  • I make huge batches of those baked eggs but w/ carton eggwhites & just freeze half of ’em. They can be finicky but best if they don’t brown much on the bottoms, or have too much veggies in them, otherwise they’ll get a bit watery. Like you said tho, great to have on hand when you’re in a rush, but its not the same as a regular omelette or scrambled eggs.

    It was interesting to watch you use the avocado even though it had a tiny brown part in the center because it reminded me of my dad who does not like his avocados to have ANY brown on them. He’ll literally throw it away and not eat it. Lol. It’s just a bruise, and a perfectly good avocado. Lol.

  • for the egg bakes, shredded zucchini and carrots OR some frozen or chopped fresh spinach both work wonders:)

    they also get quite moist if you keep them in the fridge or freeze as the veggies release some more moisture. this is easily remedied if you pop them in the oven for a while instead of the microwave before eating, unless you’re ok with a bit of a moist bite. honestly on quick mornings i eat them cold so it’s really not that bad. great recipes!!
