1 Whole Avocado (pitted and sliced) Dressing Ingredients. 4T – Olive Oil; 4T – Rice Wine Vinegar; 1-2 T – Cumin; 1/4 – 1/2 t – Cayenne Pepper; 1/4 – 1/2 t – Black Pepper; 1/4 t – Sea Salt (or more to taste!) Juice of 2-3 Limes. Directions. Whisk dressing ingredients together to combine. Pour over remaining ingredients, stir gently.
Squeeze the juice of half a lemon and also add the oil. Stir so that all ingredients are well blended and set aside. Next, cut the avocado in half lengthwise, remove the pit, sprinkle with a few drops of lemon juice to prevent browning, and slice.
Arrange the avocado on a serving dish or platter. Mix black beans, corn, tomatoes, red bell pepper, jalapeno pepper, cilantro, red onion, lime juice, vinegar, salt, and black pepper in a bowl; fold avocado. This simple homemade salsa requires just six basic ingredients: Diced ripe avocado; Quartered cherry tomatoes; Chopped red onion; Chopped cilantro; Minced jalapeño; Fresh lime juice; It’s more filling than your average salsa, thanks to the rich and creamy avocado. Plusit’s very convenient because the lime keeps the avocado from oxidizing. Crunchy onions, delicious creamy avocado, fresh and aromatic CILANTRO, juicy and sweet tomatoes plus the roasted flavor in the corn omg Simple and delicious. I ‘grill’ the corn cob on the stove. I wrap it in foil and put it on my griddle. Medium heat and it’s well cooked after few minutes still with the roasty flavor.

I saw the recipe on Facebook I think. I made it and omg I fell I love with the fresh flavors! My favorite salad to take to work. Plusit’s very convenient because the lime keeps the avocado from oxidizing. Crunchy onions, delicious creamy avocado, fresh and aromatic CILANTRO, juicy and sweet tomatoes plus the roasted flavor in the corn omg Simple and delicious. I ‘grill’ the corn cob on the stove. I wrap it in foil and put it on my griddle. Medium heat and it’s well cooked after few minutes still with the roasty flavor.
I am actually using this recipe for shrimp tacos! I omit the cucumber, fry a corn tortilla shell and shape like a taco. Then I add the mixture! Its sooooo good! April

First I was not sure about garlic but glad I listened and flowed you and trust me adding garlic enhanced the taste of this salad. I have tried some of your other salads too. Thank you so much for teaching me how to make and enjoy my veggies and salads.
Ever since my wife followed this recipe a couple weeks ago, I’m addicted and I’ve been pestering her to make salad. I’ve been eating this recipe (minus corn, add chicken breast + chick peas) for 2 weeks without fail lol feeling so healthy! Thank you! =)

So far two of the Mexican dishes I’ve seen her do, she doesn’t call them what they really are. That’s the problem. Give credit to the the culture. Say this is my take on “Mexican ceviche” instead of renaming it like it’s your own idea.
I find it amusing that people are like “ew! milk in the avocado sauce” and then they would probably serve this with sour cream or crema on whatever they were eating, mixing the milk product anyway.

Made this tonight. Very easy, quick and flavorful. The chicken was perfect and not dry. Next time I make this it will be halved for single serving. I’m watching my calories so I will use only one chicken flat and 1 T olive oil. I make this all the time. It’s a hit. However, instead of Toastido chips. I now use Doritos. It gives it a different flavor.

Im wondering if the shrimp wont continue “cooking” (ceviche-style) while they are marinating in the lime juice and then end up pretty dry and chewy..

Its call ceviche not salsa WE ALWAYS PUT AVOCADO… TOO SOO IDK ABOUT THIS.. And salsa TO US is usually Like liquid salsa not Ceviche.

You can also add a little oil it emulsifies and it gets creamy like when making mayo.
