  • I made the Pumpkin Protein Pancakes. The texture is like other healthy clean protein pancake recipes, so if you are fine with that, you’ll be fine with this (I was). Next time, I would double, maybe even triple, the spices because the recipe as is was definitely not enough. I will make this again, esp because it’s high protein!

  • This is my banana oatmeal almond butter cake that I like to make for breakfast. You can try it out. I love it so much.
    Ingredients:
    • 1/4 -1/3 cup of scottish oatmeal (it works just like oat flour, but it also has the extra bits of groats that didn’t get ground completely into a powder, which gives it a great texture.

    • 1 mashed banana (the riper the better)

    • 1 egg (or 2 egg whites if you don’t want the nutrient packed yolk)

    •1/2 a tsp of baking powder

    •1/2 a tsp of cinnamon(or/and any other spices you want)

    •Natural almond butter(or peanut butter if you want)

    Then I just mix up all the ingredients except the almond butter in a bowl and microwave it for 90 to 120 seconds. After that let it cool until it’s not too hot(or stick it in the freezer for a few minutes like I do) and spread almond butter on top. Enjoy!

  • I just made this, and OMG, it is absolutely delicious. I make my own tomato sauce with no sugar (I am doing Keto and we don’t have Rao’s in my country)… This is a game changer. Mine cooked faster than directed and I actually ended up with a slight crispy top. I sprinkled parmagiano on top with the mozz. Yum!

  • Amazing recipe!!!! If I’m going to ever not make my own sauce it is because RAO’s Arrabiata is sooooo delicious. I did make my own sauce for this, I also bought the kitchen aid device and copied exactly what you did with the zucchini (from my garden) lasagna noodles. I used beyond beef vegan meat cooked with some white onion. I used kite hill brand ricotta almond cheese. It was ssooooooo delicious!!!! Thank you so much from me and my vegan daughters!

  • How are you able to eat such delicious zucchini based recipes without having indigestion from all the fiber? I wish I could eat this but zucchini goes right thru me!

  • I substituted eggplant for the zucchini. I grilled the eggplant like you did with the zucchini. I like the eggplant flavor. I remove the skin of the eggplant as it can be tough in the lasagna. Tastes great. Raos is a good sauce if you don’t want to make your own.

  • Why no onions or garlic? I would add these to the pasta sauce as well as the ground beef. If I made this lasagna I would probably put one layer of noodles in the middle.

  • She’s got great ideas…appreciate this a lot. And, using the word “healthy” when using other ingredients that are not (meat, cheese, etc) is what so many cooks say to intice us. I hope the word “healthy” becomes used in an accurate and truthful way.

    Her technique info is useful and as a Chef, I’ve learned from this you tuber… but… healthy this dish is NOT.

  • I am new to cooking but I’ve been giving it a go because my first child is getting to the solid food stage. I made this with no problem, your video made it super easy to follow. It tasted great and I’m feeling alittle more confident about cooking.

  • I always put more veggies in the saus. Cut op unions, bellpeppers, carrots, leek, caulifower, greenbeans, peas, sellery, what ever sounds good and or l have left over.

  • BLEH, not a real lasagna. This is just as bad as a cottage cheese lasagna. Real lasagna has meat in it. Anything else is a counterfeit in my opinion.

  • I rather make a vegan version of this. I use firm tofu and blend sautés spinach with fine chopped onion and fine pressed garlic and salt and adobo seasonings and Italian seasonings. For my meat I used cooked lentils I cook with chop veggies garlic and onions and cilantro.

  • Great video and i just subscribed especially as you are vegan and oil free. I grow my own pumpkins and just started to make my own puree and freezing it. It is so easy and fun and this is the first recipe that i will try. Can’t believe all the comments about pumpkin puree and the efforts to make it, so why bother subscribing or watching cooking videos? I live in Australia and its not a big thing here and i would not buy it anyway not knowing what additives are put into it. Health should be a priority for yourself and your family and now at the age of 65 i am learning from young people like Caitlin. I think i was born 40 years too early with the lazy too much trouble / effort required to cook and eat healthy.

  • Is it okay to use sweet potatoes instead of pumpkin in these recipes? I prefer the flavour of sweet potatoes and I find that its much easier to turn into puree than pumpkin anyway because canned pumpkin isn’t really a thing in the UK as far as im aware.

  • This pumpkin pasta dish is so good!! I’m not a vegan, and neither is my boyfriend, but we both loved this dish! I will note I used chicken bouillon & omitted the lemon + shallots, but it was still incredible. I followed the recipe on her blog which is in a different order of operations and doesnt specify to keep the lid off the whole time. As a result I had to boil my pasta a few extra minutes at the end to reduce the sauce. I just wanted to point out these small discrepencies so no one makes the same mistake I did/thinks you need all the exact ingedients to make this recipe. It was so good & I already cant wait to reheat this for lunch tomorrow.

  • I have never eaten Pumpkin except for the seeds and as it is only available in the Autumn up to October I would be restricted to just eating it then. So I would probably replace it with Butternut squash during the rest of the year.

  • The availability of pumpkin in the US being better than in other countries is probably due to the fact that pumpkin is a traditional American food, pumpkin being indigenous to North America. Pumpkin desserts especially are an American holiday tradition. So I hope that helps to explain why pumpkin is overabundant in the US, and not as commonly found in other parts of the world. (Bonus fun fact: some parts of the world refer to multiple kinds of winter squash as “pumpkin,” not just what most would call a pumpkin!)

  • Cashews a nice touch. Have toasted almonds but now must try cashews. I’m kind of nuts with the winter squash. I just made the cornbread but it taste like pure metal I’m not really sure where I went wrong I followed the instructions to a tee. I just didn’t use an egg I used a flax egg.   • It’s funny how everyone is just bragging about the eggs. When she avoids most animal products she already does more for the environment and for the animals than the majority. It’s her own choice to use eggs in her recipes.
    The recipes btw look amazing. I love pumpkin and will definitely try some of these!

  • Sorry, pumpkin is one of my kryptonite foods, lol, i like about every other squash, lol, zucchini, yellow, butternut, spaghetti, acorn, etc.. but i could never acquire a taste for pumpkin, & i’m irish, 56, & live in Kentucky where we eat about anything & waste nothing. Also can’t eat marshmellows, coconut, rosemary herb, or cajun black seasoning on anything, i do not know why. I do however enjoy watching other folks enjoy their food, especially if i cook it, so enjoy folks!, God bless

  • I was actually just googling random stuff and then I decided to google health benefits of pumpkin, cause I love pumpkins a lot and came across this video.
    I am actually 13 and I found this video so interesting! I never found a video about healthy diet this interesting, theay mostly tell you how eating salads and being vegan is the best thing to do and of course cut out sugar and salt.
    Well in fact eating pumpkin you can eat regularly and possibly still loose some weight!
    Adding pumpkin can change your body and it is so fascinating!
    Definitely going to tell my friends about this video so I can change their way about looking at pumpkins! ��

  • I recently did an exhaustive survey of all foods, comparing satiety (fullness), nutritional profiles, calorie and glycemic loads etc. and concluded that pumpkin is the very best (and cheapest!) food for weight loss you can find. Then I found this video, and I have to say this guy is spot on. Pumpkin will help your diet like NO OTHER staple food…full stop.Dump the wheat, rice, starchy foods like potatoes and corn….none of them even gets close to pumpkin….all of them have big drawbacks that pumpkin avoids.

  • Makes sense, I am already on pumpkin diet. I boil pumpkin until it becomes soft and then separate the water I had it boiled in, then fry one kg of boiled pumpkin in 1 and half tablespoon of oil. plus I add spices like red chilly powder turmeric coriander chopped and cloves of garlic and at last I mix the pumpkin water back to it and boil it again for 7 minutes on medium flame and at last I mix salt according to my taste.I can eat a big bowl of this soup and just consume 200 250 cal plus I don’t feel hungry after I eat this with three bread slices and 100g curd.It’s a diuretic and makes you lose alot of fat weight & water weight

I wonder whether I can substitute the boiled egg with 100 g of boiled soyabeans without any flavouring. This has 70 calories.
