I had this dish at a Japanese restaurant in San Diego, CA over a year ago. I love it.. This dish is very easy to make with little ingredients. The best part about this dish is, I let the rice cooker do all the cooking for me.. Ingredients: skinless salmon. 4 cups uncooked Japanese rice (rinse the rice at least twice). 2 cups water. 2tsp soy sauce. 4tsp Hondashi fish stock powder. 1/2 cup shimeji mushrooms (you can also use shiitake mushrooms). Generous chunks of sautéed salmon are mixed with rice that has been cooked in clam juice and the juices from fresh tomatoes. The tomatoes are then shredded and stirred into the rice, creating a simple, flavorful sauce. Once combined, finish this Sautéed Salmon with Rice and Tomatoes. Heat the oven to 200C/180C fan/gas 6. Toss the onion, tomatoes, 2 tbsp curry paste, the chickpeas and 200ml water together in a deep 20 x 25cm roasting tin. Roast for 15 mins until the onions are tender and the tomatoes are just bursting.
Stir everything, then season. Preheat the oven to 200°C/fan180°C/gas 6. Tumble the onions, peppers, courgette, garlic and medium tomatoes into a shallow roasting tray. Pour over 3 tbsp olive oil, season with sea salt and ground black pepper, then gently toss to coat. Roast for 20 minutes.
Top rice with salmon fillets; season with salt and pepper, and rub with a drizzle of olive oil. Add a tablespoon of tomato pesto on top and spread it over each fillet. Sprinkle some garlic over fillets. Place a sprig of fresh thyme over each fillet. Preheat the oven and a roasting tray at the highest temperature.
Put your 4 fillets of salmon at 1 end of the roasting tray. Toss the basil into the green beans, olives and tomatoes. Put them a large mixing bowl with the cherry tomatoes, basil and the olives. Toss in the olive oil. Give the salmon fillets a quick wash and pat dry with kitchen paper towels.
Place salmon at one end of a roasting tray or baking pan. Ingredients. Good olive oil. 1 cup chopped sweet onion, such as Vidalia.
2 teaspoons minced garlic (2 cloves) 2 cups (1 pint) cherry or grape tomatoes, halved through the stem. Kosher salt.

Put the salmon on the foil-lined baking sheet, rub a little olive oil over the top, and season with salt and pepper.
After developing a browned crust (thanks to a mixture of brown sugar and cornstarch and a hot nonstick skillet) on the flesh side of the salmon on the stovetop, we flipped the fillets, brushed them with an alreadythickened glaze, and transferred the skillet to the middle of a 300degree oven.
I made it and it turned out so delicious The only thing I didn’t have is kewpie mayo. Which not really needed considering the amount of mayo and cream cheese added. Thanks for sharing I will definitely make this again for a potluck. It’s enough for a group of people

I’ve made this recipe twice already for the family. It’s a fun recipe for a party appetizer. I had to use the regular mayo and mahi-mahi for the first time since I did not have salmon and kewpie mayo on hand. It made a big difference the second time around as it was a lot richer and creamier. Very rarely do I repeat a recipe as there are so many other choices, but your version of the baked sushi is a keeper.
I added some avocado on top of the rice then layer it with imitation crab meat and I didn’t use cream cheese in my crab, but it is still creamy because of avocado.
20+ minutes in the oven overcooked the broccoli and the flourets soaked up sauce so were super salty while the other vegetables were quite bland. Wasn’t terrible but want delicious either. Either the recipe isn’t great or the instructions (no recipe included) wasn’t clear enough to follow.

Great idea to serve a crowd! Some small dice Cucumber, squeeze some of the water out, would add some crunch. I like your suggestion to add Avocado too. If you have it, a drizzle of Eel Sauce or Sweet Soy Sauce on top, Kecap Manis, would look nice and add a touch of sweetness to balance the vinegar…JJ
