Roast until tomatoes begin to soften, about 10 minutes; flip and roast until tomatoes are very tender, another 10 minutes. In a small bowl, use the back of a fork to lightly mash avocado and lemon juice. Spread evenly over toast.
Top with feta, poached eggs and a sprinkling of dukkah. Serve immediately alongside roasted tomatoes. Serves 1. And so, this open-faced egg and avocado sandwich was born! We like it so much that it’s still one of our favorites post-lockdown.
Supplies: Makes 1 sandwich. Ingredients: Slice of sourdough bread ; 1/2 ripe avocado ; 1-2 tsp cooking oil (I like olive oil for the health benefits.) 2 eggs ; A handful of cherry or plum tomatoes, halved. Enter our Open-Faced Egg & Avocado Sandwich!
It’s a tasty twist on an egg salad and includes avocado, onion, celery, tomato and arugula on a slice of whole wheat bread, plus a protein-packed hard-boiled egg. It’s delicious and satisfying and couldn’t be easier to. minutes Make this bright and healthy avocado open-faced sandwich layered with creamy ricotta cheese, crispy radishes topped with a poached egg, sunflower seeds and fragrant basil.
Lightly drizzled white balsamic vinegar and extra virgin olive oil will make it the sandwich go down even easier. Prepare bread in a toaster to desired crispiness. In a pan, fry an egg sunny side up. Assemble the toast by spreading avocado on the toast, then the tomatoes and topping everything with the egg.
2 slices multigrain bread, toasted. 2 teaspoons butter. 1/2 medium ripe avocado, peeled and thinly sliced. 4 thin slices tomato. 2 thin slices red onion.
2 large eggs. 1/8 teaspoon seasoned salt. 2 tablespoons shredded cheddar cheese. 2 bacon.
Bring to a boil, remove from heat and cover. For soft boiled, remove the egg and put in cold water at 1 1/2 to 2 minute mark. Remove at 2 1/2 minutes for a more cooked egg.
Note: you can use a pre-cooked egg, but the warm egg on this really adds to the enjoyment of this sandwich. While the egg is cooking, spread burrata on the ciabatta toast. Step 1 In a small bowl, mash avocado and stir in garlic salt. Spread onto a slice of toasted whole-grain bread and top with tomato slices. To build: Top each slice of bread with some of the ricotta mixture, 2 slices avocado, 3 slices tomato and some shallots, sunflower seeds and lemon salt to finish.
Sprinkle with a dash of salt and pepper. Remove from heat and set aside. Toast slices of bread, spread mashed avocado on each slice, along with tomatoes and eggs whites.
Sprinkle sea salt and pepper and drizzle with a bit of hot sauce if that’s your thing. Enjoy!
