  • It is amazing too the difference in available vegan products in Canada vs. America/California. We are LACKING in the US. When watching different videos of vegan Youtubers from around the world it is mind boggling to see the lack of variety we have. You would think the US would be leading in the availability of vegan food…NO. Hopefully we’ll start seeing more brand and varieties. Honestly we are stuck with same ol mundane products.   • I make soup all the time! The key is to go crazy with the spices, honestly I feel like the first soup would come out a little bland. I always add dried basil, a little cumin, thyme and cayenne, even a little chili powder is good (the kind used for chili, not spicy) I also usually use a small potato instead of pasta. The key is to be creative! Spices don’t usually cost much when it comes to calories!!! You never need to sacrifice taste for low calorie meals

I was expecting it to be just a really basic and unsatisfying soup and was completely surprised. Sometimes broccoli does not reheat well and I wanted to make sure it was still good the next day. The cabbage is a little less crunchy but everything else is the same. I can now recommend it without reservation. While making this recipe I used a vegetable broth from a Bon Appetite recipe.   • I prefer using my hand immersion blender instead of transferring the soup to a blender. That way you can purée the soup in the pot. Less cleanup. Less risk for burning yourself.

  • That’s not turnip it’s rutabaga haha, the taste is very different and rutabaga is yellowish inside, turnip is white just like radish. But I think it’s all good

  • First time in my life I saw your video, then first time in my life I made and had carrot soup. Oh my God it was amazing. I just loved it.

  • I would sweat the onion, celery, then carrot first with some tomato paste before adding the broth. The acidity and sugar in the tomato paste helps caramelize the veggies, giving them a super earthy and hearty flavor which is washed off and mixed in when you add the broth. Also, I keep the Parmesan rind in, personally I love getting a little chunk of cheese to chew on.

    You can also sprinkle some Parmesan or feta cheese when serving for some extra flavor, and of course drizzle a bit of olive oil on top when serving. The uncooked olive oil gives it that delicate nutty Italian flavor. Of course, if you are counting calories, then maybe not the best idea…

  • Take the peel off the onion, cut it in to two halves and soak it in a bowl with room temp water for 5 min or so before dicing. No more tears.

  • Petra i tried the cream of mushroom and loved it. I think my husband doubted me for a second when i told him theres no dairy. I used almond milk as the base from your recipe and it turned out great. I even forgot the wine but it still tasted great. I added a little apple cider vinegar later when i finally remembered.   • So interesting see how other cultures make soup. I am portuguese and our soups are so simple. Usually a “vegetable soup” is basically what legumes you have at the moment like: 1 onion, 1 garlic, 2 potatoes and 2 carrots, just cooked with water salt and olive oil. Delicious. Of course we have our tradicional soups like “Caldo Verde” but the base is always the same: onion, garlic and potatoes, cooked in water. We don’t even have vegetable broth in supermarkets so common as in USA, for example. Love your recipes ���� just wanted to share some of my Portugal ����

  • I will for sure try the first 3 soups as they have this twist to them that I like. Usually not a fan of tomatoes soup but this one sounds very intriguing with them being roasted first. I love cream mushroom soup but it happened several times to me to cook the soup and not eat it. I think I just dislike thyme with mushrooms. And finally the last soup sound interesting but I cannot eat a sweet soup or salty pumpkin (I tried 2 or 3 times and every time I either throw it away or give it to someone else to enjoy), so this one I won’t try.

  • It’s base gravy without the onions.
    FYI, base gravy is how Indian takeaways cook dishes quickly. They lightly spice the gravy as each dish has it’s own spices, etc. Cooking curry at home takes a good bit longer.
    They three keys to start a curry is onions, garlic/ginger paste and masala (toasted seeds and spices)
    I have made my own base but found it better to just cook from scratch, so to speak.

  • The oil aerosol in the onion is what irritates our eyes. This oil is easily dissolved in water so you can just wet your knife every few cuts with tap water. I never cry from cutting onions anymore after doing this.

I also have a sense that vegetables had a lot more flavor in the 1800s because the soil was healthier and a much richer diverse ecosystem. If you compare the taste of, say, organic soil grown carrots to hydroponics shitor chemically nuked carrots, there’s a huge difference. Maybe there’s as much difference between modern and 1800 carrots.

  • QUESTION: Cashews are great and go in everything but that turns into a problem. If it’s in the soup, cheese, cake and milk (among others), could we be in danger of over-consuming them. Not to mention the amount of calories that come with them.

  • Sarah mentioned skipping the jalapeño if you don’t like the heat but I want to say that, in my experience, if you add jalapeño that early in the soup without using seeds and ribs, the heat is pretty minimal. I highly recommend trying that instead of skipping jalapeño because it still adds awesome flavor!

  • I make soup all the time! The key is to go crazy with the spices, honestly I feel like the first soup would come out a little bland. I always add dried basil, a little cumin, thyme and cayenne, even a little chili powder is good (the kind used for chili, not spicy) I also usually use a small potato instead of pasta. The key is to be creative! Spices don’t usually cost much when it comes to calories!!! You never need to sacrifice taste for low calorie meals

  • The best way to dice an onion:
    Cut the bottom off
    Cut in half, but leave the stem at the top!! This is where the gas releases that makes you cry.

    To dice while still leaving on the top, make horizontal cuts, then vertical cuts from the base to the top. When you make these vertical cuts, don’t go all the way through to the top.

    Then, make perpendicular cuts, which dices the onion! No tears.:)

    This was confusing but I hope it helps! The trick is simply to leave the stem/top on the onion as long as possible. I use this when cutting any onion, and completely prevents tears for me!!

  • I prefer using my hand immersion blender instead of transferring the soup to a blender. That way you can purée the soup in the pot. Less cleanup. Less risk for burning yourself.

  • I swear I make the second soup, exactly as you described, since many years, and it is really tasty and healthy. Just a suggestion to make it more simple. I peal everything, throw it all in a big pan full of water and cook it in medium fire for about 90 minutes. After that all ingredients are super soft and you can send them to the blender. Your soup is ready.

  • Eating a number of processed ingredients beforehand would deaden your pallet to the ingredients of that soup. You should try it again without doing that. Oh, and if you only let it cook for 1.5 hours, that’s probably why it didn’t get to be a pulp on it’s own. Some vegetables, particularly turnips can take 8 hours or more whole. Also, it said to chop the ingredients fine. You diced them from what I saw. Chopping them fine would also reduce the cooking time and make them appear more as pulp faster.

  • This soup is like a lot of the soups I make all the time!!!! Edit: I always use awesome herbs and spices, I can’t see myself eating food that’s not seasoned. But then again… I didn’t live 150 years ago….:-D

Then they use it again in the morning with fresh ingredients added. I honestly don’t know how they can do that without poisoning a customer!

  • I would sweat the onion, celery, then carrot first with some tomato paste before adding the broth. The acidity and sugar in the tomato paste helps caramelize the veggies, giving them a super earthy and hearty flavor which is washed off and mixed in when you add the broth. Also, I keep the Parmesan rind in, personally I love getting a little chunk of cheese to chew on.

    You can also sprinkle some Parmesan or feta cheese when serving for some extra flavor, and of course drizzle a bit of olive oil on top when serving. The uncooked olive oil gives it that delicate nutty Italian flavor. Of course, if you are counting calories, then maybe not the best idea…

    don’t stand above the onoin you’re slicing, as fitoncides are evaporating straight to your face.
    Move slightly aside.

  • How has no one mentioned to not cut the root end of the onion off? The root being cut is what causes the onion to bleed and causes tears. Just keep it on until you’re done cutting.

  • U must not use the aluminum foil for cooking dear! Once it’s heated it can contaminate any cancerous cause on that material.. corrrect me please if I’m wrong cuz I tried it once it’s use in cooking there is taste on it coming afterwards

  • I used to chill onions in the freezer… it does help but I discovered a better method: pool goggles. lol! I’m serious. I just keep my pool goggles in the kitchen now and put them on whenever I need to chop onions. You can even get prescription goggles for pretty cheap as long as you know your prescription.

  • I always only breath through my mouth when cutting onions and never shed a tear since I know that trick. The tears only come when breathing through the nose. This is why wearing swimming goggles doesn’t work but wearing diving masks does work.

  • Love these. I love my glass chopping board just because it’s so easy to clean. And I also like using gloves when dealing with things that stain or tend to go under my nails. Will try the beetroot soup first. Maybe tomorrow. We love soup no matter the season. Creamy soups are best.

  • I don’t use any salt, oil, sugars, vinegar and yeast either for three years, but I do use spices…and I have to say that my taste buds evolved to another level. I could easily now live to eat instead of eat to live, because I can taste like a “million” flavors in the simplest things. Before I was like a blind man in an art gallery like the “only” flavor I could pick up was salt.

  • Thank you for the soup recipes. I have a Vitamix which I love. Why are you cooking the veggies on the stovetop when you can put them in raw and the high speed (about 7 minutes) on the Vitamix will cook them?

  • This Vegan diet made me super skinny like “skin and bones” skinny.

    Last 2018 to halfway of 2019 I was 198 lbs until last year of September 2019 I started this vegan lifestyle because of my esophageal illness and liver problems. I have researched the health benefits of having a vegan lifestyle and I must say that it helps alleviate the acidity issues that I always experience and I rarely feel the heartburn.

    My concern is my extreme weight loss which is haunting because I was originally a 198 lbs 6’0 guy but now I am weighing 129 lbs in less than a year of being a vegan. I have tried all sorts of vegan diet meals and worked out almost every day but I am still getting skinnier than ever.

    Please give me some bulking up tips without eating foods that I am not supposed to eat (soy products, spices, and citrus fruits) as a person battling GERD, esophageal, and liver issues.

  • I made the sweet potato soup Sunday. I had jarred minced garlic and oops, added too much, even though my family really enjoys garlic flavor. It was still yummy. But I need to eat this soup up before making a new batch. I baked the potatoes in the oven because I wanted to warm up my kitchen on a cold day. I have a new blender, not Vitamix, but it’s very powerful and I am loving the capability of the blender.
