The easy homemade dressing and fresh herbs make this the best ever summer salad! There’s really not much I can say about this recipe. Puree the olive oil and garlic in a blender until smooth. Add the cilantro, avocado, cucumber, and lemon juice. Puree again until smooth, then season to taste.

For that amount I used 1 English cucumber.

  • This definitely worths a try… I altered the seasonings a bit since I don’t have them all. I used Chinese dark vinegar, sesame oil, ginger powder, lemon juice and lemon jam, pepper mix, and it tastes great. You can also mix this with bread and cream cheese spread.

  • Replace dill with a little cilantro and replace lemon juice with lime juice and you have the latin version. Also do you self a favor and use first cold pressed extra virgin olive oil, you won’t regret it. I also add hearts of palm and avocado. Oh, also, I don’t like raw onion so I use green onion (scallions).
