  • You are missing one important detail raw potatoes are all resistant starch. That’s about 80% resistant starch (not 2-3%). If they are dried down with harsh conditions, a lot of the resistant starch can be lost or destroyed, but it is possible to dry them down carefully and preserve 70% of the resistant starch (MSPrebiotic sells this). Bob’s Red Mill potato starch is dried more harshly and does not specify or report the resistant starch content of their ingredient. When I have tested it, it is usually between 50-60% resistant starch. If you were to cook either of these, the resistant starch content would fall to about 3-5% Cooling them increases it modestly to about 5-6%. See http://dx.doi.org/10.1016/j.foodchem.2016.03.120.

    I agree with you completely that it is not worth eating cooked and cooled starchy foods to get the modest amount of resistant starch. But, I completely disagree with you about raw potato starch, which is an excellent supplement and a great way to add resistant starch into the diet without adding lots of high glycemic carbs. But, you can get the maximum benefits if you choose the highest quality supplement that guarantees the most resistant starch.

    Also, calorie reduction is the least of resistant starch’s benefits. When resistant starch is consumed by the probiotic bacteria in the gut, they produce short-chain fatty acids (SCFAs) and other metabolites. One of the SCFAs, butyrate, actively feeds the colon cells (one of the few cells in the body that does not get its food from the blood). This process is called fermentation. If colon cells do not get butyrate, they shrink and get diseased, creating a leaky gut. If you feed them resistant starch in the presence of probiotic bacteria, they get fat and happy again, healing a leaky gut. Also, this fermentation changes the expression of >200 genes in the large intestine, which control insulin sensitivity, satiety, lipid oxidation, gut motility and many other aspects of metabolism. The calorie control is not even worth mentioning in the face of all of these fermentation-related benefits of resistant starch.   • I just need to point out that I have done a blood sugar test eating both fresh cooked and cooled down potatoes. The cooled down potatoes reduced blood sugar rise by such a great deal that it is definitely worth eating cooled down potatoes over fresh.

    THis thing with the resistant starch bothered me because here in Vienna it’s already winter and eating cold plain potatoes is just not gonna work for me.

  • It would have been healthier and better if you used coconut oil + rock/pink salt for seasoning and steam cooked it in boiling water instead of pressure cooker.

  • For the mashed potato version, rather than peeling, dicing and boiling just bake the potato(es) for 45 minutes or so, scoop out of the skin, add some water or a little milk and mash. You’re welcome.

  • Calories basically don’t matter or in other words thermodynamics. Resistant starch (a starch that needs to be processed by the microbiome not our enzymes hense resistant to our “direct” digestive measures) is good for “feeding” the microbiome or your good bacteria.

    I mentioned thermodynamics because the two big diet paradigms which are going to be low fat high starch and ketogenics which is high-fat moderate protein low carbs will cause the body to need more or less calories. Fats (good saturated and omega 3 fats) tend to be a more efficient burn in the mitochondria in all of our cells and so you actually need less calories when you are eating a fat based diet.

    You can’t stay that way however forever because carb cycling does help to shuttle more nutrition into the cells when it creates a higher insulin response.

    So in my opinion and it’s very well substantiated it is good to come out of a ketogenic state and cycle the carbs and it would be good to have resistant starches to feed are gut microbiome Flora at the same feeding.

    I’m interested to know a little bit more about this potato diet but if it doesn’t contain enough fats you might have some have a hard time getting fat soluble vitamins and minerals.

However, we have a very high training volume right now and I’m not sure how that would effect my preformance as a rower. I know the calories are crucial for recovery. How did you manage your weight as a college rower?

  • I wanted to put out there something that might affect others as it does me. I tried this potato diet several times and failed each time. The reason is because I got really bad bloating and diarrhea. Sorry if that’s TMI. I also had blood sugar issues with WHITE potatoes. I’d eat a plate then 20 minutes later I’d feel nauseous, typical symptoms of reactive hypoglycemia. What I already knew is that I have hypoglycemia and IBS. And I figured out that I can’t eat white potatoes, especially after they have cooled down. But I was also dealing with food addiction and wanted to do the potato diet for the same reason Andrew did. So after some research I figured out that whole grains are very similar nutritionally to white potatoes. But WHOLE grains don’t set off my IBS or hypoglycemia (where processed grains do). So what I did was replace the white potatoes with whole grains (oatmeal, brown rice, cooked wheat berries, but NOT anything made from store bought flour, not even “whole grain flour” or “whole wheat flour”. I buy 25lb tubs of wheat berries and grind to flour myself if I want bread) and I eat lots of sweet potatoes. I find this is working great for me! It’s simple. Satisfying and it doesn’t cause any issues. So anybody else who has issues with white potatoes but still wants to do the spudfit challenge may want to give that a shot.

  • tim steel in the potato hack says there is 22 gm in an average medium sized potato when the potato is raw….down to.75 gm when it is cooked then back to 2-3 gms after it is cooled…i love a tbsp of bobs red mill potato starch (8gm per tbsp)…and yes it does help with weight loss. I have your book Spud fit challenge and tim steele potato hack…the two books together helped a lot…as well as potato reset by janine….tim steel wrote the forward to your book…did you read his book?..what do you think about the different information…just curious….looking forward to your next book in print…on amazon canada

  • When you say: potato contains 2-3% resistant starch… are you talking about Raw potato or Cooked potato?
    I beleive it`s a huge difference…

  • Crock pot… 1 cup of water… High temperature… 6 hours… Mash it all up… Tastes like candy… No need to prick the potatoes or peel skin, just rinse them with water prior to putting in the crock pot.

  • Honestly when it comes to resistant starch and potatoes it’s not worth all the fucking around (sooooo much fucking around). I prefer to use Green Banana Flour or raw oats (raw oats are super excellent sources of RS) in my smoothies. Cooling your potatoes… bugger that. P.S god I love potatoes.

  • For the mashed potato version, rather than peeling, dicing and boiling just bake the potato(es) for 45 minutes or so, scoop out of the skin, add some water or a little milk and mash. You’re welcome.

  • Please be aware that if you do the first recipe garlic and herb and you use pink salt it will be too SALTY. Im so upset �� with this one and thank goodness that I only put one tsp but still too salty. And also you have too many spices in your list for only one sweet potato at a time. Salt should be removed from your recipe and let it be an option of taste. Now im doing the other one hopefully it’s not salty��

  • Next time I think you should place the camera on top of the refrigerator and prepare the meal from there:) At least your face will definitely fit in the frame. I felt so terrible that you had to almost do the splits!

  • To make some more money off of your You Tube videos you should sponsor your “bear claws” for example and many other things. As long as you keep your videos fun a enjoyable like they are now, you could possible make some good profit. Just a thought.

  • Olive oil is not the best option for cooking, instead use coconut oil, avocado oil, grapeseed oil. Olive oil is meant to be used mostly in salads but not where the temperature will be high

  • Watching this I’m trying to see if eating rice that has been cooked then cooled then reheated actually helps digestion because when I eat rice normally fresh cooked it seems to cause constipation..

  • The Video has a little bit of false information. A raw Potato has around 75% of RS2 (a group of restistant starch), a hot cooked one has only about 5% left. The cooked and then cooled one has about 10% again. This is from a german study (i am german) and the data is out of a book. So i can’t put the quote/link/source in here.

    But if you do not eat the potatos raw.. i guess it is the same conclusion.

    I am interested in the possible effects of “potato starch powder”, it is a bit like raw resistant starch. But again there are’nt that many studys.

  • Hi. I’m curious to try this only potato diet but not sure if it matters what kind of potato I eat yellow, Idaho, russet, etc. or does it not matter? So are the only rules not to use butter and oil and no salt and only bake and boil and not use microwave? Thanks!

  • It’s said the Irish ate their potatoes with the “bone in” to keep them fuller longer. My experience is cold potatoes seem more filling and keep me fuller longer. Cold potatoes also increase my gas:).

    while eating only potatoes there is almost 0% fat intake (0.1 g per 100 g = 1 g per kg).

  • Crock pot… 1 cup of water… High temperature… 6 hours… Mash it all up… Tastes like candy… No need to prick the potatoes or peel skin, just rinse them with water prior to putting in the crock pot.

  • By the way just because it says organic it doesn’t mean that it is. I’ve never heard of artificial sweeteners been organic, if you want organic the only things I can think of is cane sugar. Thats about as organic as you can get

  • Game changer! Ive lost 22 kilos eating potatos (cold because of the resistant starch thing) and ive wondered about eating them hot but was afraid of messing up my progress.   • Well, most people doing this diet just cook all their potatoes once a week instead of a couple potatoes every day so kind of a moot point, but good info as well.

  • Great presentation. Obviously clowns out there exaggerated this aspect. One thing about cooking it is it can make the texture better at times. Also always good to have the spuds and yams prepared in advance and then can just do air fryer to heat them up. But yes great point!
