Sweet Potato and Beet Chips – Veggie Chips. June 8, 2019. Craving for chips and dips? Why not try this healthy yet delicious chips instead? This easy to prepare recipe is very tasty.

A healthy alternative to potato chips, munch them anytime without any guilt! Check out the recipe. Ingredients: 1 sweet potato 1 beetroot. Slice beets and sweet potatoes into thin layers, about 1/8 of an inch (use a mandolin if possible) 3. Place slices in a large bowl and toss with olive oil 4. Today we’ve got a two for one.

I loooove this recipe so I am super excited to share it with you! Recently I made a big ol batch of one of my go-to homemade snacks for a friend who is in the midst of a Whole 30 month. Sweet potato and Beet Chips!

We used beets, carrots, sweet and white potatoes and zucchini and sliced them 1/6″ thick. Using a mandoline slicer is very helpful for this! Keep in mind that since we are slicing these so thin, these make A LOT of chips. If you don’t have time to make multiple batches, we suggest that you make chips with just 1/2 of the vegetables.

Hy-Vee Seasons Magazine Kids will cheer for these easy-to-make chips. Use a mandoline or handheld slicer to quickly produce very thin, even slices of sweet potatoes and beets. If you don’t have a slicer, use a sharp, heavy knife. Spray the top with the olive oil spray and sprinkle with your desired amount of sea salt.

Bake for 10 minutes, then remove the trays and flip the chips over. {I find the easiest way to do this is using a fork to lift the chip off the pan and then flipping the chip over with my fingers.} Bake for another 5-9 minutes. Ingredients: Sweet potatoes, beets, canola oil and/or safflower oil and/or sunflower oil. * Percent Daily Values are based on a 2,000 calorie diet. Your daily values may be higher or lower depending on your calorie needs.

Pre-heat the oven to 300 degrees and line a baking sheet with parchment paper. In a large bowl, add the sweet potatoes, oil, and salt or other optional flavorings (see post above the recipe). Using your hands, make sure the chips are evenly coated with oil and salt and then lay them out in a single layer on the parchment paper lined baking sheet.

  • you can do the microwave version. turn them every 2 minutes, ’till they are crispy. enjoy. ( i let them soak in water + vinegar for 10 minutes, then dry them out before microwaving )

  • This was a great idea. I made some sweet potato chips and ate them with a bowl of homemade butternut squash soup. Excellent alternative to store bought crackers or chips, and you actually know what are in these. I enjoyed this simple recipe idea, thanks Jack, you’re a sweetheart.:)

  • Oh, num this looks so good. I think I would bake each veggie type on separate pans since the bake time is a bit different. Maybe that way the parsnips and jicama would get a little browner & crisper. Thanks, Jack! <3

  • Thank you for making oil-free recipes. So many people (including vegans) don’t realize how damaging oil is to our arteries. Even so-called healthy vegan processed foods can include unhealthy ingredients like preservatives or oils.

  • A tip for the oil. I use a freezer bag, put the kale in it, add half a tablespoon of oil, trap air in the bag and twist the top and shake it up.
    Distributes the oil (and seasoning, if you like) quickly and evenly.
    favorite seasonings include lemon and salt, lime juice and chilli flakes, pink rock salt and roasted garlic or just good old sea salt.
    Thanks for the peeler tip, I’ve got a bunch of sweet potato I was going to roast but I want to make chips now!

  • Sweet Potatoes when skinned are Yellow -to light orange.
    Yams are a rich orange color on the inside brown skin, like you guys (ya’ll) want on Holidays.

  • Just a tip for those that aren’t very experienced with using a mandoline slicer: they often come with a hand-guard, which I would HIGHLY recommend you use. Speaking from personal experience, it is very easy to slip your fingers/hand and cut yourself rather badly with these devices. You can also use cut-resistant gloves if you don’t like the hand guard.

  • I made these crisps/chips for my grandniece. She said, “Auntie, I don’t know what I did to deserve this but I know I’ll never do it again!”.   • How long is the shelf life after you make them? I’d like to give this a go but don’t want to make too many if they don’t last lone. But I like to meal prep and if they can be stored for a decent amount of time I’d be able to make more.

  • Hey Jack. A tip for using the mandolin is putting a kitchen towel on top of the vegetable you’re cutting so that you don’t end up sliding your hand!

  • I watched and remembered I have half a sweet potato in the fridge!
    I used a peeler to make the slices, need to see if the times apply the same for sweet potato as beetroot.

  • Thats a great idea, I should try doing it in the oven. I always do it in my dehydrator for 8 hours and I’ve included a video on my channel if you want to check it out. I read in a dehydrating book once that the temperature should not go above 45 degrees or else the food starts losing its nutritional value. A week ago, I made beetroot chips, zucchini strips and carrot chips, they were all super crispy and I used a speacial blend that increased their nutritional value.

  • could other kinds of squash be used in place of zucchini? I’m not a fan of the bitter aftertaste of zucchini, but maybe some other thin-rinded squash?

  • We’ve tried the bought version of these, which have parsnip and other veg in them, think making fresh ourselves would be better. Just manage to get a bag of gram flour from our local store (got to get another cauliflower now) and noticed it has 21% protein, the best bread flour only has about 15%, was wondering if you have ever tried making bread with it.   • this is awesome, but the only thing I would recommend is if you are doing several veggies(roots) do them in different batches, yeah you will have to wait longer to eat them, but you will not run the risk of burning some and some being under cooked.

  • I presume you are slicing raw beetroot not pre-boiled beetroot as you did not mention its state.

Pray & fast for understanding for what I write to you is spiritual that has become physical as we all have seen & acknowledged beloveds in Jesus name, amen.

    I pray that our Heavenly Father protect us in Jesus name, amen. As it is also written in these last days in Matthew 24, this is the beginning of what Jesus has warned the world decades ago, amen? Amen.
