Since it’s mostly made of water it’s low in calories — one medium zucchini contains just 33 calories. It’s also a great source of gut-friendly fiber, potassium and vitamin C. From veggie chips to pasta-alternatives and healthier desserts, these recipes all clock in under 375 calories per serving. Zucchini is often served cooked, but Gail Simmons, judge on Bravo’s Top Chef, food writer, and cookbook author, said it’s just as delicious raw, especially as a salad. “Zucchini can be used as a canvas for so many fresh combinations,” she said. “One of my favorite things to do is to use a vegetable peeler to slice zucchini into wide, thin strips and toss them with either fresh mint, lots of. For a more healthy way I bake them in a jelly roll pan at 375 for 20 min then turn them and bake for an additional 15. Time depends on your oven, the size of the patties and thickness.

I spray the bottom of the pan with PAM. I squeeze as much water out of the zucchini as possible and I don’t use salt. The salt makes the zucchini. Good Recipe.

Thanks! If you’re using a conventional oven, I highly recommend reducing the temp to 375 degrees F and baking for 10-12 minutes. Mine came out a little dark on the bottom and a little under-cooked on the top when using the instructions in the recipe.

  • 3:30 you know they do sell those muffin paper cups right? You don’t even have to bother wasting time with wrapping paper around a cup when you can buy them at the baking section of the supermarket. Duhhh��

  • what I do is I take a little hamburger on my flat grill with some banana peppers and start cooking for a few minutes and I add some zoodle to it and sailtay it with a little garlic salt and when it is about done(less than 5 minutes) I take some of my home canned spaghetti sauce and pour it on. as soon as I don’t see any thin runny sauce on the flat grill, it is done.

  • I’m making this right now! But, I changed it up a little bit. I added a ground beef, onions, peppers, chopped garlic mixture. I also found it easier to spread the ricotta on the zucchini first, then the sauce, topped with the beef mixture, and mozz cheese. Repeat three times and in the oven till done!   • Well, I’ve never eaten eggshells, but I do like to powder them to use as an abrasive when cleaning my cast iron. It’s never damaged my seasoning and it doesn’t dissolve like salt or baking soda does. Just another idea for using scraps!

  • As a follow-up I tried the recipe and it came out too runny. This was because I used my convention counter top oven and should of done it in my stove oven. I loved my flavors because I did an onion & garlic sofrito and added Italian seasonings & fresh basil & added my spaghetti sauce of choice.   • Veggies are good carbs and useful for the body and low on calories BUT what I don’t understand in American cooking is why you overload food with cheese is it like a spice to you, the cooking will taste the same with half the amount of cheese, if you want low calories and low carbs putting that much cheese isn’t helping it makes the effort useless

  • All that cheese and cream is worse for you than the carb you’re trying to avoid. In the long run too much protein makes your body more acidic and prone to diseases that is more harmful than the carbs you’re trying to swap. Please make better choices in the foods you eat everybody.

  • A year ago, I decided to make zoodles with peanut sauce. The zoodles looked perfect and the sauce was delicious. I tossed the 2, set the table and took the bowl over to serve and found a watery mess. The zoodles had oozed out all the moisture. Never made them again. How do I avoid this.

The spiralizer was really easy to use. I was only hesitant because I don’t have room for lots of gadgets, but this is worth it. I cleared out some drawer space for it.:)

  • May I ask Why after Salting the Courgette, you don’t place the whole lot into a Colander (plastic if you’re worried about the Salt being reactive) to at least start the draining process.
