Ingredients: 1 pouch (2.6 oz.) StarKist Selects E.V.O.O.® Yellowfin Tuna with Sun-dried Tomato ½ cup cooked orzo 1 tsp. extra virgin olive oil 1 Tbsp. chopped green onion ¼ cup chopped artichoke hearts 2 Tbsp. chopped roasted red pepper ¼ cup crumbled feta cheese 8 – 10 small butter lettuce. Mediterranean Tuna Lettuce Wraps are a simple, healthy, no-cook dinner idea. Recipe features chickpeas, olives, feta cheese, tomatoes in a dijon lemon. Making Mediterranean chicken lettuce wraps might be a bit time consuming when it comes to prep but you should still be able to finish them within 30 minutes. Cut the chicken breast into 3 similar looking pieces.

  • Made these last night and the recipe was amazing. I swapped a few ingredients. Instead of soy sauce, I added coconut aminos, used grapeseed oil, sesame oil, Trader Joe’s sweet chili sauce, toasted sesame seeds, and a tbsp of almond butter. Used butter lettuce for the wrap. The flavors were phenomenal.

  • I’ve always been a huge fan of romaine lettuce.
    Considering the recent romaine scare, I found that actually washing it first decreases all chances of getting sick.

  • Can you do a series of meal preps for 5 small meals a day type diet for a week? Some in between can be a combination of healthy snacks..definately high protein throughout..thank you, you’re awesome!!! Great cook too…��

  • I do like the idea of this recipe. For those of us that use little or no oil. I would suggest browning the tofu in the oven. And water or broth fry the vegetables adding just a small amount of Sesame seed oil at the end for flavor:-)

  • All of these look delish and I would like to give them a try. Do they all taste good at room temperature? For example the taco filled one, will it taste good if it is not hot? Also, do you pack the fillings separately from the lettuce and then just assemble at lunch time? Thinking of packing these in my daughter’s school lunch box.

  • Looks delish man. I so a very similar thing but I roast crumbled tofu in the oven until its super crispy and chewy. It ends up coming out to be a perfect Larb substitute.

  • I always use whole wheat tortilla since it’s a lot healthier than white tortilla. However, it is a little harder to eat since it tastes like you’re eating cardboard.:( Lol. Does whole grain taste any better?:)
