast Bars are packed with protein and a well-rounded meal to kickstart your day!

Thick, chewy and with a fudgy texture, these breakfast bars are naturally gluten free, vegan, dairy free, refined sugar free. Paleo, grain free, dairy free. These Carrot Cake Bars are not baked! They can be ready in about 20 minutes, tops.

  • Although these look yummy, they contain too much oatmeal (too many carbs) for my body. Based on previous experience with similar ratios, these bars unfortunately would make me gain weight.

  • Just made these and they are amazing!!!!!! I used 8 packets of Stevia instead for my sweetener but I think I could have used about half of that because it was a little too sweet. I used Boku Protein powder as my protein powder.:)
