Beat the eggs in a medium-size bowl, add the minced garlic and season with salt & pepper, and chili flakes if using. Grease a 6-mold muffin tray with oil or butter, and fill the molds with evenly divided broccoli, ham, and grated cheese. Pour the beaten eggs into the molds and bake in the oven for 10-15 mins, or until eggs have set. Using oil or butter, grease a 6-mould muffin tray.

  • I love this idea! I have never seen egg muffins made with lunch meat before. I am not a fan of eggs, so maybe this will help me eat a low carb breakfast, my hardest meal to do low carb.     Cadaver meals, and menstrual cycle meals, are for ignorant people.

  • TIP, if trying the egg “muffins”, use a large glass measuring cup to help pour the eggs so it doesn’t drip down the side of a bowl. Also, storing for 7 days in the fridge is not a good idea, it may go bad sooner than that. I suggest freezing in a container or freezer bag if not consuming sooner than 4 days. Just a suggestion, really enjoy watching you Katherine:)

  • Thank you Katherine for the recipe. Using deli meats is genius and so is putting cheese before the egg mixture, Ive made similar recipes and they turned out dry or salty these are moist and had a burst of gooey cheese in every bite!

  • TIP, if trying the egg “muffins”, use a large glass measuring cup to help pour the eggs so it doesn’t drip down the side of a bowl. Also, storing for 7 days in the fridge is not a good idea, it may go bad sooner than that. I suggest freezing in a container or freezer bag if not consuming sooner than 4 days. Just a suggestion, really enjoy watching you Katherine:)

  • You can use bacon,baloney or turkey or even cooked polenta bottoms for a treat also, Basil works well instead of green onions etc. I love this recipe

  • I love this idea! I have never seen egg muffins made with lunch meat before. I am not a fan of eggs, so maybe this will help me eat a low carb breakfast, my hardest meal to do low carb. No lunch meat today, so I will try it with salami, cheese, onion and green pepper. Thanks for the great idea!

I just started doing this and quite frankly if it wasn’t for people like you on YOUTUBE I would have starved to death by now, Cause I’m not very creative like you. I come from a world of fast food.   • I tried this and going to have to throw the muffin pan away. The egg is so stuck I can’t clean it off. any suggestions? And yes I did use cooking spray.
