  • I make huge batches of those baked eggs but w/ carton eggwhites & just freeze half of ’em. They can be finicky but best if they don’t brown much on the bottoms, or have too much veggies in them, otherwise they’ll get a bit watery. Like you said tho, great to have on hand when you’re in a rush, but its not the same as a regular omelette or scrambled eggs.

  • why take in to consideration that you need to use medium firm tofu if your just going to press it anyway? couldn’t you use firm and not press it for the same consistency since the only difference between the two is the amount of water they contain?
