VEGAN CARROT CAKE OVERNIGHT OATS. -- 1 cup rolled oats. ¼ cup shredded carrots. 2 tablespoons broken/chopped nuts (I used 1 tablespoon each of walnuts and pecans; you could use all of one or the other). 2 tablespoons of raisins. 20 scrapes of nutmeg. ½ teaspoon cinnamon. 1 3/4 cups plant milk (I used my homemade almond milk). 2 tablespoons maple syrup. 3/4 teaspoon vanilla. Ingredients: 6 large Carrots. 2-3 tablespoons lemon juice. 1¾ cups (160g) rolled oats. 1 2/3 cups (210g) all-purpose flour. 1/2 cup + 1 Tbsp (130g) butter, cold. 3/4 cup (150g) sugar + 1 Tbsp for topping. 1/2 teaspoon cinnamon. 2-3 tablespoons raisins. 3 tablespoons crushed walnuts. Directions: 1. Preheat oven to 180C (360F). line an 9-inch (22-23cm) springform pan with parchment paper and grease with butter.. 2. In a large bowl mix flour, oats, cinnamon and sugar. In a separate bowl grate carrots and mix them with fresh lemon juice. set aside.. 3. For the first cake layer: grate 2 tablespoons (30g) cold butter on the bottom of the pan, sprinkle 3-4 tablespoons of the oat mixture, then lightly press. Evenly spread 1/3 of the shredded carrots, then sprinkle some raisins and crushed walnuts. Repeat the same process 2 more times: oat mixture (1/3 of the remaining), carrot mixture, raisins, walnuts, oat mixture, carrot mixture, raisins, walnuts, oat mixture. Finely, grate the remaining 100g cold butter on top of the cake, sprinkle 1 tablespoon sugar.. 4. Bake for 35-40 minutes, until golden brown on top. Step 1 Grate the carrot into a small bowl, then add all the ingredients, including the oats, peanut butter, water, vanilla essence, cinnamon and nutmeg. Step 2 Stir well to combine. Preheat the oven to 350 degrees F. Lightly grease a 9 inch round or square pan. In a medium size bowl, mix the oil with the sugar. Add eggs and egg white. For Oatmeal Carrot Cake Preheat oven to 350℉ and line an 8 or 9-inch round cake pan with parchment paper on the bottom. Take the grated carrots and place it in the middle of a clean dish towel or large paper towel.
Wrap the carrots in the towel. Add flour, baking powder, baking soda, cinnamon, ginger and salt and mix well. In a second large bowl, combine carrots, maple syrup, currants, coconut and. These Carrot Cake Baked Oats are perfect if you’re following a calorie controlled diet and fit well with any one of the major diet plans such as Weight Watchers.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body. To make carrot cake chia pudding mix together your milk, chia seeds, sweetener, vanilla, cinnamon, and carrots until well combined. If you want to make a parfait like I have pictured, save your raisins, walnuts, and pineapple until your pudding is ready. In a large bowl combine oat flour, rolled oats, baking powder, coconut sugar and spices. In a separate bowl combine egg, banana, applesauce, almond milk and coconut oil.
Add wet ingredients to dry and stir to combine. Stir in grated carrot, raisins and nuts. Bring water to a boil in a heavy, large saucepan, and stir in the oats.

But because traditional carrot cake recipes don’t exactly make for the healthiest snacks I planned ahead this year and created this delicious recipe for a Healthy Carrot Cake Oatmeal Snack Cake!
It has the same flavors as regular carrot cakes, like lots of cozy spices and sweet carrots, along with plenty of hearty oats.
List of related literature:
• Oat streusel: Combine A cup reserved cake mix or flour, V4 cup instant or quick-cooking oats, 4 cup packed light brown sugar, 4 tablespoons softened butter, and 2 teaspoon ground cinnamon in a medium mixing bowl.
If you plan on making this recipe ahead of time and not serving it the same day, I suggest using ¼ teaspoon less gelatin than called for; this quantity will create a perfect creamy texture even after a day or two in the fridge.

Yumm…I love oatmeal; will def try this! I make a savory curry oatmeal. (I might be repeating myself.) I make a single serve, and microwave it. It’s oats, water, green peppers, onions, jalapenos, curry powder, lemon juice, garlic, black pepper, and salt. Once it’s cooked I poke some cheese just below the surface (you want to find pockets of cheese, so don’t stir or blend it). Top with dabs of butter (you want it to pool), and drizzle w/ a bit of cream; add a bit more black pepper. For a single serve I use 30 grams of oats and 6 ounces of water; everything else is to taste and your preference.
Yesterday I had a sweet tooth and did oats, water, orange flavored cranberries, coconut and walnuts and a dash of salt. Once it was cooked I added some butter, a drizzle of heavy cream and sprinkled it with Dutch cocoa powder. It truly was decadent.

I tried a ‘fruitcake’ one…and a birthday cake one…and a strawberry shortcake one (Dunkin Donuts had a Strawberry Shortcake coffee that was to die for..it was only out a couple of years, in the Spring and I was trying to duplicate that flavor)…haven’t been satisfied with any of these…always go back to the eggnog flavor.

Does it matter if I use this recipe for the muffin pan instead of the cake pan? I know you have a muffin recipe but I noticed that the recipe is a bit different and maybe it’s due to the consistency for each type of pan?
I’ve just made this and it tastes amazing! I used agave syrup instead of maple syrup and it is totally the same, i love this recipe.

One of the best carrot cakes. I had watched other healthy carrot cake YouTube channels and they appeared dry. I’m glad I went with this recipe. The cake is so moist and delicious. I went too heavy with the cream cheese but that’s an easy fix. I used grass fed whole milk instead of almond milk and the vinegar still did the job.
I’ve never seen a cake made this way. I love carrots, I love oatmeal. What a beautifully rustic, healthy cake! I’m ready to try this.

I made this cake for my husband’s birthday, it’s today! I sprinkled chopped walnuts on the yogurt cheese frosting (my husband makes yogurt so he made me some yogurt cheese) Thanks so much!! It looks so good, I’m sure it’ll taste amazing. God is so good.

I just made this cake and OMG its delicious, so moist and flavorful, i added some raisins and didnt make the frosting and trust me the frosting is not needed. Thank youuu!! Next time i will add some nuts.

Gonna make this for breakfast but if I used it for dessert, I might add some pineapple and coconut…. mmmmmm Gonna use the carrots that I saved after I shaved the carrots for the hot dogs… (not the peeling but after I peeled and rounded off the edges…those pieces….)

good recipe, but would actually use oatmeal flour too with the the thick oatmeals, and skip the butter part, maybe add some coconut oil instead

Yumm…I love oatmeal; will def try this! I make a savory curry oatmeal. (I might be repeating myself.) I make a single serve, and microwave it. It’s oats, water, green peppers, onions, jalapenos, curry powder, lemon juice, garlic, black pepper, and salt. Once it’s cooked I poke some cheese just below the surface (you want to find pockets of cheese, so don’t stir or blend it). Top with dabs of butter (you want it to pool), and drizzle w/ a bit of cream; add a bit more black pepper. For a single serve I use 30 grams of oats and 6 ounces of water; everything else is to taste and your preference.
Yesterday I had a sweet tooth and did oats, water, orange flavored cranberries, coconut and walnuts and a dash of salt. Once it was cooked I added some butter, a drizzle of heavy cream and sprinkled it with Dutch cocoa powder. It truly was decadent.
Watched a video that might interest you, about a place in NYC that only serves oats…video showed some of the offerings…it looked so yummy that I went to the restaurant website and checked out their menu…lots of good ideas there for oats. P.S. Isn’t fresh nutmeg lovely? I make an eggnog coffee creamer and it has lots of nutmeg in it…plus some rum flavoring, butter flavoring and some other things.. I don’t like my hot coffee sweet, hence I make my own flavored creamers. Fun but the only one I feel I’ve perfected is the eggnog flavor. I tried a ‘fruitcake’ one…and a birthday cake one…and a strawberry shortcake one (Dunkin Donuts had a Strawberry Shortcake coffee that was to die for..it was only out a couple of years, in the Spring and I was trying to duplicate that flavor)…haven’t been satisfied with any of these…always go back to the eggnog flavor.
