While white rice contains fewer nutrients, fiber and protein compared to brown rice (due to processing), it can be considered healthy depending on what it’s eaten with. Pairing white rice with vegetables, beans or lean proteins can add a variety of vitamins, minerals, fiber and protein to any dish. Consuming raw or undercooked rice can increase your risk of food poisoning. This is because rice can harbor harmful bacteria, such as Bacillus cereus (B. cereus).

Brown rice is thus the favorable choice for weight loss, as it’s more nutritious, contains more fiber and provides a healthy dose of disease-fighting antioxidants. 17 October, 2013. White rice has some of the same health drawbacks as white bread, but brown or wild rice can be a healthy source of carbohydrates.   • Rice is ok in moderation the carbs per 100 g is high 71 grams even in raw rice.

    Replace it with chiaseeds for instance they are much lower in carbs.

    I understand that its not like eating rice.

    I skip it entirely 95 percent of the time since neither aresenic nor diabetes sounds like fun to me.

    like here its not the white rice making you fat its the food you eat deep fried foods and processed junk that belong nowhere in the body that make you fat! deep fried foods would be far worse compared to white rice white rice paired with plenty of vegetables and high fiber beans which have about 15 grams of fiber per cup would be far healthier than sitting and eating a cheeseburger!
    you cant just look at white rice and say its a bad food to eat as a individual food item you have to look at what its paired with
    fruits and vegetable are high sources of fiber too and can be easily incorporated into a healthy diet with enough fiber coming from those sources and oatmeal is a nice way to get enough fiber too so you have to look at the persons entire day to come to a conclusion.

  • I lived in vietnam on a budget for five weeks last year, at home I normally have a traditional western diet. While there I lived on rice, fruit and a little bit of meat, when I finally got home I realised I lost 7kg, more than a kilogram per week without any exercise..   • I have done the rice diet and it’s tremendously effective lost 40 lb. Eventually it does get boring and you have to season the rice and add some flavor.   • If you want the rice done more quickly you can add it to the cold water and cook on high heat until all the water is either evaporated or inside the rice, no rinsing, you can cook it in 5-10 minutes that way. But you have to be careful about the amount of water for that method, too little and the rice will still be hard, too much and the rice will be soggy, the usual rule is 1 part rice to 2 parts water.

    On electric stoves you need to pre-heat the water because it won’t heat up as quickly as it does on a gas stove.

    That said some patience isn’t wrong when it comes to rice, as it tends to be much tastier when it had the chance to cool down a bit before consumption, I usually cook the rice in 10 minutes and then wait 20 minutes for it to cool down before finishing the dish.

  • Excellent, well done video. Asians are small because of many generations of eating rice. Not a well balanced diet. It doesn’t matter if you waste a grain of rice. It will not affect the rice farmer. He has done his job and what happens to that grain of rice is no longer of any interest to him. That is like thinking that throwing away toilet paper is a waste of effort by the paper maker. What happens to the grain of rice is not going to change anything. Your digestive system will process just fine without that grain of rice. Keep eating rice I like small women.

  • SERIOUS QUESTION. I always wonder why the food industry distributes “white” “refined” products. They’re always less expensive but seem to me like they would require more work to make them white. So, are these white foods by-products of other industries. Maybe vitamin/supplement companies drain them of they’re nutrition and then sell the empty food?

  • if your eating 1 cup of rice and a handful of salad plus lite dressing -thats only 300 calories and its very filling and delicious.
    the reason why americans fail with rice is because they add thick and rich gravy and sauces to the rice.

  • I live in Minnesota and we are lucky enough to have access to wild rice. It is actually native to this region and still cultivated by native peoples.

    Brown rice tends to include more pesticides inside of the rice brown and germ, so I agree with soaking for a long time until they will be sprouted is a good idea to remove toxins and increase nutrition levels. Anyway, I want to know people white rice is healthy food and many Japanese people keep their health because their staple diet is white rice (not brown rice) and also sprouted rice is popular in Japan.

    White rice also includes some proteins (4-6 g per one bowl of Japanese white rice) and well-balanced vitamins and minerals, so rice is a healthy meal if you eat rice 
    with some side dishes which include various vegetables and fresh fish(fish oil and proteins are good for your brain!).

    Commercial bread might be unhealthy because they tend to include many preservatives and additives, salt, and oil. On the other hand, you can steam rice only with water(⌒∇⌒) So I recommend you to try to bake healthy bread at home or buy bread from the classic bakery who don’t add unnecessary preservatives and too much sodium for preservation.

  • White rice is naturally glutten free compared to Brown rice, but White rice can be a problem if your insulin resistant or just have blood sugar issues, so Brown rice is better in those circumstances especially if your not glutten sensitive and can digest complex carbohydrates.

  • The main problem with consuming white rice with weight loss in mind is that it gets digested very fast like in 40 min or so. This therefore makes one hungry later on in the day forcing to eat more. Another drawback to white rice consumption is the portion control. Since it is not that filling, you can it a lot unmindfully causing weight gain.

  • This is such a better way to cook rice over and against the norm in America where you measure the exact amount of liquid needed for an exact amount of rice and then cook covered until there’s no liquid left. That’s how you end up with underor overcooked rice. I especially find Chetna’s method helpful when cooking brown rice, which I could never seem to get right with the old method.

  • I like to let it soak for at least 90 minutes changing the water three times (once every 30 minutes). If I don’t have a lot of time then one good long soak maybe 30 minutes, and If I’m really up against it I just rinse it in a mesh strainer until the water runs fairly clear. Then I boil it as you would pasta for 6-9 minutes checking it at six. I strain it leaving a little bit of the cooking liquid in the pan, while it’s in the strainer I rinse it with cold water to stop cooking and get the last of the starch out. I put it back in the pan, and put the pan back on the burner on a low heat, I add a tablespoon of butter flavored coconut oil (you can use regular butter) and some dried cilantro. Stir with a fork and once the coconut butter has melted and the rice is warm it’s done. And obviously take it off the heat immediately.

  • remember also that the rice diet was designed for VERY sick people (not mildly over weight folks). the ultra low sodium in the diet (you can’t put salt, soy sauce, etc. on the rice) and only the rice as your source of protein are very beneficial on the kidneys.

    as someone who has gone on the rice diet before as a “clense” usually after a vacation where I have eaten much more meat/oils by eating out my two big thoughts are:

    1. this diet is very easy on the brain: you don’t have to think about meals anymore. I buy a big bag of good organic rice at the asian food store…rinse and pop in your instant pot. done. no grocery shopping, no prep time, no spending time coming up with what you’re going to have at your next meal. it might just be me, but I find that routine to be very freeing.

    2. i don’t know if i could do this diet if I were married, had children, or have social requirements at work that require me to go to dinner parties/lunch meetings. its extremely difficult to stick to this diet if you have to be around other people at meal times that aren’t on it…which means most people are going to struggle with this.

    overall, I can only see me doing this diet for more than a month at a time if I were very sick and needed to do it. for folks on a vegan-style diet it is fairly easy to adjust to in the short run and is a great physical and mental break.

  • Well…according to Dr. Hiromi Shinya the author of the Japanese health book “Enzyme Factor”, Phytic acid in brown rice is good to lower the harm from pesticides and chemicals in vedgetables. What do you think about that? In addition to that, there is also RED rice and BlACK rice which are meant to be a lot healthier and organic because they were planted on organic and rich soil.

  • The only way I have been able to cook rice successfully is with my rice cooker. The nice thing is that it does not need to be watched at all as it shuts off automatically, and the rice is perfect every time, but your method is great in that you don’t have to measure the ratio of water to rice. I think that’s why mine never turned out and burnt:-)

  • If you want the rice done more quickly you can add it to the cold water and cook on high heat until all the water is either evaporated or inside the rice, no rinsing, you can cook it in 5-10 minutes that way. But you have to be careful about the amount of water for that method, too little and the rice will still be hard, too much and the rice will be soggy, the usual rule is 1 part rice to 2 parts water.

    On electric stoves you need to pre-heat the water because it won’t heat up as quickly as it does on a gas stove.

    That said some patience isn’t wrong when it comes to rice, as it tends to be much tastier when it had the chance to cool down a bit before consumption, I usually cook the rice in 10 minutes and then wait 20 minutes for it to cool down before finishing the dish.

  • This is an excellent video! I never knew basmati & jasmine are lower in arsenic. My favourite rice is wild rice. It has 30g of carbs per 1/4 cup. Lundberg is my favourite! They’re organic and they test their arsenic levels. There’s also a California sprouted basmati brown rice.:-)

  • The key for healthy living is eating variety of raw unprocessed food to get balanced nutritions, the reason people taking supplements is because they eat unbalanced diet which is the main cause of most diseases, even for Keto diet people need to take extra electrolyte powder to make up the nutritions they can’t get from limited food sources so what does that mean? It pretty much means it is kind of going for an extreme way and not ideally a healthy diet in the long term, although it does help fixing some issues like diabetes and insulin resistance.   • To put in perspective for many centuries cultures have used rice as their staple. For example of a Japanese soldier with rap a rice layer over a bean paste or some kind of meat product. Unfortunately that meat product would be chard so it wouldn’t go bad. But then you would have a rice ball with some fermented tofu food. They would carry this on a special belt into battle.

  • Removing the bran and germ does not remove all vitamins and minerals. For some of us, we are learning that insoluble fiber is not as good for bowel health as we have been lead to believe. So white rice is better in that case. But I agree only small amounts should be eaten because of the carbs and because of the arsenic.   • I would argue with rice not being part of a healthy diet. I probably eat it 3 or 4 times a week. I went from bmi obese to bmi normal eating a lot of rice. I’ve seen studies on high rice eaters over a 10 year period and their cancer rate was no higher. It’s very inexpensive and makes a good addition to other foods like veggies and some meat. Beans, rice, potatoes, and noodles are fillers that give enough calories for a meal. Anyone that has to watch their budget is going to lean on those types of foods and they are healthy in a balanced meal.

  • I lived in vietnam on a budget for five weeks last year, at home I normally have a traditional western diet. While there I lived on rice, fruit and a little bit of meat, when I finally got home I realised I lost 7kg, more than a kilogram per week without any exercise.. Maybe your American bodies cannot tolerate rice. We Asian bodies loves rice. I hope you Dr. Nick should include in your video that your teachings will always depend on a person.   • No self-respecting Asian eats rice for the sake of “nutrients”. White rice is eaten as a standard side dish to fill up your stomach and get you a quick energy boost. If you want to get those nutrients and fibers you need to eat your veggies and a little bit of meat (or beans for the vegans among us) — AKA the main dish.

    Also, brown rice might contain more nutrients, but it also contains arsenic content, so it really ISN’T that healthy and should NEVER be eaten as a daily staple food. The arsenic content is absorbed from the soil of the paddies in which rice grows, and is stored in the hull of the rice grain… which is exactly that part, which brown rice keeps for the nutrients.

    White rice has much less arsenic content, because the hull is removed, but there might be remnants left behind. This is why every self-respecting rice-eating Asian washes/rinses their rice with water before cooking it.

  • I like to let it soak for at least 90 minutes changing the water three times (once every 30 minutes). If I don’t have a lot of time then one good long soak maybe 30 minutes, and If I’m really up against it I just rinse it in a mesh strainer until the water runs fairly clear. Then I boil it as you would pasta for 6-9 minutes checking it at six. I strain it leaving a little bit of the cooking liquid in the pan, while it’s in the strainer I rinse it with cold water to stop cooking and get the last of the starch out. I put it back in the pan, and put the pan back on the burner on a low heat, I add a tablespoon of butter flavored coconut oil (you can use regular butter) and some dried cilantro. Stir with a fork and once the coconut butter has melted and the rice is warm it’s done. And obviously take it off the heat immediately.

  • This is such a better way to cook rice over and against the norm in America where you measure the exact amount of liquid needed for an exact amount of rice and then cook covered until there’s no liquid left. That’s how you end up with underor overcooked rice. I especially find Chetna’s method helpful when cooking brown rice, which I could never seem to get right with the old method.

  • Obviously never heard of Dr. Walter Kempners White Rice Diet of white rice and sugar. He helped all of his patients get healthy and they all lost weight. None gained. I myself lost weight by eating white rice and sugar along with fruit smoothies and baked potatoes with ketchup. Also look up Dr. McDougall starch solution.

  • Candida is what is making people sick and i had this horrid yeast/fungus infection at stage 4. Candida is caused by antibiotics in non-organic meat and taken for health issues that kill too much good gut bacteria.     The Myth is basically that Brown Rice contains higher amounts of arsenic and Can wreck havoc on your immune system.

  • My stomach was pained from eating peanut butter, earlier in my day. It abcerlutly bloated and felt that maybe it was too acidic for my tummy. I guess this from the burning/heated sensation that came back up into my throat (hours later). It was an organic brand too!

  • I did not want to say this but the comments made me no choice…Americans are claiming rice as evil while they are eating burgers steak fried potatoes bacon sausages etc which are 1000 times unhealthier..Plus it is time tested..We asians have been using rice as a staple food for thousands of years..If that is not enough for a proof, then I don’t want to say any more..Plus you have to know something very important…We don’t eat rice alone..We mix with side dishes..Those high Sugar high GI etc don’t matter since it all cancels out with the side dishes..It’s much much better than those american foods with oils and sugars

  • The only way I have been able to cook rice successfully is with my rice cooker. The nice thing is that it does not need to be watched at all as it shuts off automatically, and the rice is perfect every time, but your method is great in that you don’t have to measure the ratio of water to rice. I think that’s why mine never turned out and burnt:-)

  • Excellent, well done video. Asians are small because of many generations of eating rice. Not a well balanced diet. It doesn’t matter if you waste a grain of rice. It will not affect the rice farmer. He has done his job and what happens to that grain of rice is no longer of any interest to him. That is like thinking that throwing away toilet paper is a waste of effort by the paper maker. What happens to the grain of rice is not going to change anything.   • SERIOUS QUESTION. I always wonder why the food industry distributes “white” “refined” products. They’re always less expensive but seem to me like they would require more work to make them white. So, are these white foods by-products of other industries. Maybe vitamin/supplement companies drain them of they’re nutrition and then sell the empty food?

  • since hitting 44 weight gain became as natural as breathing, even with exercise. after coming across a video about asian obesity 3% vs American 35% I thought to myself i’ll start with rice and see what happens.
    been overweight for years now with no desire to workout. i’m 47. vegetarian heading vegan. anyway all i did was cook long grain brown rice and chop up a wide variety of veggies (& fruit: avocado, tomato) and mixed up the flavor switching up with soy sauce, ginger, wasabi, sea salt, olive oil, and occasionally vegan mayo but literally mainly ate that each day and I lost all the weight in 2 1/2 months. 30 pounds gone, the weight that’s been there for years, without walking or exercise… and no plateau! yes i ate “western” when out and had an occasional cheat.
    but with 30 pounds gone with ease so i’m never going back to a “western” eating lifestyle.

  • Sorry, but white rice tastes better to me. Also, NOTHING makes you fat except too many calories. That’s a scientific FACT even if low carb propaganda tries to beg to differ. White Basmati still has most nutrients and Asians cook with so many nutrients dense vegetables that it doesn’t matter either way.

  • the good example of rice powered people are why the Chinese/Asians been eating rice for generation and they have no problem in what you preaching…and another thing I’ve noticed is that Asians lived longer and are hard working people thn any race in the world….the reason why? because of rice.

  • It’s pretty simple actually. Just like with everything else, in moderation you won’t gain fat. But excess rice means excess carbs thus conversation and storage as fat.

  • Removing the bran and germ does not remove all vitamins and minerals. For some of us, we are learning that insoluble fiber is not as good for bowel health as we have been lead to believe. So white rice is better in that case. But I agree only small amounts should be eaten because of the carbs and because of the arsenic. Rice grown in the south is worse for arsenic because cotton was grown there before and the chemicals used in that growing process contained arsenic. California would be better, but then Fukushima might be an issue. I personally would rather buy rice from India right now, believe it or not, basmati or jasmine.

  • Asians started to put on weight after American style ‘junk food’ was introduced into their diet. Before that, they ate rice and stayed slim and healthy.

  • Actually it’s not extreme. Specifically when you look at the other diets with tons of meat and saturated fat like butter. People get those diets wrong to. Thinking that they can go to Burger King throw out the bun and eat the greasy burger with the fake meat that the body can’t even recognize slopped in oil.

  • Asians love rice especially here in South East Asia, our life is in rice, more tasty is white than brown or read because it’s more sugar than brown or red it’s feel like sweet, so try to adopt red rice in your daily needs and occasionally white rice,.

  • This is an excellent video! I never knew basmati & jasmine are lower in arsenic. My favourite rice is wild rice. It has 30g of carbs per 1/4 cup. Lundberg is my favourite! They’re organic and they test their arsenic levels. There’s also a California sprouted basmati brown rice.:-)

  • Make sure you eat only organic. There may be levels of arsenic in rice. I am digging organic brown rice, I cook it and cool it for 24 hours, turns into a resistant starch and your able to absorb more nutrients.

  • The main problem with consuming white rice with weight loss in mind is that it gets digested very fast like in 40 min or so. This therefore makes one hungry later on in the day forcing to eat more. Another drawback to white rice consumption is the portion control. Since it is not that filling, you can it a lot unmindfully causing weight gain.

  • Its better to eat peanut butter than RAW rice. Says it all really.Carb trap makes it harder for cells to be wanting more energy. Leads to high bloodsugar and ultimately diabetes.

    Want the cells to want it? Give it less sugar/carbs/protein(moderate). Its that simple.

  • i lived in asia for 10 years, they eat rice as breakfast, eat a full dish of rice for lunch and also rice for dinner, about 2 meals with rice on average a day.. yet most of the are fit and often under weight!

  • No self-respecting Asian eats rice for the sake of “nutrients”. White rice is eaten as a standard side dish to fill up your stomach and get you a quick energy boost. If you want to get those nutrients and fibers you need to eat your veggies and a little bit of meat (or beans for the vegans among us) — AKA the main dish.

    Also, brown rice might contain more nutrients, but it also contains arsenic content, so it really ISN’T that healthy and should NEVER be eaten as a daily staple food. The arsenic content is absorbed from the soil of the paddies in which rice grows, and is stored in the hull of the rice grain… which is exactly that part, which brown rice keeps for the nutrients.

    White rice has much less arsenic content, because the hull is removed, but there might be remnants left behind. This is why every self-respecting rice-eating Asian washes/rinses their rice with water before cooking it.

  • Need to be mindful of the arsenic in rice though. If u use 5 parts water to 1 part rice to cook it then rinse and repeat it bring doen the arsenic content.
