This tasty dish can be frozen and used for lunches through the week or eaten straight from the oven:-). Ingredients. 12 Eggs. 100g Lite Feta. 200g Lite Ricotta. 1 Zuchinni. 1 Capsicum. 700g Pumpkin. 100g Baby Spinach. 1/2 Cup Parsley. Olive Oil. Salt & Pepper. 1 Clove Garlic. 1 Onion Diced. Method: Peel and slice pumpkin, add to an oven dish with onion, capsicum and garlic lightly spray with oil, bake @200* (400F) until tender.. Egg Mixture. Whisk eggs before adding feta and ricotta, parsley, salt & peper.. Lightly spray an oven dish with oil, add a layer of roast veggies, a layer off egg and then spinach, repeat process.. Bake @ 180* (360F) until golden brown.

The Summer Frittata Formula. Here’s the basic formula for what you’ll need: 6 eggs + 2 cups chopped vegetables + 3 cups chopped greens. A frittata is like the acoustic version of quiche: It’s stripped down with no crust or cream, and baked in the. 4 large eggs, beaten.
1 cup sliced fresh mushrooms. 1/2 cup chopped fresh broccoli. 1/4 cup shredded sharp cheddar cheese. 2 tablespoons finely chopped onion. Pour egg mixture over vegetables in skillet.
As mixture sets around edge of skillet, with spatula, gently lift cooked portions to allow uncooked egg to flow underneath. Cover and cook until bottom is set and top is almost set. Sprinkle cheese over top. Cover skillet.
2 tablespoon fresh basil leaves (finely chopped) 1/3 cup part-skim mozzarella cheese (shredded) Cooking spray. For the Fruit Salad: 2 peeled oranges, cut in half, then into 6-8 pieces, depending on their size. 1 cup fresh green, red or purple grapes(use varieties without seeds), left whole. Pour egg mixture over hot vegetables in skillet; stir gently to combine.
Reduce heat to medium-low. Cook without stirring until eggs are set on bottom, about 5 minutes. Sprinkle cheese.
Adapted from Ina Garten’s potato and pancetta frittata, this vegetable frittata is full of veggies and cheese. It puffs up beautifully in the oven thanks to the addition of flour and baking soda. Prep Time 15 minutes Cook Time 30 minutes.
This loaded veggie frittata was one of my no gluten, no cheese creations and oh man. It’s become a staple in our household! Its absolutely bursting with veggies, my favorite being the zucchini. You add that after the other veggies are already sautéed, just before you put the pan in the oven.
It ends up with the slightest bite to it, adding. This Vegetable Frittata incorporates leftover veggies, cheese and eggs baked until custardy and creamy. Healthy, protein packed and easy dinner, leftover breakfast or brunch. What Is a Frittata? Frittata is a glorified omelette or simplified quiche.
Position a rack in the upper third of the oven and preheat to 450 degrees F. Whisk the whole eggs and whites in a bowl. Add the cottage cheese and whisk until. Pour the egg mixture over the vegetables and cook for 2 minutes over medium-low heat without stirring.
Transfer the pan to the oven and bake the frittata for.

* Sprinkle the Cheddar over the top of the frittata and broil for 2 to 3 minutes until the frittata is set and the cheese has melted.

You didn’t make it lengthy but strait to the point. This recipe can be a brunch 3 times a day. Wonderful job! You don’t have to be famous to have the best recipes just best at your job.
Too much work to incorporate details on the products you use? Or we can just ask. Lol. I am interested in the pan you used to sauté the veggies. Is the pattern on the inside for a purpose or just for the look? Also, my stuff always sticks for my stainless steel pans and it’s annoying but haven’t figured out how to prevent it.
