HOW TO MAKE CARROT CAKE ‣‣ 3 fun & healthy ways

Video taken from the channel: Simply Quinoa

Step 1 Grate the carrot into a small bowl, then add all the ingredients, including the oats, peanut butter, water, vanilla essence, cinnamon and nutmeg. Step 2 Stir well to combine. Grate the carrot into a small bowl, then add all the ingredients, including the oats, peanut butter, water, vanilla essence, cinnamon and nutmeg.

Step 2. Stir well to combine. Step 3. Cover the bowl with a small plate or lid, then place it in the fridge to set. Step 4. DIRECTIONS.

Preheat the oven to 350 degrees F. Lightly grease a 9 inch round or square pan. In a medium size bowl, mix the oil with the sugar. Add eggs and egg white. For Oatmeal Carrot Cake Preheat oven to 350℉ and line an 8 or 9-inch round cake pan with parchment paper on the bottom. Take the grated carrots and place it in the middle of a clean dish towel or large paper towel.

Wrap the carrots in the towel. Add flour, baking powder, baking soda, cinnamon, ginger and salt and mix well. In a second large bowl, combine carrots, maple syrup, currants, coconut and. These Carrot Cake Baked Oats are perfect if you’re following a calorie controlled diet and fit well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body. To make carrot cake chia pudding mix together your milk, chia seeds, sweetener, vanilla, cinnamon, and carrots until well combined. If you want to make a parfait like I have pictured, save your raisins, walnuts, and pineapple until your pudding is ready. In a large bowl combine oat flour, rolled oats, baking powder, coconut sugar and spices. In a separate bowl combine egg, banana, applesauce, almond milk and coconut oil.

Add wet ingredients to dry and stir to combine. Stir in grated carrot, raisins and nuts. Bring water to a boil in a heavy, large saucepan, and stir in the oats.

Reduce heat to a simmer, and cook oats until they begin to thicken, about 10 minutes; mix in the apple, carrot, raisins, cinnamon, nutmeg, ginger, and salt. Let the oats simmer until tender, about 20 more minutes. But because traditional carrot cake recipes don’t exactly make for the healthiest snacks I planned ahead this year and created this delicious recipe for a Healthy Carrot Cake Oatmeal Snack Cake!

It has the same flavors as regular carrot cakes, like lots of cozy spices and sweet carrots, along with plenty of hearty oats.

  • I love your recipes! I know your channel is Simply Quinoa, but just out of curiosity, are quinoa flakes substitutable with anything else? (maybe oat flour?)

  • can you tell me brand of flavour less dairy free yogurt.i dont have whole food near but kroger they have SO coconut small flavoured yogurt

  • I had a bit of extra time this morning and decided to try the carrot cake energy bites. I can attest to the fact that the recipe is quick and easy as well as incredibly tasty and satisfying! I took a few into work and they were a HUGE hit (but I’m keeping the rest at home)! I’m hoping I can sneak some extra veggies into my hubby’s lunch this way… (fingers crossed)

  • These recipes look so delish, Alyssa! I really want to make the Carrot Cake Breakfast Cookies. I remember making something like these a long time ago, but they were made to be like banana bread, instead of carrot cake. Kind of like a cross between a cookie and a muffin. I’m thinking that these would probably have a similar texture.

  • I can’t wait to try the cookies. Can I use an egg instead of flaxseed egg and what I can use to substitute quinoa flakes? I hope there is something! Thank you

  • I made this cake for my husband’s birthday, it’s today! I sprinkled chopped walnuts on the yogurt cheese frosting (my husband makes yogurt so he made me some yogurt cheese) Thanks so much!! It looks so good, I’m sure it’ll taste amazing. God is so good.

  • Yesss! Carrot Cake is my favorite Thank you for these delicious looking recipes that I desperately want to try, especially the energy balls.

  • I’m so excited about this recipe. I love your channel. I don’t like raisins so I’m going to chop up some dates. Thank you

  • Eggs? First time I have ever seen a video of yours that wasn’t fully vegan.. I always thought you were plant based. Not trying to sound rude or anything.

  • Ohhh I love these kinds of videos too! ASMR is a bit too much for me but these calm cooking videos are perfect Especially the ones from peaceful cuisine without music. It’d be great to see some more of these form you if you enjoy making them though I have to say your videos are always rather calming and very beautifully made. Thank you

  • Does it matter if I use this recipe for the muffin pan instead of the cake pan? I know you have a muffin recipe but I noticed that the recipe is a bit different and maybe it’s due to the consistency for each type of pan?

  • I’ve just made this and it tastes amazing! I used agave syrup instead of maple syrup and it is totally the same, i love this recipe.
    Love from Italy ❤

  • Yumm they all look delicious! I might try the Carrot cake first! I have all the ingredients except for the quinoa flour. Could I make myself the flour by putting quinoa in the blender??

  • Yippy yay! I have all the ingredients and I’m making this tonight to eat in the morning nice and warm. Thank you so much Berta Jay! I am a new subscriber and I clicked on the little bell to be notified when you make another video. Love to watch you. Much love.

  • Less oil and no egg. So much carrot. I am not sure about this one. Maybe I would melt some honey in with the carrot. I guess I don’t like carrot. LOL

  • This looks delish! I like ALL cake really but fudge cake with thick, chocolate icing would be my favorite. Ice cold from the fridge. Yum

  • Another winner from Berta J! For those trying to stay away from concentrated sweeteners, try adding pineapple instead of maple syrup.

  • oooh interesting, I have oats for breakfast every day, I’ll definitely have to try this. What was the other spice that you used other than cinnamon?

  • Well I would really love to know the stats of that cake like that calories cholesterol sugar but it sounds like it might be pretty hard to do that anyways it looked amazing

  • I love carrot cake Berta, but not a huge fan of wet oatmeal. Can’t say I hate it, but no my favorite. But….I do love baked oatmeal. I’m thinking I should be able to do with with my baked oatmeal! So will have to get me some carrots and give it a try as it sounds so good. You are such a sweetheart Berta and I just could listen to you talk all day long! Hugs, Brenda

  • It looks fantastic!
What can you replace the applesauce with if you can’t eat apples? Also the honey in the frosting, any recommendations?

  • I’m so excited to try this recipe because I am allergic to eggs and wheat so I haven’t had a real carrot cake in a while and I currently have a lot of carrots in my refrigerator. I love your videos!

  • This looks delish! I like ALL cake really but fudge cake with thick, chocolate icing would be my favorite. Ice cold from the fridge. Yum

  • I am very excited to try this recipe today. I don’t have the applesauce but may try a mashed banana instead and see if it works. I love that it uses healthy alternatives. Thank you so much. I happened to see you on a channel I was passing by and saw a comment from you. Have a great day. Greetings from Denmark.

  • Hi Nikole, are you planning on getting an air fryer? I would be curious to see you experiment with some air fryer recipes…
Will test your carrot cake recipe next week, it looks great!:) Keep up your great work!:)

  • Gonna make this for breakfast but if I used it for dessert, I might add some pineapple and coconut…. mmmmmm Gonna use the carrots that I saved after I shaved the carrots for the hot dogs… (not the peeling but after I peeled and rounded off the edges…those pieces….)

  • Hi Berta! I just want to let you know that I made carrot cake baked oatmeal. Oh goodness, it was so good! Thanks for the idea!! Hugs, Brenda

  • Berta, what amount does this make? God Bless you for this wonderful recipe. I love carrot cake. What better way to get to eat it nutritiously. Mmmm Mmmm delicious. Your wonderful spirit and faith inspires me so much. I will continue as a on going subscriber to your most excellent channel. Your creative culinary foods is so nice to have on electronic file. God Bless you Berta, love Tamson

  • I’m so excited to try this recipe because I am allergic to eggs and wheat so I haven’t had a real carrot cake in a while and I currently have a lot of carrots in my refrigerator. I love your videos!

  • I feel as if I’ve just dropped by the home of a friend! Great style and warmth. I’m looking forward to many more visits. Sue in Savannah.

  • Yumm…I love oatmeal; will def try this! I make a savory curry oatmeal. (I might be repeating myself.) I make a single serve, and microwave it. It’s oats, water, green peppers, onions, jalapenos, curry powder, lemon juice, garlic, black pepper, and salt. Once it’s cooked I poke some cheese just below the surface (you want to find pockets of cheese, so don’t stir or blend it). Top with dabs of butter (you want it to pool), and drizzle w/ a bit of cream; add a bit more black pepper. For a single serve I use 30 grams of oats and 6 ounces of water; everything else is to taste and your preference.

Yesterday I had a sweet tooth and did oats, water, orange flavored cranberries, coconut and walnuts and a dash of salt. Once it was cooked I added some butter, a drizzle of heavy cream and sprinkled it with Dutch cocoa powder. It truly was decadent.

Watched a video that might interest you, about a place in NYC that only serves oats…video showed some of the offerings…it looked so yummy that I went to the restaurant website and checked out their menu…lots of good ideas there for oats. The video is short, if you’d like to see it, here’s the link: https://youtu.be/VjYeTMW95Ys

P.S. Isn’t fresh nutmeg lovely? I make an eggnog coffee creamer and it has lots of nutmeg in it…plus some rum flavoring, butter flavoring and some other things.. I don’t like my hot coffee sweet, hence I make my own flavored creamers. Fun but the only one I feel I’ve perfected is the eggnog flavor. I tried a ‘fruitcake’ one…and a birthday cake one…and a strawberry shortcake one (Dunkin Donuts had a Strawberry Shortcake coffee that was to die for..it was only out a couple of years, in the Spring and I was trying to duplicate that flavor)…haven’t been satisfied with any of these…always go back to the eggnog flavor.

  • One of the best carrot cakes. I had watched other healthy carrot cake YouTube channels and they appeared dry. I’m glad I went with this recipe. The cake is so moist and delicious. I went too heavy with the cream cheese but that’s an easy fix. I used grass fed whole milk instead of almond milk and the vinegar still did the job.
