Although I LOVE garlic and onion, I once made a “cheddar” log very similarly with potatoes and carrots (with agar for sturdiness for slicing) and the next day when I took it out of the fridge the garlic smell and taste was so overwhelming it tasted and smelled more like bologna than cheese.

  • Guys. lost tons of weight does not need to be hard (I used to think it did). I’m going to give you some advice right now. Look for a popular lose weight diet plan called Custokebon Secrets (just google it). Thanks to it I’ve lost crazy amounts of fat.   • Meat tastes good because of the fat. The more marbled a steak the better it tastes. Take all the saturated fat out of any meat and it tastes like cardboard. The ironic thing is the stuff that makes it taste so good kills you. I’ve been vegan a few months and I’m never going back. I hate to be preachy but it is 100% the right thing to do. It’s difficult to bring up the topic because most people are so brainwashed that everything you tell them about plant based diets makes them angry. What a shame.

  • I don’t think veganism is the exact answer, vegetarianism, sure is. (At leats in my opinion)
    Of course, depends on where you live. Where I live cheese and other dairy product is always produced locally and from strict regulated farms.

    Though I do not oppress those who are vegans, but I only mean that being only vegetarian seem better for you, and if careful choosing of brands, good for the animals too.

  • You are awesome Anya, and a source of inspiration to someone following the same path for about the same time period. I have also reversed many chronic illnesses, diabetes, IBS, RA, fibro, obesity, depression, high everything, and on and on! I was at the point where I just wanted to go to sleep and not wake up, was taking an obscene slew of medications and wasn’t even 60 yet. Forks Over Knives was my intro to the dietary truth that rescued me, and is not just hidden from us by the industries that profit from our illnesses, but we are intentionally deceived to sell their product$. So sad, but true.
    I wish I could find a REAL doctor like McDougall, Barnard, Greger, Esselstyn, and all the other amazing professionals who took it upon themselves to go beyond the complete lack of nutritional education in medical school and make the critical leap to true HEALTHCARE instead of disease maintenance.     Oh. my. Goodness. I just made your cheese sauce (the nut free version) without the white beans and made an addition of a tsp of ground mustard and I am in HEAVEN! This is the closest darn cheese sauce to the real deal Velveeta that I have had since going vegan! This is a complete game changer.
    I topped it on a 50/50 plate of instant pot potatoes with a side of steamed kale that I topped with an inspiration of your raspberry sauce (i subbed seedless blackberry jam because it’s what I had). You, my friend, are a saint. I cannot thank you enough for sharing your recipe and being such an inspiration to those of us starting their health journey.

  • If your body is acidic you eat more. Why? It’s simple we eat to gain nutrients. Some of them are alkalinic. So if you’re acidic your body uses these nutrients and you have to eat more to recover them. And taking in account that cooking already has an impact on alkalinity and that most of us eat without taking alkalinity into account we get fatter just because of this, even before we can think about cutting out the fats, eating more volume less calorie foods etc. etc.

  • They don’t list the Frankenstein chemicals needed to warp rice into cheese. She claims organic “cultures” but that’s the deceptive chemistry at best.
    Ask the FDA for confirmation and NEVER buy any product that isn’t government approved!
    These factories dump TITANIUM DIOXIDE and list it as canola and or various oils (also full of carcinogenic GMOs).
    You can’t turn plants into animals. Stay safe, eat your veggies (and maybe consider a balanced diet )!

  • I have been searching for a good cheese sauce recipe. The cashew based sauces are tasty, but with the fat I’m looking for other options. I am interested to try the oatmeal based sauce. I love using cauliflower to make alfredo sauce and last night I thought to try using cauliflower to make a cheese sauce. It turned out great. I want to compare to your oatmeal recipe.

I can’t deny that I was hopping to loose weight, but was not and is not the priority. It has been 3 month and I haven’t lost any weigh at all. I was just wondering why!?   • Vegan for 4 years on February 18th, 2020. I went plant based because I had a classmate in University have a bit of an upset over the mention of cheese. It seemed odd to me and I didn’t know what vegan was. I had heard the term and mention of peta. I didn’t know… I went to research it after school because I was clueless and stumbled onto content from Happy Healthy vegan and Bitesize vegan. I said I would try vegan for a month. Slowly I worked myself up to that over 5 months. Went vegan at month 6 starting on the 18th and have been trying it out ever since. I have made slip ups over the 4 years. Although, I keep going and learning every day. My biggest thing I need to figure out is my iron deficiency. I am sure with more time I will discover why I cannot absorb elemental iron. Who knows…

    I did half truffle salt and half regular salt. Did need a total of 8T nooch. No beans, no nuts (allergy). My kids went nuts and were flabbergasted when I told them they could have as much as they want, because it is plant based.

  • I made the fat free sauce and it was really good! I would use a little less salt. Not a fan of salt. Never have been. I used to ask my mother to leave out salt when she cooked.

  • I’ve been vegan for about 3 years, and am struggling so much with losing weight. I think I eat very healthy, I cook at home mostly, but I do go out to eat a few times a week, and my portions are definitely over the top. I workout at least 5 days a week, but I am still overweight, and at the same weight I was a few years back. I literally have been trying to lose weight since I was 14 years old ( I am 24 now). It is so so frustrating and upsetting, but I am going to try and listen to your advice, especially about being hyper hungry because all I think about is FOOD FOOD FOOD. Definitely subscribing!   • It’s about having balanced diet. You don’t have to go vegan to be healthy. Eating fast food refined oils, packaged foods not drinking enough water and stress, will cause all can of health problems. I am a big believer in eating raw fruits and vegetables, lugumes nuts and seeds. And at times good quality meat and free range chicken. Home cooked food is the way to go. And i learned some much from you thank you.

  • BTW about throwing out your wardrobe don’t. Keep it until you find a person with good sewing skills (professionals may cost you much) and get it resewn for your size. I’ve done it and my clothes gained a new life.

  • If your body is acidic you eat more. Why? It’s simple we eat to gain nutrients. Some of them are alkalinic. So if you’re acidic your body uses these nutrients and you have to eat more to recover them. And taking in account that cooking already has an impact on alkalinity and that most of us eat without taking alkalinity into account we get fatter just because of this, even before we can think about cutting out the fats, eating more volume less calorie foods etc. etc.

In your notes, the water is missing from the nacho cheese sauce recipe. At first I couldn’t figure out why my sauce was more like a paste!   • amazing to hear how you managed to lose weight and enjoy it. i am a vegetarian, but gained weight aswell, now slowly in transision, by cutting dairy first, it does not seem to be a problem, unfortunately the craving is not going away…..how do i stay away from crisps! its always in the house because of my kids….i need to remind myself and stay focussed and motivated every time by looking at vegan video,s…..does anybody have this problem too?

I use what I need then put the rest in the fridge for whatever like creamy soup or more milk… then I thought I’d bkending some for making a creamy sauce and I used a bit for small batch Cheese… totally worked. Needed lots of flavor to cover a slight bean taste. But we had it on nachos tonight and was delish.. I got all those ideas. From watching you here onYT.. thanks so much for being an inspiration to eat healthier..

  • In 2012, at age 47, after a life of being vegetarian, I also watched the documentary, “Forks Over Knives”. It was pivotal for me. I went plant based and never looked back:) The information was powerful. In 2015, I went gluten free, strictly to eliminate inflammation and improve the gut-brain connection. Unexpectedly, my asthma improved, I lost my carb addiction and I lost that last 9 pounds. Losing the carb addiction is so freeing!! Presently, I’m trying to up my alkalinity and pro-biotics, to once again support the gut-brain connection and lungs. I take omega-3’s, a multi, pro-biotic and a sub-lingual B12. This is a sustainable compassionate diet, which feels rewarding. So glad to find your FB page and Youtube channel. I need to cook more and you’re so clear and enthusiastic…I am definitely enthusiastic about food, too:)

  • I’ve been watching every cheese sauce video available out there but haven’t made one yet. I have all the ingredients for Jill’s sauce and will try that one but it seems a little more fussy if you don’t have a Vitamix (which I don’t) with having to heat on the stove and re-blend. I LOVE that you are using potatoes and the cooking water…it adds the necessary starch so you wouldn’t need to add corn starch. Definitely going to try your white sauce as well as the other cheese sauces you do using potatoes and carrots. Seems so much more simple. I love your channel, Kiki. Whenever I start feeling overwhelmed and feeling like this is soooooo hard, I come and watch one (or more) of your videos to remind me how easy this way of eating can really be. Thank you.

  • The version with cashews is absolutely the best. It’s really the most versatile sauce I’ve tried. Some sauces taste really great on Nachos but awful in casseroles, and vice versa. This sauce works with EVERYTHING. So delicious. And your right about mixing it with salsa yum! Thank you!

  • I have been searching for a good cheese sauce recipe. The cashew based sauces are tasty, but with the fat I’m looking for other options. I am interested to try the oatmeal based sauce. I love using cauliflower to make alfredo sauce and last night I thought to try using cauliflower to make a cheese sauce. It turned out great. I want to compare to your oatmeal recipe.

  • Odd question. I also have an aortic aneurysm as well. Did you reverse it or did it just stop growing? I’ve been vegan for almost a year and plant based for about 6 months. I know it sounds crazy but I keep hoping that it’s somehow reversible and I don’t have to have surgery within the next few years.

  • I love the tip you gave about finding a core group of recipes to cook in advance to fall back on in case there are those “I’m too tired to cook” days.

  • Actually I think that foods that make you fat are not healthy. A human being cannot consume the fat that stores on his body.. We are not bears to “eat” fron this fat during winter time.. So if a food makes you gain fat, it’s not considered to be healthy. Milk from nuts is ok.. �� ��

  • Stopped watching as soon as she started talking about the “alkaline body” BS. Comparing the human body to a swimming pool is apples to oranges, or even worse apples to your neighbor’s front porch. I am not a swimming pool lol. Yes, there are many reasons to go vegan, kids-but pseudoscience is NOT one of them.
    To say you need an alkaline diet would be to ignore your kidneys’ job of regulating your blood pH levels.
    The kidneys regulate your blood and body tissue to be more alkaline than acidic naturally, and cancer cells don’t care about what tissue they’re growing on.
    The real cancer fighting and health benefits of a vegan diet come from the lack of processed foods that cause problems with your body’s chemistry, including leptin resistance causing you to get fat by constantly refilling on refined carbs and sugars, never getting proper nutrition in the process.
    You get skinny and healthy on a vegan diet because you’re eating good quality whole and unprocessed foods (for the most part) that are far less calorically dense and far more nutrient dense. Truly, modern first-world humans have gotten to the point of having any plant or food within arm’s reach at any time, making a plant based diet finally a viable option. What’s more, being vegan forces you to pay attention to what you’re putting in your body at all times, so you’re far less likely to solve a quick problem like hunger with a quick solution like the McDonald’s Drive-thru.
    Be vegan for the animals
    Be vegan for the environment
    Be vegan for your health
    But please, don’t be vegan because it’s “alkaline”

I am 69 years old (June) and am going to start on this diet on 31st. I have to run to the store for several ingredients first and then want to batch cook several items.   • So there’s black mold “cheese”, clay looking “cheese”, literal grass “cheese?”. Do yourself a solid, lose the man-bun, or as everyone else sees it, the top of a trash bag. Eat actual cheese instead of this fake crap. Also very disappointed that there was no visual process on how it was made.

  • Meat and cheese, really do not have that much flavor, once you get used to healthier versions of food. It is SO TRUE, I TOTALLY AGREE AND HAVE SAID THAT TOO.

    Keep in mind people, that the longer one eats junk food. The longer it takes to adapt the appitite to change. It took me about 1.5 yrs before I really started to like the vegan mac n cheese ans so on. Now I love it! Over the years I have tried enough plant based recipes to have plenty to make and eat…that we all love. Then you see there is no need to eat the typical junk food life style.

  • In 2012, at age 47, after a life of being vegetarian, I also watched the documentary, “Forks Over Knives”. It was pivotal for me. I went plant based and never looked back:) The information was powerful. In 2015, I went gluten free, strictly to eliminate inflammation and improve the gut-brain connection. Unexpectedly, my asthma improved, I lost my carb addiction and I lost that last 9 pounds. Losing the carb addiction is so freeing!! Presently, I’m trying to up my alkalinity and pro-biotics, to once again support the gut-brain connection and lungs. I take omega-3’s, a multi, pro-biotic and a sub-lingual B12. This is a sustainable compassionate diet, which feels rewarding. So glad to find your FB page and Youtube channel. Many modern cheese are made using microbial or plant-based rennet without harming the animals. Unless you are 200% vegan.     Oh. my. Goodness. I just made your cheese sauce (the nut free version) without the white beans and made an addition of a tsp of ground mustard and I am in HEAVEN! This is the closest darn cheese sauce to the real deal Velveeta that I have had since going vegan! This is a complete game changer.
    I topped it on a 50/50 plate of instant pot potatoes with a side of steamed kale that I topped with an inspiration of your raspberry sauce (i subbed seedless blackberry jam because it’s what I had). You, my friend, are a saint. I cannot thank you enough for sharing your recipe and being such an inspiration to those of us starting their health journey.

  • I’m so glad she mentioned food with acidity. I have mitral valve prolapse and GERD. When I do eat things high in acidity, those two things become inflamed. So I have been eating healthier for the mitral valve and I haven’t had a panic attack in a while. With Gerd I’m paying attention to trigger food and trying to stay away from it. Researched things about it and it recommended a more plant based intake so becoming vegan/vegetarian diet is the best thing for me at this point. Kind of tired of being in pain and being overweight

  • I think vegan is an extreme diet and reaction to the standard diet of humans. Cutting out everything made from or by animals I think is a little extreme. Its about balance. You can have veggies while enjoying organic farm raised chicken. Vegan food is gross. Vegetarian food > Vegan food.

  • Honestly the sad part about this video is that they are just focusing on the food and taste aspect of the cheeses when they really should be focusing on the fact that mother cows are having their babies stolen from them and they’re being forced to produce milk for a species that is not their own. Plus these baby cows are being killed if they’re males to become veal or being raised to become dairy cows if they’re female to have the same thing happen to them that happened to their mother.

  • Miyoko’s butter is very good in a homemade freshly churned way. I don’t like the packaging it comes in a piece of paper. I would prefer a container that I can open and close.(Especially for the price). I don’t like the cream cheese though it has a sour/lemony taste that reminds me of spoiled milk.

  • Meat tastes good because of the fat. The more marbled a steak the better it tastes. Take all the saturated fat out of any meat and it tastes like cardboard. The ironic thing is the stuff that makes it taste so good kills you. I’ve been vegan a few months and I’m never going back. I hate to be preachy but it is 100% the right thing to do. It’s difficult to bring up the topic because most people are so brainwashed that everything you tell them about plant based diets makes them angry. What a shame.

  • Vegan for 4 years on February 18th, 2020. I went plant based because I had a classmate in University have a bit of an upset over the mention of cheese. It seemed odd to me and I didn’t know what vegan was. I had heard the term and mention of peta. I didn’t know… I went to research it after school because I was clueless and stumbled onto content from Happy Healthy vegan and Bitesize vegan. I said I would try vegan for a month. Slowly I worked myself up to that over 5 months. Went vegan at month 6 starting on the 18th and have been trying it out ever since. I have made slip ups over the 4 years. Although, I keep going and learning every day. My biggest thing I need to figure out is my iron deficiency. I am sure with more time I will discover why I cannot absorb elemental iron. Who knows…

  • I tried making the FF sauce for something different. I think I had a disaster Lol! I have never had such a mess cleaning my Vitamix afterwards under the blade (I left the sauce in to heat vs. doing the stove method). My red peppers had barely any liquid in the jar to start with, so I had to compensate with extra water. All of my initial measurements were per instructions & correct. I think if I make again, I would halve the recipe (a lot for 1 person), add less cornstarch, a wee more salt and I felt like it needed more flavor all around. I will say that I haven’t had cheese in approx. 1 month, so my expectations could have unconsciously been different. I did find out that I love the taste of redskins and broccoli all by their lonesome:) I do love exploring new recipes!

  • BTW about throwing out your wardrobe don’t. Keep it until you find a person with good sewing skills (professionals may cost you much) and get it resewn for your size. I’ve done it and my clothes gained a new life.

    Of course, depends on where you live. Where I live cheese and other dairy product is always produced locally and from strict regulated farms.

Comparing the human body to a swimming pool is apples to oranges, or even worse apples to your neighbor’s front porch. I am not a swimming pool lol. Yes, there are many reasons to go vegan, kids-but pseudoscience is NOT one of them.
    To say you need an alkaline diet would be to ignore your kidneys’ job of regulating your blood pH levels.
    The kidneys regulate your blood and body tissue to be more alkaline than acidic naturally, and cancer cells don’t care about what tissue they’re growing on.
    The real cancer fighting and health benefits of a vegan diet come from the lack of processed foods that cause problems with your body’s chemistry, including leptin resistance causing you to get fat by constantly refilling on refined carbs and sugars, never getting proper nutrition in the process.
    You get skinny and healthy on a vegan diet because you’re eating good quality whole and unprocessed foods (for the most part) that are far less calorically dense and far more nutrient dense. Truly, modern first-world humans have gotten to the point of having any plant or food within arm’s reach at any time, making a plant based diet finally a viable option. What’s more, being vegan forces you to pay attention to what you’re putting in your body at all times, so you’re far less likely to solve a quick problem like hunger with a quick solution like the McDonald’s Drive-thru.
    Be vegan for the animals
    Be vegan for the environment
    Be vegan for your health
    But please, don’t be vegan because it’s “alkaline”

  • You are awesome Anya, and a source of inspiration to someone following the same path for about the same time period. I have also reversed many chronic illnesses, diabetes, IBS, RA, fibro, obesity, depression, high everything, and on and on! I was at the point where I just wanted to go to sleep and not wake up, was taking an obscene slew of medications and wasn’t even 60 yet. Forks Over Knives was my intro to the dietary truth that rescued me, and is not just hidden from us by the industries that profit from our illnesses, but we are intentionally deceived to sell their product$. So sad, but true.
    I wish I could find a REAL doctor like McDougall, Barnard, Greger, Esselstyn, and all the other amazing professionals who took it upon themselves to go beyond the complete lack of nutritional education in medical school and make the critical leap to true HEALTHCARE instead of disease maintenance.   • I’ve been watching every cheese sauce video available out there but haven’t made one yet. I have all the ingredients for Jill’s sauce and will try that one but it seems a little more fussy if you don’t have a Vitamix (which I don’t) with having to heat on the stove and re-blend. I LOVE that you are using potatoes and the cooking water…it adds the necessary starch so you wouldn’t need to add corn starch. Definitely going to try your white sauce as well as the other cheese sauces you do using potatoes and carrots. Seems so much more simple. I love your channel, Kiki. Whenever I start feeling overwhelmed and feeling like this is soooooo hard, I come and watch one (or more) of your videos to remind me how easy this way of eating can really be. Thank you.

  • I think vegan is an extreme diet and reaction to the standard diet of humans. Cutting out everything made from or by animals I think is a little extreme. Its about balance. You can have veggies while enjoying organic farm raised chicken. Vegan food is gross. Vegetarian food > Vegan food.

  • I tried making the FF sauce for something different. I think I had a disaster Lol! I have never had such a mess cleaning my Vitamix afterwards under the blade (I left the sauce in to heat vs. doing the stove method). My red peppers had barely any liquid in the jar to start with, so I had to compensate with extra water. All of my initial measurements were per instructions & correct. I think if I make again, I would halve the recipe (a lot for 1 person), add less cornstarch, a wee more salt and I felt like it needed more flavor all around. I will say that I haven’t had cheese in approx. 1 month, so my expectations could have unconsciously been different. I did find out that I love the taste of redskins and broccoli all by their lonesome:) I do love exploring new recipes!

  • I get the cheeses at Trader Joe’s and Whole Foods in the SF bay area, not far from Fairfax. All I can say is that this is the REAL DEAL, as enjoyable as dairy cheese, that cashew is so good. The lox cream cheese is off the charts delicious with Pita chips. I tried the truffle cheese round with some white corn chips for delivery, and it’s gone (at one sitting).

  • The dairy industry and poultry/meat industry really trying hard to fight back against the new plant-based products. Can’t believe California makes Miyoko not label her cheese, cheese. Missouri also made the plant-based meats not be able to label their meats, meats. Think even heard some where that the dairy industry trying do the same for plant-based milks. I’m not vegan because I hated meat or dairy in fact it started because dairy and meat would trigger me to have huge migraine also there are so many amazing plant based foods why kill a animal when not needed.
