The TRUTH About Saturated Fat & Cholesterol (AND What’s the Deal with Coconut Oil??)

If you follow health trends, the debate about coconut oil might be giving you whiplash — and you’re not alone. For years, the oil was villainized, similar to butter, for its high saturated fat content. “First, there is not a single study showing that coconut oil causes heart disease.

Not one. Second, the whole case against coconut oil is founded on a hypothesis that has been proven wrong”. Mark Hyman, M.D. I greatly appreciate this difference of opinion, and of course, I have my own. What do you think?In 2017, the American Heart Association (AHA) released a report aiming to shed light on the long-running debate over the healthiest fats.

The advisory paper recommended against ingesting coconut. From there all proverbial hell broke loose, with half of the world’s experts jumping to the defense of coconut oil, while the others applauded the findings, agreeing that coconut oil is the devil. The whole saga has even been dubbed ‘ Coconut Gate ‘. There also has been a long-standing debate on how the use of coconut oil—a lipid-rich oil—for cooking in Kerala could be the cause of the high heart disease burden in the state.

Back in 2016, The New York Times asked people whether coconut oil is healthy and 72% said yes, but medical experts say there’s largely no good scientific data that backs up health claims. JAKARTA — A new study on certified oil palm plantations and their links to past deforestation has sparked a debate over whether they can be considered sustainable if. Any fat, whether coconut oil, pure MCT oil, or bacon creates inflammation in our bodies and slows the blood flow in our arteries.

MCT Oil: Good or Bad? This is one of those cases where you have to be the judge and weigh the pros and cons against your. While many of the purported benefits of coconut oil have not been rigorously studied, some people report improvements in weight, diabetes, chronic fatigue, Crohns disease, irritable bowel syndrome, thyroid conditions and skin health.

As research evolves, these claims may be substantiated or proven incorrect. Because there’s a risk – coconut oil is extremely fatty. The World Health Organisation and the NHS, amongst others, advise against consuming high amounts of coconut oil, due to its high levels of saturated fat which could, in turn, lead to high cholesterol levels.

  • I found I had high cholesterol almost 2 years ago. I did not want to take the pills they were pushing and had bad reactions, that may or may not have been psychosomatic. I asked the cardiologist to try a diet change. She was reluctant but agreed. I have been I dieter most of my adult life (to my detriment, I know now) so I knew I could handle rules. Seven months later my numbers were within or at normal limits. The doctor said she’d never seen such a drastic change from diet alone. I’m maintaining my healthy eating, most of which you listed and have maintained those numbers. Food is medicine. I have not been able to lose weight since menopause despite the help of doctors and dieticians. I believe you are correct in saying we all have a number our body feels best. I’ve been much thinner but also been much heavier. As long as my bloodwork is normal I assume so am I.

  • Weird I live off carbs including rice, potatoes, and corn and beans and my A1C is 4.7 when I at 52 years old. I should add that half my family are diabetics. I’ve got Type-1 and type-2 diabetes in my family. My A1C was 5.0, it dropped down to 4.7 when I quit eating oil. So it isn’t the carbs, it’s the fat. BTW, I’m Whole Foods plant-based vegan.

  • When will someone deal with the molecular change that happens to fats when heat is applied. Any fat becomes less appropriate for our body when heated and different oils have different heat tolerances. See the book FATS THAT HEAL FATS THAT KILL. by Udo Erasmus who happens to be a scientist. He explains how the shape of the fats change when exposed to heat and how they become less good for our bodies. Some oils according to him should never be heated above our lowest stovetop setting. Coconut oil is among these particularly heat sensitive oils.

I haven’t heard Dr. Kahn before. I am trying the Mediterranean diet, but don’t want to eat meat though I will eat oily fish. So pleased that it does not seem to be a problem for me to get health benefits from a Mediterranean based diet without eating meat.   • I notice when many people are having positive results from supplements that are easy and cheap to obtain, suddenly a famous company wants to scare us away from use. Yes they said the opposite before! That coconut oil has benefits. Most companies want us to purchase processed goods and chemical pharmaceuticals.

It’s so easy to say, Oh, I get it, but if you do nothing, you really don’t get it. The rampant overuse of antibiotics given to animals is causing global antibiotic resistance, the immense amount of clean water that is wasted on livestock, the environmental pollution and degradation from animal agriculture is catastrophic; most of the grain crops that could feed us all with abundance are being fed to cattle. The immense suffering of pigs, cows (especially dairy cows), sheep, calves (just babies), chickens (they kill male chicks in grinders while still alive). It’s mind-boggling and painful to think about it. So do people really get it? I don’t think so.

  • Quick google seems to find yhis claim false. “Medium chain triglycerides (MCTs) are partially man-made fats. The name refers to the way the carbon atoms are arranged in their chemical structure. MCTs are generally made by processing coconut and palm kernel oils in the laboratory. Usual dietary fats, by comparison, are long-chain triglycerides. People use MCTs as medicine.”

  • Thank you so much! I know that took a lot of work to cite all of these things, but it is so nice to see the citations as you talk us through the controversy. And then you wrap it up in a nice summary at the end so we know what to do with it. My cholesterol came back a little high earlier this year (straight out of quarantining go figure), and I have been trying to find info on how to manage it with diet and exercise. I came to a lot of these same conclusions, but this is the first time I have found such a clear, comprehensive, and evidence-backed source. You’re awesome!

  • The problem with studies advertising the reduction of saturated (animal) fat, is that it is almost always grain-fed and non-pastured (sickly) meat studies accompanied by the reduction of refined carbohydrates. In other words, reducing saturated fats from animals in a typical American diet means eliminating both the bun and the sickly-beef of a hamburger. So was it the reduction of saturated fat or the reduction in the refined carbohydrate (burger bun) and omega-imbalanced meat that produced the 29% reduction in CHD? Me personally, I don’t touch refined carbs and I eat far too much high quality, grass-fed or pasture-raised meat. Even so, my hsCRP score is “0.3”. Thus the inflammatory capacity of high-quality meat (TMAO / AGEs) is too small to warrant concern. Since it is now understood that chronic inflammation/immune response is what causes cholesterol plaque, I’m self-evidently not going to have CHD (for good measure, I’m 49 and my blood pressure is 110/70). Finally, vegans and paleo’s agree on practically nothing…except for the avoidance of processed foods and vegetable oils. Both groups seem to derive their CHD benefit from that one commonality. And yet that combined message has now been met in a timely fashion from the AHA promoting vegetable oils for CHD. Something smells very fishy here.

I have an allergy to bakers/brewers yeast and I could barely find any information about it online.   • that’s awesome. said some things that rang true for me. years ago, I was exercising plenty, but I love to eat! I was not good at portion control. personally, I had to start intermittent fasting. I’ve lost ten lbs in the first few weeks, but have hit a plateau. What I am doing now is going more paleo, modified paleo. I also need to have more discipline in staying the course on exercising, which I love to do, but work often gets in the way. I came across a fitness /diet routine that is one of the most popular in the country, at the moment

    , looks pretty good. Really it’s not rocket science, although we in the west make it hard. Eat whole foods in moderation, get enough rest, reduce stress, and exercise, not insanely, but regularly. Aerobics and some form of weight-bearing exercise seem to be the best combination.

  • Hi. I am a nutrition student. And yes indeed coconut oil contains saturated fat, but the type of saturated fat it contains are medium chain fatty acids, which are different than the ones found in animal products, which are long chain. This means they have two different metabolic pathways, and it has been found that while long chain fatty acids are stored in the body in the form of adipocytes, medium and short chain are used as inmediate energy such as glucose in the body, thats why in the sports world, athletes are given this kind of fatty acids for inmediate energy.So coconut oil is not bad, but that doesnt mean you should eat it by tablespoons. Like everything else, moderation is the key. Coconut oil is not hell but neither the opposite. Hope this helps ❤

  • Sounds like we need to stop eating any processed foods and eat naturally occurring foods instead. And one can reverse the damage caused from processed, additive foods. Why even have these talks?

  • The way to know if something should be eated or exposed to, is to wait till the health czars have demonised it; Sunshine, red meat, eggs, sea salt and saturated fat.

  • So, Abbey can make a good unbiased video when the theme doesn’t touch any sort of tracking, restriction, weighing and weight loss. However, I don’t agree that whole fat dairy can boost satiety, cause for the same amount of calories low fat yougurt and cottage cheese give me much more satiety than whole fat versions. Also since they contain less saturated fat, I can add more unsaturated fats in there (grounded flax seeds, for example). And in studies fats also have shown the worst satiety profile (in comparison with protein and carbs), while containing the biggest amount of calories.

    Many people aren’t aware of the fact that there is quite a difference between a cold-pressed / centrifuged virgin oil that provides a lot of important health benefits and a poor quality refined oil processed with chemicals and artificial flavoring. (That’s not to say that all refined coconut oil is bad a good quality organic oil from a trusted brand that’s been expeller-pressed is perfectly fine to use.)

  • Total Cholesterol is being found out to not be a real issue anymore. This is why Keto style, low carb, high fat ways of eating are doing so much good for people. Eating a ton of saturated fats while still eating 300 g of carbs a day will be an issue because you’ll be storing alot of the fat. The idea of cholesterol being a marker for all these health issues is being debunked by more and more studies as low carb, high fat diets become more popular.

  • I cant believe the t shirt guy. Even the AHA says saturated fat is ok now. Canola is almost poison. On the other hand if you are gonna eat breads and grains you shoudnt eat any fat with it. Try it. Pretty bland. I have been managing my T2D for 22 years with keto diets, now with intermittant and extended fasting. Age 62 cac score 73 A1C 5.2. Cac was probly zero 5 years ago.

  • carb intolerance (type 2 diabetes) isn’t caused by carbs, but by fat stuck inside muscle cells that blocks insulin activity and keeps glucose out of the muscle cells and stays in the blood. This is relatively new info, but to truly reverse type 2, just reduce the fat and suddenly insulin starts working again. Lowering carbs and replacing with fats will make carb intolerance worse, not better!

  • FYI. Saturated fat does not cause heart disease. In fact it is heart protective. It is too much of the man made fats like vegetable oils, Crisco, cotton seed oil, Soy bean oil, hydrogenated oils, etc. in our diets that cause heart disease. These oils are pretty much in everything and are cheap. I would worry about over consuming those oils rather than worry about coconut oil. Dr. Oz, Heart Foundations, and most people in the mainstream won’t tell the truth because they are protecting the food industry or getting money off them, so they are afraid of losing their sponsors.

  • I believe there’s a fine middle. Meaning combining Keto with Plant Based (not Veganism). Veganism came about for the animals and thus environment.   • I had a fitness trainer make a meal plan has 15 grams of coconut oil or one tablespoon which is far less then the last that said eats 6 tablespoons, that’s a lot of calories and my diet incorporates fiber, I no longer have the chronic stomach issues

  • If you were gonna talk about the role of saturated fat in cholesterol levels, why didnt you talk about what happen when you go to the opposite extreme by not consuming any saturated fat (like many vegans) and adding to much unsatarated fats, fiber and complex carbs: hipocholesterolemia, which is as bad a hipercholesterolemia, specially since many of your subscribers are vegan/vegetarian/plant based and feel so proud of having really low cholesterol levels in their blood, which is super unhealthy (cholesterol levels must not be neither high nor low).
    Make a whole video on this topic “hipocholesterolemia” (low cholesterol levels in blood by a lack of saturated fats, specially in vegans) in order to give complete information about saturated fat and its importance.

  • Not all saturated fats are equal. Short to medium chain saturated fats (4-12 carbons) are healthier than longer chain ones. Butyric acid (4 carbon), caprylic acid (10 carbon), lauric acid (12 carbon) are OK.

    But, Myristic acid (14 carbon), Palmitic acid (16 carbon) are detrimental for heart health and have a negative impact on lipid profile.

    All in all, the saturated fat in coconut oil is made up of seven different types of fatty acids, including caproic, caprylic, capric, lauric, myristic, palmitic, and stearic acid. Of the seven types of acid, lauric acid is the most predominant. Coconut oil contains about 6 g of lauric acid, a type of medium-chain fatty acid. Eating foods high in medium-chain fats can cause an increase in low-density lipoprotein, or LDL, cholesterol levels.

    Observational evidence suggests that consumption of coconut flesh or squeezed coconut in the context of traditional dietary patterns does not lead to adverse cardiovascular outcomes. However, due to large differences in dietary and lifestyle patterns, these findings cannot be applied to a typical Western diet. Overall, the weight of the evidence from intervention studies to date suggests that replacing coconut oil with cisunsaturated fats would alter blood lipid profiles in a manner consistent with a reduction in risk factors for cardiovascular disease.

    I got Gallstones and have 2 friends had gallstones over a long period of time, they took 1 tbsp virgin coconut oil mixed with 8 oz fresh Apple juice every morning before any food, their stones gone after 2 months, I started May 25th 2020 hopefully mine are gone too in a month or two, I’ll demand another ultrasound test next month to find out. if it works I’ll start my own channel to let the whole world know. so far I’m good, light urine, brown stool, constipation gone, bloated stomach gone, no attack since May 25th, every now and then I feel movement in my gallbladder like something move in slow motion but no pain, hope it was contraction from gallbladder pushing the stones out. PS* I also drink 4 oz of celery juice before the main remedy. Saturated fat in coconut oil doesn’t require bile to break down, it’s good saturated fat not the bad one and it’s okay to drink them daily, remember one thing, our body required and good and bad saturated fat to balance.

    7/1/2020 update; for the last 2 weeks I poop right the juice, nice and solid Bristol stool number 3 and 4. 30 mins later after break I have to run to toilet to blow another 1 to 2 lbs of loose stool, looks like bunches stone there. Bristol stool chart number 4 and 5, I’m gonna get an ultrasound soon.

  • Could you do a video talking about B12 absorption when consuming nutritional yeast? I know fortified nutritional yeast contains a large amount of the RDA. So would eating a serving of nutritional yeast every day mean that you wouldn’t need a B 12 supplement?

  • Something to note:
    The reason why replacing saturated fat intake with carbs doesn’t have much of an effect is likely because sugars like glucose and fructose are pretty lipogenic, meaning they can be converted to fatty acids through a process called de novo lipogenesis (DNL) and the direct product of DNL is palmitate, which is a saturated fatty acid.

    What this means is that the presence of saturated fat in the body has usually been found to be pretty bad, especially for diabetes and non-alcoholic fatty liver disease and metabolic syndrome (which are risk factors for CVD) but you don’t need to EAT saturated fat for your body to store lots of saturated fat in your body. Your liver is really good at converting macronutrients into different forms.

  • The numbers Joel Kahn quoted regarding litres of water per pound of meat and cheese is so dated and inaccurate that the makers of the film cowspiracy have even rescinded those claims yet vegans especially still want to quote it as fact. Yes there is a lot of water per pound of meat BUT most of it is rain water. THIS CAN NOT BE TAKEN INTO ACCOUNT BECAUSE IT IS RAIN WATER. Rain is going to fall in that field regardless of cow being in it or not. Unfortunately the studies comparing water for meat and water for crops have been proven to include rain water for meat but NOT for crops.

  • Bear in mind as Dr Fred Kummerow studies showed oxidised cholesterol is implicated in coronary disease. Given butter increases cholesterol, worsens TC/HDL ratio and also increases triglycerides you cannot consider it a health food. It also contains no essential fatty acids.

  • Modern societies seem to normalize what I call frankenfooding. Coconut oil is a medium triglyceride saturated fat. It is fine if you eat it with the fruit as nature intended. But separating this element and gorging on it, putting it in everything to cook your meals with??? I don’t think so. It is not as bad as lard, but you are still not eating the oil the way nature intended. It is no different than separating fruit juice from fruit and removing all the fiber.. This is bad also. I wonder what your take is on “protecting” kids from not so healthy influence of some food and snack commercials and overall marketing traps. Do you have a general plan about raising your children in the world of cupcakes, fruitloops, cocopuffs and Twinkies? How to navigate shopping, cartoon time etc. and not succumb to demands for super sweet, over processed snacks advertised and marketed to kids while letting them chose what they want?   • I have mixed emotions on this topic. As someone following a keto diet for six years now, I fully agree that coconut and MCT oils are not harmful and are in fact quite beneficial. On the other hand, with so many uninformed dieters simply scanning headlines or doing inadequate Google searches, I also believe that adding coconut oil or keto fatty coffee along with your current high carb Standard American Diet is indeed quite dangerous and stupid.

  • Nice video I have back and forth gone with coconut oil listening to the ups and downs about it Alzheimer’s does run in my family too but most cases starts in the 90s I am now 60 I am on a regiment of probably on one and a half tablespoons of coconut oil a day and I mix it in my food and I use it for cooking and remember one thing about Harvard the big pharma’s give millions of dollars to that school Harvard professors along with many others especially in the political field where in now aren’t to be trusted anything that is good for you they will say is bad for you mark my words

  • But the Educated ones are super smart people and they KNOW what is best for us, they really and truly only have our best interest at heart and want to ensure our survival….don’t they? Besides our Government would never ever lie to us,they are honest people of high integrity that would not put dollars before our health,would they?

  • I used to eat a lot of 100% oat bread. I also have inherited low cholestorol levels. I had 3.1 general choleatorol level (usually only for vegetarians with great genetics). I had hdl 1.1, which nurse complained to me of. I was already then wondering if those numeric levels are correct, if the cholestorol levels are very low. You talking about ratio between them, made me feel better. Also I had very low triglyseride levels. Since I eat less bread, my cholesterol is higher now (4.1, I believe, which has been kind of normal level for me since youth and as general cholesterol is higher, hdl is back in the “normal” range). I just wonder, if 3.1 cholesterol is so low and rare (especially here, where many inherit higher cholesterol genes) it has not even been considered, when formulating recomendations.

  • Look at the different physique of these 2 gentlemen. If the guy in the middle is eating vegan, may God save from a vegan diet.

  • I am a healthy young individual who is very active. I used to love eggs for their high protein content and would eat 1 egg a day about 4 to 5 times a week. I had my blood work done for my life insurance policy and my cholesterol was at 6.7, which is quite high. They said that it must be genetics as I am a healthy and fit individual who eats the “right” foods. Fast forward to being vegan for a year and my cholesterol levels are now perfect. Doctor could not believe it. Dietary cholesterol definately has an impact on cholesterol levels.

  • I would love to see a video on the difference between butter and margarine. I have heard such conflicting stories that seem to be very dichotomous. Some people saying butter is better because it is “more natural” and others saying margarine because it is lower in saturated fats and higher in unsaturated fats. Would just like to see the science behind this.

  • My takeaway from all this:
    1. Eat whole foods and cook your own meals as much as possible.
    2. Avoid ultra-transformed foods at the grocery store (and fast food) as much as possible.
    3. But also, in the name of intuitive eating, don’t beat yourself up over occasionally indulging, and enjoy it.
    4. When buying moderately transformed foods like dairy, nut butters, and jams, go for the original full-fat or full-sugar versions to avoid ultra-transformed additives. Just reduce your intake of those foods in favour of whole foods.

    I’m totally struggling with following all these guidelines lately, like my body emotionally craves all these ultra-transformed “fast food” type foods. It’s like I don’t feel satiated in a day without at least one of those types of foods in my day. I’m curious about it and am exploring where that may come from: my upbringing, my stress levels, my use of these foods as emotional comfort. But this video is motivating me to get back to buying and consuming more whole foods, and make myself nourishing meals that are yummy, satiating, and healthy. It’s a balance and a journey!!

  • Hey Abbey, I was wondering if you could make a video about what food groups to eat and when. For example, protein after working out, carbs before working out etc. Then in the video you could include suggestions of what food to actually eat. So, in the video you could include some of the ‘ideal’ breakfasts, lunches, dinners and snacks (post and pre workout). Not too sure if this comment makes sense, but i’d love to see it:)

  • The move to demonize coconut oil is an economical terroristic move by the power that be. It has nothing to do with it being poisonous. Here in America we consume far more poisonous foods on a daily bases than coconut will ever be. America farmers don’t farm coconut. so it make perfect sense to put down coconut oil because we now stop the flow of our American dollars going overseas when we have plenty of oil right there at home.

  • Coconut oil is just as safe as butter and lard everything in moderation. I don’t use it daily or even monthly and don’t think it’s particularly healthy but the taste is ace!

  • Hey Abby. I’d just like to thank you again for all your level headed research on food and intuitive eating. I’ve been slowly resetting my dials and only eat when I’m actually hungry now and eat a balanced diet, there is chocolate, there is barley grass powder, there are CARBS!!!

  • You mean to say that fasting blood cholesterol isn’t raised by dietary cholesterol? Maybe look up clinical feeding trails to figure out what happens postprandially…. And then do the math what happens if you consume dietary cholesterol 3 times a day.

  • She says MCT is not stored as fat as this was some sort of advantage. It just makes other fat calories you consume get stored as fat, if you exceed your calories. Its the same with carbs, they get rarely stored as fat but if you eat too much, the more of the fat you eat gets stored as fat.

  • 33 minutes of “information for personal pleasure”, what a waste of time lol. Inflammation is good for immunity, but wait… too much is not, can’t decide…
